Today, I'll be spotlighting Moin Moin on the Kitchen Muse - switching out beans for Lentils. Now if you haven't gotten on the Lentil bandwagon, you're really missing out. It's one of the most understated pulses out there especially for any one who's looking to keep a healthy diet without necessarily compromising taste. Also great for kiddies meals. Lentils are my go-to alternative for beans, so it's just apt that on this episode I'm using it in place of my regular brown beans for this Moin Moin recipe.
And it's absolutely amazing, people! Not just the taste but also it's nutritional value with respect to its protein and fiber content - beating hands-down any other legume in its category.
I hope you guys try this sometime if you haven't done so already. And let me know what other lentil recipes you're currently whipping up.
Preparation Time: 40 Minutes
Cooking Time: 45 Minutes
Total Time: 1 Hour 25 Minutes
Serves: 6
INGREDIENTS
1 Cup Red Lentils
2 Medium size Tatase (Bell Pepper)
2 Medium size Fresh pepper (Scotch Bonnet, Ata Rodo)
1 Medium size Onion
1 Large Mackerel Fish
3 Hard Boiled Eggs
2 Cooking Spoons Oil
1 Bunch Banana Leaves
2 Tbsp Crayfish
2 Boullion Cubes
A Pinch of Salt

Hi Bukie, That Lentil thing is an innovation that earns you a genius title. No more hassle of removing the shell off the beans. The Moi Moi came out perfect like the beans recipe. What a great idea. Keep it up. And thank you for for showing the greatness of African people in the world.

Pardon my long story but just folks to know you are the real deal.I made this today. I just want to thank you. It was the best moi moi I ever made. If I don't have naija beans, I won't even worry. I changed it a tiny bit. I am not a fan of eggs so I skipped it. I used canned mackerel (lazy me) and used the broth. Added onions, bouillon and crayfish to it. Boiled it a bit. The red lentils were less than $2. I invested in a steamer which cost $15...very deep...so I steamed the moi moi. I used bags from moimoipouch.com. Love you namesake...with love all the way from Houston!

Thank you so much for your recipe, just made this today and it's awesome and hassle free!!! I live in Poland and it's not common to find regular beans so lentils truly made my cooking easier especially as I wouldn't have found the time or motivation to wash-peel the beans. You're also very articulate and lovely (enjoy watching you). Your videos are educational and calming. Excellent work, you truly help many. PS: I also made akara from the same mix but be sure to whisk it more to fluff up...

Omg this video should have gotten more views than it did, because this is the easiest way to make moi moi. I just made it tonight and I let it cook for 45 minutes as well and it was the best I couldn't tell the difference between lentils and beans. Thanks for sharing it will forever change my life

Ok I just stumbled across your channel. I like your unique and innovative ways with food especially Nigerian foods which people tend to make the same ol', same ol', way. I will try this as I just loooove moi moi. Two questions please, while everyone was looking at your cooking ...me? ... I was looking at your mixing bowl with the really cool purple thingymajing handle. Where did you get it. Second question...do you live in Nigeria if not where did you get moimoi leaves. Lentils are the best for moin moin. When I discovered it a few years ago, I did not bother with beans anymore. Super easy and tastes delicious

I am also going to use this recipe for regular moi moi. Getting a cooking steamer too since leaves are hard to come by here. Best Naija subscription ever!

I have been trying to find recipes for lentils because I have yet to be successful with any recipe I've found, and I'm a good cook! But this!?! I'm sold on the fact alone that no bean peeling is involved. Making some tonight. From one Bukky to another Bukie Thank you!

2 months later...and I've tried this recipe MULTIPLE times with green (what I had on hand) and red lentils (when I finally found some), not together. Love it and the taste is extremely close. Thank you again for this alternative!

Good recipe, but the really amazing thing is putting a liquid batter into a leaf, I think. There are a lot of similar things in the world (like Mexican Tamales, or Chinese or Vietnamese rice dumplings) but they all use a filling that's partly cooked or kind of solid... nobody else wraps up a liquid into a leaf. It's hard to believe it doesn't get out! I want to try this, because there are banana leaves out in the yard. Backup plan: Make in a bread pan, but line with the banana leaves. I'm expecting a big mess.

Hi Leonard, it takes practice to wrap the leaves tightly enough for the filling not to get out. Your backup plan will definitely work otherwise you can use greased ramekins or aluminium foil. It will only be a small mess, LOL

Thanks for this recipe Bukky. Made it a couple of days ago and it was a hit. I however found the moimoi was a bit hard compared with beans moimoi even though I felt I added enough water and blended twice. Any suggestions on how I can avoid this next time? Thanks

It deepends on your daily carb allowance Lentils are 63.10grams of Carbohydrate per 100grams of raw red lentils Instead of asking questions of random people why not actually go to a good website like this ndb.nal.usda.gov/ndb/foods/show/16144?fgcd=&manu=&format=&count=&max=25&offset=&sort=default&order=asc&qlookup=Red+Lentils&ds=&qt=&qp=&qa=&qn=&q=&ing= And do your food search. If you want to be in Ketosis you need to know exactly how much carbohydrate is in what you are eating.

@@thekitchenmuse I'm so happy I stumbled on this. I'd tried chickpeas but I found that the moi moi remains kinda runny after it's cooked, unlike that made with kidney beans. Not sure why! Will give lentils a shot!! Thanks for this video.

Atinuke Joseph Yes brown lentils can be used but your finished product will also be brown, however the taste remains the same.

Hi Hawa, trust me it's good. Make sure not to add too much liquid when you're blending and when mixing. Let me know how it goes.

Thanks for sharing but permit me to add: your moimoi doesn't really need additional "hydrogenated oils" the fish and the fish stocks has enough oil in it already. For the love and care of your heart and your internal organs, the less man-made oil you add to your meals, the safer and better for YOU and your family's overall health
