📌 Ingredients for 20-22 meatballs
250 g red lentils (dried)
1 dry onion
1 carrot
2 cloves of garlic
½ bunch parsley
1 tablespoon pureed tomatoes
salt and pepper
100 ml oil (for frying)

🔪 Preparation
Place the dried red lentils in a bowl and pour enough water to cover them well. Leave the lentils to hydrate for 2 hours, then drain them very well in a pasta sieve.
In the bowl of the robot put: onion, carrot and garlic. After chopping them well, add the drained lentils, parsley, mashed tomatoes and spices. Grind until you get a smooth paste with very little texture.
Heat 2 tablespoons of oil in the pan. With wet palms, form meatballs and fry for 2-3 minutes on each side until nicely browned.
As they are ready, remove the meatballs to a plate and let them cool. Put oil back in the pan before frying the next batch of meatballs.
