Update: Gaggia just released their Classic "Evo" Pro with updated pressure valve and stainless steel component upgrades, as well as a chemically coated aluminum boiler. You can get the new version for the same price as the standard Classic Pro here: amzn.to/3pIGLB7. My personal opinion is it's a welcomed upgrade.
We have been drinking espresso drinks for a few years now. We upgraded to the Profitec Go espresso machine (Single boiler PID) 6 months ago due to the hype. We sold my original GCP. 6 months later, realizing how bad of a mistake that was, we bought another Gaggia Classic Pro, which seems to be version 2 with an improved commercial-style stainless steel shower plate.
In this video, I'm unboxing version 2 of Gaggia Classic Pro and sharing my honest opinion with you about why a high-end single boiler w/PID might not be an upgrade compared to Gaggia Classic Pro.
