Two ways to brew light roasted coffee pour over by doing a simple paper filter swap! The Sibarist Fast and Cafec Light paper filters offer very contrasting styles of brew and I would highly suggest you experiment with them. These fit best in cone shaped drippers such as the Hario V60, Mugen, Origami, Hsiao, and more!

Thanks for making this! I think this applies regardless of filter type, just brewed the best cup of Verve green tip gesha ive had grinding at the finest end of medium, a minute longer extraction than I do with my avg specialty coffee, altho I think I'm at the limit for this coffee now, very minor dryness so I'll go a touch coarser, but that part is overshadowed by an insanely balanced cup! I appreciate you for testing this Brian!

I used the sibartist filters to make pour overs with my niche since I could grind finer.

I use the cafex light with a Hario Mugen for light roast - also end around 8-9 min and taste great.

Great video. Really interesting seeing how the filter affects brew times and taste in cup. Can you share your V60 technique you are using in this demo? Interested to know if the pour times and weights were the same and if the major difference is draw down time.

from my experience if you use T83 instead of T92, the tasting notes may be close, give it a try, or the new Abaca+

Well well interesting subject indeed. What I found is that the Cafec Light are way too slow, even for light roast coffee like the beautiful ones from Manhattan. At this point it’s an immersion brew really and it behaves like it. The Sibarist paper is awesome, even the feel of it tells you directly how premium it is. But they are too fast in my opinion. 1) you need to grind desperately too fine, and even when you too it’s still kind hard to control because the flow will probably be still too fast 2) they let a bit too much of sediments in your cup, which is accentuated by the fact that you need to grind finer and finer. I think Sibarist should make the same filter but with a thicker paper to still get a nice flow with more control and without the sediments in the cup. As of today I use the Cafec Abaca+ which is still very fast but not as fast as the Sibarist, and without the drawbacks. I need to experiment with the other Cafec medium and dark.

Wonder how much the lack of body is due to a much lower TDS? Be interested in seeing how that comes out if you ground finer for the Sibarist to push the EY. I found the Sibarists to be one dimensional tasting compared to the CafeC Abacas but will give them another try. Hope to see a video comparing those burrs to the SSP Brew burrs!

I just started playing around a bit with pour overs, and got Japanese Kalita filters, are they basically like a regular flow filter, something in between these two?

Those are really long brew times regardless of paper speed compared to what I'm used to. Is that something you'd recommend for these ultra lights? What was your water temp and grind size?

Awesome comparison of filters, I think they both have their place. I love the hario boxed untabbed filters. But I hear they are not making these anymore? It would be interesting to see the time/flow from acaia scales of these two brews.

TimeMore had a Dual black mirror scale that was basically like two scales in one, it somehow had a built in extra one for pour over, so you can basically watch the flowrate from your pour over device into the cup. With a Acaia or most scales that measure flow rate it will only show you what you're adding, it doesn't differentiate if it's being added to the top portion of the filter and when it flows through the coffee to the cup, it just knows the total weight.

Crazy that your fast filters are still finishing at over 4 minutes. If my brews go over 2:45, they taste over extracted too me

Having a low fines grinder probably helps a lot with that.

Yeah I'm using a grinder (Shuriken Coarse) that lets you push SUPER fine grinds without any astringency. Also using a coffee that is hard to make taste bad in these situations is very helpful.

I am skeptical of the TDS readings on these coffees. You ground very fine and only received a 1.24 TDS after nearly a five minute brew and a 1.45 TDS after nearly a 10 minute brew time. We would, of course expect relative differences in the TDS readings, but these values hardly seem accurate for the amount of contact time that the coffee had with your brew water.

I'm looking for guidance using the Sibarist Fast filters with a 1zpresso zp6; brewing a light roast Ethopian Yirgacheffe. Any thoughts about grind size and water temperature?

This cat been usin' sibbie fasts with the zp6 for an epoch. I dig 4.5 grind set with small bloom followed by one continuous pour. Torkin awesome. Nice vid Quanster.

The Cafec medium-dark (T90) filters are really fast also. Similar to Sibarist, but much cheaper.

I find the T90 to be comparable to my Hario unwashed filters in the 100 box.

The dark ones are not as fast as the medium. Now the fastest I use are the new Abaca+ papers.

@@BrianQuan I’ve never tried the darks, but I’ve read they’re slower than the T90s. Not sure why. Not as slow as the light roast filters though

Sibarist are way overpriced. 100 filters for $45. Cafec is $11 for 100 filters.

I don't think it's overpriced. It depends on what kind of consumer you are. If you're chasing the perfect cup you'll happily pay for premium equipment

Thanks for the good info, I thought mine was stalling - using the T92 CAFEC papers. Now I know what's going on. I'm in the 6 min or so range. My concern isn't so much the contact time as it is the temperature of the water if you're not using a constant temp kettle. Which I'm not. Mine brings it up to 205, you remove it, then do your pouring.
