Hi friends, today I decided to try my hand at making perogies, and I don't know if I can ever go back to storebought. I've been ruined by how delicious they were! In other excited new my brand new mixer at long last and as you'll be able to tell in this video I am very excited about it! I love my Ankarsrum! One of THE BEST purchases I’ve ever made for myself! It’s a legacy piece that I’ll leave to my daughters / granddaughters. Of course , the running joke is “they’ll have to pry it out of my cold dead hands’” 😂😂😂

As an Irish woman with a love of food, I am wild about pierogis. Used to live in a very ethnically varied neighborhood. A Polish friend gave me her pierogi & fillings recipe. Wow! What a process… great respect for Polish or Czech woman. Had to make the fillings the day before since she taught me potato, potato & cheese, cabbage, sauerkraut & cabbage & potato & sauerkraut. Not enough hours in the day. My mouth is watering watching those beauties you made 🥟🥟😋

I make perogies with caramelized onions and cheese. My mother-in-law was Polish. She taught me. I usually make 100 at a time. My daughters help me make these. We fry ours in butter till golden brown after we boil them and let them cool.

For the hallway: Raymond Tile (named for the landlord who put this on all the walls when I lived in the mountains.) 2x4 scraps longer than 6" and shorter than 3' with routered edges, screwed to the wall to look like like tiles. Vertical, horizontal, diagonal, various combos. The options are myriad. Surprisingly good looking.

Nice work! I LOVE Pierogi, I’m half Polish and grew up on them. I know how labour intensive they are but homemade are infinitely better than store bought! When ever I make them, my favourite filling is: onions, mushrooms & sauerkraut sautéed in garlic and butter, then add mashed potato and some cottage cheese. Form into a ball then stuff a cube of cheese inside before wrapping in the dough. Boil then fry - the cheese melts throughout and it’s divine! Serve with sour cream & chives and sometimes a little relish 👌

How exciting to have the basement space almost finished!! For the mud room area, what about some version of shiplap? Wood boards along the wall, and then a bench and hooks above!!

I was thinking horizontal shiplap. 👍🏻Stained and sealed or painted and sealed. Easy to wipe clean. Half panelled. I think it’s called wainscoting in the US. But full panelling might look better (less fuss) when there’s a full array of coats, hats , scarves and other homestead accessories adorning the area.

Wainscoting wood along the wall stained like mahogany color, going up about 3 to 4 up the wall, with build in shoe storage underneath the bench. Then take rough cut wood , about 2 inches thick, stained black along the wall with copper color hooks for coats and hats. Then above the hooks maybe a panoramic picture of your farm framed above it.

We've made our own bread weekly for most of 60+ married yrs. Had this machine been available decades ago when our kids were at home we too would have gotten it instead of relying on our KA. However, we're only on our 2nd KA tilt-head machine in all this time so it really is a workhorse!

Chelsea, here’s my theory as to why you always have to add extra water to your doughs. I notice that when you measure your flour, you shake it in order to level it. So the flour is settling (compressing), meaning more fits into the cup. The standard way to measure flour, at least what we’re taught in the US, is to scoop it and scrape the excess off the top with a knife: no settling. I bet if you measured a cup both ways, your way would be at least half an ounce heavier.

I live in an extremely dry area as well, similar to the area Chelsea is in. I scrape my flour as you described and, like Chelsea, I always need to add extra liquid.

I have chicken metal nesting boxes we have on the wall in the mud room we use to put our shoes in.Goes really well with the bench I have with the coragated metal slide shelves underneath.And I hot glued a wood rooster and hen to the top on each side of a sign that says Farm house.

Your remodel looks great! It will be nice having a “mud room” for all your boots and coats. I think the metal roofing would look cool or reclaimed wood boards would look nice too.

We actually put our eggshells on a piece of parchment paper, put them in the oven. Turn it on to 400. Once it comes to temp, pull them out. They are completely roasted. All membranes are cooked. We then can feed to our chickens immediately.

I love all things rusty, so I’m definitely for the rusty galvanized sheets. We were just discussing putting it on the open areas underneath my deck. Trying to keep the dogs from digging holes there. They’re basically making their own pools/mud holes 😂

You could do 1/2 or 3/4 of the wall using the reclaimed fir, similar to how people use shiplap in the mud rooms and then have hooks on a reclaimed fir rail above it. It would be cost-effective and look nice. It can take quite a beating and the distressed marks left behind would just add to its character.

