Meal Prep Suggestions
Boil/steam/pressure cook a pot of potatoes
Chop and roast fajita vegetables
Chop cauliflower (or buy already chopped)

Week #1 Grocery List
(much of this will last into the 2nd week too!)
1 bag/container of spinach
1 bunch of parsley (for the herbed pesto)
1 tub of oatmeal (old fashion, 2 minute, steel cut - your preference)
2 containers of tofu - for the nuggets and scramble
1 bag of quinoa - for the chili
frozen blueberries - for the smoothie
frozen pineapples - for the smoothie
frozen broccoli - for the stir-fry and roasting
2 lemons
dates - for the smoothie, snack and maybe a dessert
bag of white or yellow potatoes - for any meal, but my favorite is home fries
bag of yellow onions - for stir-fry, curry, soup, scramble - use in every savory meal
4 colorful sweet peppers
1 bag of kale or collard greens
1 head of cauliflower
whole or jarred garlic
whole grain pasta or chickpea pasta or sub with your choice of pasta
unsweetened dairy-free milk (I used almond or oat milk)
1 bag of red lentils
2 cans of chickpeas
1 container of hummus
1 bag/container of your favorite or mixed nuts
1 container of nutritional yeast (found in the seasonings isle)
