Mung Bean Pancakes! Today we are using split mung beans (aka moong dal) to make a few different types of "pancakes"... both savory and sweet! These healthy, protein packed bean patties can be used in wraps, sandwiches, cut into salads or stirfrys, or even just used on their own as wraps. They are vegan, whole food plant based (WFPB) and super easy to make! Hope you guys enjoy!

🌱 Basic Recipe:
1 cup split mung beans (soaked overnight in cold water, then rinsed & drained)
1 cup water*
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. black salt (for the "eggy" taste)
Pinch of turmeric (for color) and pepper
Add all ingredients to a high speed blender and blend for 30 seconds or until batter is smooth. Add to medium-high heat pant. Flip after 3-4 mins of cooking and cook for 1-2 mins on opposite side.
*For a thinner pancake, add more water (start with 1/4 cup more first). For a thicker pancake, add less water (start with 1/4 cup less first).
🥞 Sweet Mung Bean Pancake Recipe:
1/4 cup split mung beans (soaked overnight in cold water, then rinsed & drained)
1/2 cup rolled oats
1/2 cup plant milk
1/2 banana
2 dates
1/4 tsp. cinnamon
1 tsp. vanilla
🍴 Tofu Mung Bean Pancakes
1/4 cup split mung beans (soaked overnight in cold water, then rinsed & drained)
1/4 block tofu (approx. 100g)
1/2 cup water (or less for a thicker pancake)

I just made this a few days ago, mixed with lots of finely chopped veg, onion and mushrooms and baked on a sheet pan in the oven. Great!

This is awesome and similar to Indian dosa.. a mix of rice and various split lentils (dal) which is all soaked, blended into a thin batter....and then fermented overnight or longer, which makes it somewhat like sourdough, a bit tart and bubbly. Traditionally, it's spread very thin with the back of a ladle and cooked until crispy, but I like to make a thicker batter and make 3-4 inch round flatbreads I use instead of bread or rolls. I've been meaning to try making dosa with dal and steel cut oats to up the fiber and nutrition, but always get sidetracked with other adventures! lol

Yes!! I’ve been wanting to make homemade dosa for a while now ... I love dosa! Been a bit hesitant to try, even after buying urad dal specifically for it. 🙈🙈 Wow, I never thought to add steel cut oats. 🤔 Very clever! I’m impressed with all your ideas and suggestions! 👏🏼👏🏼👏🏼

@@LetsEatPlants There is a dosa variety made with green mung bean called "Pesarettu" made with mung bean, ginger, etc and is amazingly tasty. Since the outer green coating of the bean is not removed, it is even healthier.

Along with that, I also add a tablespoon of soaked fenugreek seeds, and a few tablespoons of moringa powder to amp up the nutrition. I wouldn’t recommend adding raw greens instead of the powder as it seems to make the batter a bit frothy while blending making it harder to spread on the pan.

Hi! This Recpe is followed by me since we were children as in India my mother used to call it Moong cheela that means a pancake and we add cumin seeds fresh ginger, garlic cloves, green chillies and asafoetida and little water to soaked overnight Moong dal and grind it with all above ingredients and add to bowl and when pouring the batter on a pan put the finely chopped bell peppers and onion finely chopped and coriander and cook on one side and flip it to other side.I like your recipes and your variations of adding tofu and the sweet pancakes as well. This dal is very light on stomach too we can prepare this as soup by just boiling it with salt and seasoning it with cumin powder, onion and garlic powder and it is good as it is tasty and light and we also make khichdi that is 1/2 cup moong dal and 1/2 cup rice soak them for 1 hour and add seasoning of cumin, salt and pepper and onion ginger garlic and pressure cook in instant pot with 3 cups water and your khichdi is ready its one pot meal eating with curd or pickle .I had it with almond yogurt and fresh turmeric ginger green Chilli pickle made by soaking turmeric, ginger and Greenhills in lemon juice and little salt in a glass jar and refrigerate this pickle for a week it is good to eat.

