Made akara with chickpea flour the other day. I got the idea after I used it tas a binder for my mushroom burger patties and it was so good. I didn't even know it was a thing. Also made it like a pancake and put in my wrap with cucumbers, tomatoes, lettuce and hemp mayo. So so good.

Aunty Flo, thank you so much about telling people to watch a video before asking questions. As a lecturer, I find it very frustrating when people want answers without doing the necessary research themselves. Aside from that, thanks for doing the chickpea moin moin recipe. I find our beans causes too much gas, so chick peas had been recommended but was not sure it could be used for moin moin. Thank you so much. Really enjoy your videos and your passion to be adventurous in the kitchen.

I love beans and as a former vegetarian I think alot of people who do not eat meat like chickpeas and legumes because they're very versatile and in some case make a highly adequate meat-like substitute and provide protein. ken fav how is falafel done with the chickpeas
@kenfav8168
@kenfav8168 5 жыл бұрын
@@Jessyqueen1962 (1) first soak the dried chickpeas with enough water for about 12hrs let's just say over night (2) Rinse with fresh water (3) Place the now cleaned chickpeas in a food processor along with these items listed below. Don't worry if you don't have all the ingredients but the cumin gives it a very distinct taste (4) Add parsley, cumin, coriander, shallots/ onion, pinch of salt. Add about 4 tablespoons of flour, Add teaspoon of baking powder to give the falafels a fluffy texture. You can add chilli if required (5) blend with little water to have the consistency of bread crumbs so not too smooth (6) Shape into balls or domes in short any shape you like (7) keep refrigerated for like 30mins (8) Then fry It looks lengthy but trust me it's worth it. I haven't tried it baked. You can also use canned chickpeas but you may not get the same result.

I also use lentils to make both moi moi and akara. Being abroad, the saying "necessity is the mother of invention" rings oh so true! Now, if only I can find an easier way to get garri! (I have seen the keto garri with cauliflower and coconut and also the true garri using yuca (cassava) but person no get energy to dey do dat kain work!)
@FloChinyere
@FloChinyere 5 жыл бұрын
Yes lentils especially red lentils make good Moi Moi and akara too. Nne eh, making garri in the kitchen is not practical at all. One needs that special grinder for garri, a blender won't do the job well. Then the special sieve, I have never seen anything like it in the kitchen utensils section, then the press that will wring out all the water: even all the weights in my home cannot do a good job. 😂 Too many special utensils and equipment that making garri at home will just be too much work, not worth it.
@clairejoc8514
@clairejoc8514 5 жыл бұрын
@@FloChinyere - Yay! Thanks for the reply. Truly, garri is just too much work and it is quite expensive nowadays. I have vowed that my luggage allowance on my next trip back home will definitely be food, all food, and nothing but food! And make customs no just try demselves or dem go see propa naija display! Well for homemade garri, a food processor to grate the cassava could work, then for the sieve, I thought of those we find in the labs with different mesh sizes (www.amazon.de/gp/product/B01H2T6O0G/ref=s9_acsd_hps_bw_c_x_2_w). Wringing the water out is the major problem and then frying abi na roasting - truly, too much work as you said!!! Have you tried mung beans too? I introduced akara to my Vietnamese friend and now, she uses mung beans to make akara, since it is a lot cheaper at the asian stores than garbanzo and black eyed beans.

A teaspoon of sodium bicarbonate in beans while cooking it keeps all the heartburn away. I have been doing that for years and it works. It makes beans cook faster too and no stomach bloating with gas too
@FloChinyere

Nice video Aunty Flo!! Just to inform your seldomly on Chickpeas aka Garbanzo beans, they’re the original legume in its family. Cultivated for roughly about 7000 years ago in the Middle East, yet they do attain dietary fiber which is healthy for human consumption they also are great in value for protein, dietary fiber, folate, and rich minerals like iron and phosphorous. You made these appear so delicious, I must also know where’d you get that powerful blender from lol??? 😂😂🤔

Thank you Nene! 😍😍😍The truth is that I was not adventurous before o. I had a short list of foods I liked and stuck to those. But with living abroad, alternatives to the rescue! Right now the brown beans I brought from Nigeria is running low 🤣 and I do not look forward to peeling the very tough black eyed beans we can buy here (tough even with the blender method) so alternatives trials began. Also since I ventured into the food space, the food questions I get on here get me thinking deep big time! 🤗🤗🤗

Sis Flo you are funnyoo😂🤣😅!Perfectly instructed. Do you like adding boiled eggs, fish, or corn beef? Love you sister 💞💞💞💞

First, that trend of adding boiled eggs to Moi Moi needs to start attracting a prison sentence. 😂😂 It overcooks the egg so much that it literally becomes poison. Corned beef > I can't stand the smell. Fish? Let's just say that we prefer our Moi Moi plain. LOL

Unfortunately no one in my house likes beans but me and my mom. Beans cause bloating hence why no one likes it. They only ways it is consumed in my house is either by making moi moi or akara. This Chickpea moi moi looks like the real moi moi. Kudos Flo. Hopefully I will give it a try. Thanks for sharing! How does it taste though?