I will save you some time with a really simple dough - 500 ml container of sour cream and 3 to 3 1/2 cups of flour, let the dough rest. When we roll out the dough, we do it thin and instead of rounds we cut squares so waste less and no re-rolling the remnants. A stretchy dough is easier to fill. We always boil them, then flash freeze them to bag up for future meals. Before you flash freeze them lay them out on a pan with a damp towel on a sheet pan, once the tops are a bit dry transfer them to another sheet pan to freeze. Winter is a great time to make them because we just set the pans outside on the deck to freeze while we are making them, once frozen they come off the pan with no damage to the dough and easy to bag up without sticking together

I did get a Bosch mixer for myself on Black Friday, and I have no regrets! I love the top load feature. You can’t make any small batches in it, but I am freezing extra cookie dough and bread for my husband and me, so it’s a win😊. Enjoy your new toy!

For coats and boots ideas check out Modern Homestead Alaska the Garage Part 2 build because she did an awesome area for all things winter on a wall and while it’s a simple design it looks terrific and is highly functional especially with those double hooks she used. Anyway just thought I’d mention it. ❤ PS Congratulations on that new mixer! Wow! They sure are pricey!! I’m green with envy!! I’ll enjoy watching you use it until I can justify the expense! I also look forward to watching your Ravioli making. I was taught to make perogies from a German lady who learned from a polish lady and we always boiled them after making them and before frying them. I thought it was interesting that you went directly to frying them. Also we never added onions inside the carmelized onions were added when the perogies were fried in butter. I like the idea of adding them. We also made incredibly delicious mushroom perogies by sautéing mushrooms in butter and then making a purée of the mushrooms and adding some breadcrumbs to absorb the extra mushroom juices. ❤🙏🏻🍁🇨🇦🥰

I love pyrogies it is a tradition as I am Ukrainian. I also boil them first before frying. We eat them just boiled. At Christmas time with leftovers we fry them for breakfast. We also like them with potato and cheddar cheese and sauerkraut. Sometimes we have them in cream and onions.

Hi. Greetings from East Anglia, UK. Congrats on the new mixer-not a brand I've seen here in the UK, but it looks great. Just a thought about your old one. Even if you've burnt out the motor, do a quick search before you scrap it. I've just been able to have my Mum's 1969 Kenwood Chef (THE brand everyone's home seemed to have growing up in the '70's) refurbed-and trust me she used that incessantly. I'm super glad it didn't have to be scrapped and that I can pass it on to my family. But, I think the guys with the skills to do this sort of thing are thinning out, so get it done, even if you then have to store it for a few years. Enjoy the new toy!

I was interested to see you make the pierogies. My paternal grandmother taught my mom how to make them--she came from the "Old Country" around 1900. Her dough was always very stretchy. Filling was the mashed potatoes with onion and BACON or sauerkraut with a little bit of the potato mixture added to hold it together and give that wonderful flavor. We always crimped the edges by squeezing and twisting along the edge---boil and coat with melted butter. Ohhhh so good!

Rather than need more water to hydrate your flour I think it may be more to do with the way you measure your flour. I noticed you shake your cup of flour to level it which compacts the flour into the cup rather than fluffing the flour before using it, the result being you’re subconsciously using a packed cup of flour which needs more water to hydrate it - just a thought!

The dough for real dumplings is made of flour, salt and hot water. Then it rests for a while, it is super elastic and easy to make dumplings, soft butter about 50g is added to the dough.

So cool! I have the very same kitchen machine- I got it from my mother when she died. Mine is from the original brand "Elektrolux" and it is 25 years old and still runs perfectly. I mostly use it to make yeast dough- so fast. A very good invest- enyou it!!! Greetings from northern Germany!

My ex was polish and his mom showed me how to make mushroom and onion perogies with black pepper. I recommend you try chopped mushrooms instead of the onion. They are to die for! And a nice change. You never see them. She also make blueberry and cherry ones as a desert.

I have an Assistent one like yours from my parents in the 70s, it's a work horse! I don't use it too much, because I don't make big batches of things very often. But it's great. I'm sure it will last you the rest of your life!

I love my Ank it is a work horse for sure. A good tip is when you are making bread dough you have added enough flour when it starts to make a doughnut shape in the middle. I use the roller for making most of my breads which make up about loaves of bread.

Polack here. They're dumplings, and its pierogi dough, not pasta. Even though it's kinda like a pasta. But never call pierogi "pasta," or a secret Pole will be offended 😅 pierogi shou.d be boiled, then fried. At some point, try drained sauerkraut and finely chopped, dehydrated wild mushrooms. And try paszteciki.

I was coming to say they needed boiler first! I learned to make them from my Polish brother in law. My kids help me make them up, I get them boiler buttered, and let them cool to freeze for later (and ,if course, we eat some fresh!). We're currently out, so need to make some more up soon!