Thank you my dear! I hadn't tried this type of mung bean before either... but it's definitely a vegan egg game changer! If you ever see JUST Egg in the store... definitely give that a try. Supposedly it is VERY similar to real eggs. This is mainly a cheaper/healthier option. 😆😆 Glad you enjoyed!! 💕

@@LetsEatPlants These were great, I put salt, onion & garlic powder in mine. These were amazing as corn chip style crackers with hommus. I popped them in the toaster to brown up and then let them cool, they turned out super crisp, Sprinkled with salt & spritz of vinegar👌🏻😋

Yay! Glad you enjoyed! 💕🌱 Great question... I realize now I definitely should have included that in this video! LOL. 🙈 Today I used them like little pita breads had some of them with hummus and some of them with avocado & salsa, just because it's quick and easy! I kinda treat the thinner ones like tortillas so I use them for wraps/ tacos. The thicker ones I use in place of egg patties. So could be in a breakfast sandwich, or cut them up and use them in a breakfast burrito, I've even used them in sushi before (also cut into strips first). If you load them up with veggies you can serve them like an omelette. (You can even sauté some veggies first, pour the mung bean liquid on top and let it cook like an omelette.) A vegan sour cream would also be awesome with these... or a pesto, a chutney, garlic cashew aioli, black bean dip, etc. 😄😄 Hope this gives you some ideas to try!

The ingredients describes very clearly "it is mung beans protein isolated". You have first to isolate the protein from the mung bean, it is not a simple process, but it's worthy to do it if you want to eat sth similar to eggs.

I'm chuckling at "lost my mind and tried Keto"!! 😂 We've all been there with trying unusual diets! I had the same issue! (With having extra coconut flour.. not trying keto! Lol) I bought some and then had NO ideas what to do with it. Still don't. 😂 I ended up giving it away because I just couldn't find any recipes I liked using it. But I do remember Rhian from Rhian's recipes had at least a few recipes using coconut flour. (You can actually do a search on her website for specific ingredients!) www.rhiansrecipes.com Eating Bird Food also has a few recipes for coconut flour and quite a few for almond flour as well! www.eatingbirdfood.com/ (Just type almond flour or coconut flour into her search bar at the top right corner and you will see them come up!) Both of these are bloggers I would trust with providing good recipes so check them out and hopefully you'll find some that look good! 🤗

The reason I've avoided eggs most of my life, unless they're mixed in foods that cover up that 'egg' smell, is...the 'egg' smell. Problem solved with cooked split mung beans WITHOUT the black salt. What a welcome revelation. But I don't have non stick pans and even with So much oil added to pan, it still sticks like glue to the iron skillet

Can this be done with flour from grinding mung beans? I make flatbread in the oven with oat, chickpea or lentil flour and flax meal. Asking because I’m too lazy to soak and blend each time.

Great question! Tbh... I have no idea! I tried looking online for the answer to this, but only recipes using the whole bean came up... nothing with flour! 😂 I suppose it's worth an experiment if you're up for it. For me, I have done buckwheat crepes with both whole buckwheat groats AND buckwheat flour and both worked.. so I feel like this would probably be the same type of thing? Let us know if you try it out! 🌱🌱

Good question! I think its a combo of the fact that they use just mung bean isolate (so just the pure protein without the starch or fiber) + oil! Not 100% sure though. 😆😆 Have you tried their products? I'm curious to!

@@LetsEatPlants Yes. I have tried the Just Egg. It is a good substitute for egg. We make an occasional breakfast sandwich with the Just Egg, a slice of vegan cheese and a vegan sausage patty on English muffin. They taste so authentic. It is a real treat occasionally, Obviously not whole food, but delicious and very nostalgic. I am curious to try their folded egg product next.

We didn’t have JUST here in Canada for the longest time so we are just now getting them in stock more regularly. It is definitely on my “to try” list.... the folded ones too! Yes! Great question. They do indeed. I make sure they cook for a good 3-4 mins on the first side, and 2-3 mins on the second side. Mung beans do cook pretty quickly, fortunately. 😄

That’s a great question! I’m not 100% sure, but yes I would be weary of beans like that that normally take a long time to cook. I’d stick to quicker cooking legumes like mung beans & lentils.

The savory ones I don’t eat like pancakes.. usually I’ll make them large and thin and use them as a wrap, or if I keep them smaller I’ll use them in place of egg. So for example in a sushi roll, in a vegan breakfast sandwich, or even just cut into salads. 🤗🤗
