Squash blossoms (or zucchini flowers) can be roasted or baked or fried, no matter what your favorite stuffing is. This tutorial is for stuffing the blossoms with ricotta and swiss chard and then baking/roasting in a 400 degree F oven. Both roasted and fried are low carb but the baked method uses less oil and no breading so is much lower in calories, while keeping the excellent flavor!!