My grandma lived in Winnipeg. She was Ukrainian / Polish and used to make us the most delicious pierogies(topped with caramelized onions and sour cream), borscht, and golobki (cabbage rolls). I need to make them all!

Hi I'm from Poland. I make pierogis with potato and cottage cheese. We boil them first, and eat with caramelized onion. You can fry them or brown in the oven. ❤

Chelsea, that mixer is beautiful! Bummer they don't ship to the US but soon hopefully! Dan did a great job in renovating the basement! It looks so good! A bench with a place for boots underneath it is going to be awesome! Maybe a enclosed cabinet would be good to put gloves and hats and other stuff Either flank the bench with 2 tall ones on each side or on one side and maybe one up top between the long ones above the bench close to the ceiling and maybe just a foot deep and tall so you don't hit your head. I'm sure you've considered a built in storage bench. Have you thought about raising it 8-10 inches to easily store shoes under? I would think you'd want the walls to be easily cleaned, so the reclaimed metal seems like a good option. Knowing how you love your garden, maybe put some type of trellis behind the bench seating to put faux greenery/flowers to bring the outside in If you have an artist in your family perhaps have them paint a mural on the wall. The possibilities are endless 😁🤗

Interesting that you just fried the pierogies. I have always boiled them first, then fried, then top with hot bacon onion jam and sour cream! Happy you got your new kitchen "helper"! Dan is getting a lot of projects done; it feels good to accomplish so much. Just a thought: maybe building the bench, then nailing finished cedar fencing planks together and attach to the wall above the bench and top with your fir plank with hooks? 😊

Chelsea since you're farmers/homesteaders have Dan get some yokes to hang on the wall and put hooks in them to hang your coats on in the basement family room area. I thing that would look cool. And use reclaimed barn wood for the bottom

I liked that you had all the ingredients & tools on the counter ready to go. You didnt have to scramble around getting stuff. The perogies looked good. So does the basement. :)

You really don’t need the dough hook. Roller works for everything. They only made the dough hook for US customers to make them feel more comfortable. No European customers ever used a dough hook on their Assistant. You are going to love your new machine! Have fun 😊

Thank you for your video and for the wall for the family room just use Ceramic tiles easy to clean and hooks for the coats and a shoe cabinet. My Sister in Texas has the walk in area like yours and after wood, paper wall and so much. Her husband just said lets put Ceramic tiles easy to clean and shoe rack plus the hooks for the coats . It is very great because the are where she lives it rain and shows a lot and on top of that they 3 dogs so image that mess. Know the walk in area if it gets missy easy to clean.

I have been wanting that mixer for a long time they make some under$50. But I see yours is incredible. WOW what I could do with my double batch of rustic potato Rolls for cinnamon to Rolls to bread wow nice . But as some might not knowing potato Rolls grow massive if you keep your starch with potatoes when cooking . Oh you lucky lady. So happy for you.

I used to help when my girlfriends grandmother was making pierogi's...and that was 50 years ago...a very European grandmother that cooked and baked old school....she always boiled them...then fry if you want but you could eat with butter just after boiled....and nothing has compared since

I was taught to boil them first, then fry? How much easier…. When you said reclaimed fur, I wasn’t thinking fir! Lol I was like “Hmmm, coyote pelts? Raccoon pelts?”. Then when you went into your pantry I was like OH! FIR, as in wood. 🤦‍♀️

Congrats on the Ank, you are right, they are beautiful machines! Mine is metallic gray to go with my countertops. If you need to speed the rise of your dough, heat the bowl with hot water before you start and after placing the cover on bowl put a warm pad on the top. I use a rice filled microwave cozy and it works as a proofing oven, especially in winter. I do not recommend the meat grinder attachment however, mine exuded aluminum dust into the grind. No one in the US or Sweden at Ankarscrum could solve that so it went back, sadly. Blessings Jan

We also live in a log home we had built and when we moved in there was no place to hang our coats so my husband split a 8 inch long in to and put 2 and 3 point antlers onto it using brass screws and 30 years later it is still going strong. My husband placed each antler and traced it's outline and took his dremel tool and carved out a place for each antler. It looks amazing, and it holds the coats away from the wall.

Always impressed with your meals! I'm drooling a bit too! I love your idea for the mudroom entryway! It would be visually appealing and decorative. Wood crates under or next to the bench to store gloves and miscellaneous.

My husband was polish & his aunt made pirogies stuffed with sauerkraut & mushrooms sautéed in salt pork. She also made the potato, but the sauerkraut was my favorite. After frying them she starved them with apple sauce. YUMMY!!!

I just made 100 perogies, flash froze them individually and then put them in ziplocks. So easy to pop them out to cook for dinner.
