Hey loves ! I’m showing you guys how I make my Cou Cou / turn cornmeal like my Jamaican friends call it, as well as stew fish and spinach with corn. I hope you all enjoy this one !
Cou/ cou recipe:
3 cups fine cornmeal
27 fl oz coconut milk (about 3.375 cups)
1/2 cup water
2 tbsp butter
5 pimento peppers
1 medium onion
NB: I will highly recommend not using any other grain of cornmeal besides the fine one.
What’s in my Green seasoning :
Chives
Thyme
Pimento pepper
Salt
Onion
Vinegar
Parsley
Basil

My mom used banana leaf and pour the cou-cou.The leftover cou-cou we fry it the next day.

This is the way I am used to having it served, but cooked the Jamaican style with okra, and using water instead of coconut milk. I am definitely going to try this. It looks sooooo good.

Cornmeal mush (Coo-Coo, Fungi, Fungee, Funchi) is found in most Caribbean islands including Curacao and the Virgin Islands. In the Dutch islands like Curacao mashed black eyed peas can also be mixed into the mush. It is part of the African Diaspora culinary heritage. A version is also found in the Southern US States because enslaved Africans were also transported to that region. Most islands include ochroe/okra as an essential ingredient in Coo-Coo. It is part of the national dish of Caribbean countries such as Barbados (Coo-Coo) and Antigua (Fungee).

This is how we make it in Jamaica also, we use coconut milk or water or both. We also add okra, we shape it out in a bowl or cup before we add it to the plate or we just share it just like that. Nice dish.

I use okra sometimes too. But I prefer it without. It is a really nice dish

Thats how we make it in trinidad with the ochro also , but we add pumpkin and/or carrots sometimes too. My personal preference is with the coconut milk too

You can reduce too much salt in any recipe with lime juice.

How long should I cooked the cou cou?🇬🇩

After you pour the cornmeal I’d say for like 5 mins or so . Cornmeal cooks fast ones it interracts with the hot liquid .so once it absorbs,keep it on low heat and stir till all the liquid dissolved

It would have been helpful if you had given the proportion of corn meal to the coconut milk. This would help beginners.

...so you are familiar with it in Jamaica, but not in Barbados where it is the actual national dish? I find that really interesting. It is made different though, with okra slush and water and not with coconut milk.

Many Caribbean people are not aware of the shared foods among the islands. Though some purposefully pretend to be ignorant. We cannot read the young lady's mind so lets give her the benefit of the doubt.

In Trinidad and Tobago okra us used, sometimes grated carrot or pumpkin, but not coconut milk
