I have been watching your videos for the past six months. I found them because I was looking at a good way to clean my machine and your explanation was very good, what was even better was the information on how to control the amount of water etc. Since watching your videos my technique has improved as has the quality of my brew. The one point where I differ is that you buy your beans and you have no idea where they are grown. I grew up in Kenya with coffee plantations all around us. I do use Good Kenya beans roasted locally but have come across a new source of beans that are Rwandan Coffee Plant Varietals. About 95% of Rwanda's coffee plants are the high quality Arabica varietal Bourbon. Also cultivated are relatively small amounts of the Catuai and Caturra varietals. I am lucky that I have access to a small roasting company that allows me to select my beans, proportions and type of roast. Do try and be more selective in choosing your source and type of beans. I just got my Barista express a few days ago.. I was getting very low pressure when pulling shots with the unpressurized baskets.. I tried going threw all different grind setting from fine to course and even tried a few different bean roasts and brands and was getting the same results.”low pressure”.. Eventually i took off the bean hopper and adjusted the burr from its factory 6 setting to a 4 and now I’m getting very good pressure in my shots.. thanks for the awesome video this helped a lot!!!

THANK YOU, THANK YOU, THANK YOU !!! I had no idea there was an "inner" burr adjustment (I'd maxed out at fine on the exterior dial, but still could not get the grind fine enough to build proper pressure. Adjusting the INNER burr did the trick !!!)

Fresh beans make a massive difference in the quality of the shot. I to have the same machine and when I use old stale beans it comes out fast and watery and at time too bitter but when I get fresh ones I get great crema and flavor.

You are the man! Just got my machine back from the repair workshop, and I used the same coffee, same tamping pressure, yet water was flowing through with almost no pressure. No idea where this inner dial was, if they misplaced this, but now I adjusted it and I got nice espresso range pressures again! Thank you!

Just picked up a very clean used Smart Grinder Pro for $60, but couldn't get grind fine enough. Saw this video, and since we have the same burr i pulled top out and it was on setting 9. So i took it down to 4, much better now. Thanks

Your videos always come when I need them, or in other words they come at the right time. Yes. I've changed my bean and I got low pressure. I tried twice but again I got the same results. I tried put more doze like 21:50 I got a better than previous result! I'll try to make it finer and update you

I've put the grinder on number 2. I got better pressure than when it was on number 4. I've noticed one thing in the coffee beans, there are beans that I bought it from Valentine Cafe which is fresh, it was very fantastic since the bean itself is big, compared to what I got from Starbucks or even the Lavazza coffe from Amazon. I also noticed when I grind the Valentine beans, I got more gram with less capacity in the portafilter.

On the inner/top burr adjustment, if your like me and have an older Barista Express, from 2015 or so, that came with a non-adjustable top burr, you can order an adjustable top burr from Breville, it solved my low pressure issue and made a huge difference.

This is again a very informative tutorial on how to use store bought coffee beans on the barista express. During the pandemic period, my wife ordered a whole bunch of coffee beans from Costco and I could not get the right to decent extraction at all, shots were always under extracted so now I only use those beans for pour over. After watching this tutorial, I might give those beans another chance.

hard to get good coffee brew from bad stale beans. Use freshest roast from local roaster if possible.

I use the inner size 4 and finest grinder size with 20 gram medium roast beans (LAVAZZA quality oro), its output 30sec in the edge espresso range and taste really good! I think the dose is really important for the finest ground beans, else it’s so wet after extract. Try to top your basket up!

Thanks for these videos. I have a similar espresso maker, the Breville Infuser and a separate Breville Smart Grinder. I have learned a lot from your tutorials and have purchased the leveler, ring and scale. Those accessories make for more precise coffee making. Even tried Coffee you recommended. I’m still struggling with slightly acidic coffee, even with the perfect amount, tamp, grind and time. Videos by other coffee experts suggest that the acidity is from the water. Thanks again. Glad you and your family survived COVID-19.

You mentioned keeping bean amount constant, thereby only variable you used was grind size to increase the pressure. However, tamping pressure will also increase or decrease the pressure, depending on how much pressure one applies to the ground beans in the portafilter. Worth mentioning I think.

Sandy Goldbaum Probably why people have calibrated tampers. There is a merit to applying consistent pressure.

I like my Crema Coffee Products. Have the funnel and the distributor/tamper combo for the 54 mm Breville portafilters. I don't ever have to think about that variable unless I change beans :).

When changing grind size you should purge the grinder to get rid of old coffee. Crema isn't the be all and end all of the coffee. Some beans are better for crema than others

I ran into this issue with my new bag of beans. The machine doesn't seem to be able to grind fine enough, but my hand grinder is! I set the top burr adjustment to 3 and the grinder started making high pitch noises. I don't know if there is actual rubbing inside but it does sound scary lol. Will go back to the previous roaster.

Your videos really helped me figure out how to get my pressure back up. I now use a scale, a distribution tool, and a palm tamper (height is more important than tamp pressure). I tried fresher roasted beans from a coffee house. All things taken together from your guidance, I was able to get good pressure and for the first time, experience smooth-tasting espresso. I have a dosing ring and a bottomless portafilter on order as I am obsessed with fixing any channelling. I do want to fluff up my grind before I distribute/tamp, but I can't seem to find a 54mm dosing cup (I want to give my grinds a good shake in the portafilter). Do you have any ideas where I might find this? Again, thank you for your videos. As you say, making espresso is tedious, but it's all a part of the fun.

Yep, that did the trick. So the upper burr grinder was shipped at 6. I changed it to a 3, then set the outside at 8, and worked my way finer. I got the LavAzza Rossa to taste as good as I could get, till my scale comes in. And this time I just did the one cup so I didn't waste much coffee. Big thanks for your help!!!! 👏🏼 👏🏼

Hoon , i have the same coffee machine for the pass 6 years and i love it , I set up the grinder between 7 and 8 but I like to use 18 grams of coffee beans , and you can gets very consistent shot every time .

I had a coffee Hoon and I went all the way down to internal burr 1 and external 1. Finest setting and still couldn’t get it extracted. It was a Colombian coffee called Potosi XO which is an experimental fermentation. On the other extreme for my drip v60 I go to internal 10 so very coarse

ive been watching your lot videos, and i learned a lot. i have breville express impress. My default inner burr setting is 6. from your experienced what is the best and ideal burr setting, so that i going to start there and will adjust the grinder outside according to my type of beans

My machine is about 5 years old and doesn’t have the adjustment on the inner burr; only the adjustment on the side. Is this a new addition to the inner burr? I’m find recently that I’m using lower settings (down to 3 or 4) on the side wheel. Perhaps my inner upper burr is worn and I would benefit from replacing it with the new version; what do you think?

Reason #1 for low pressure: Old beans. Not stale, just old. Could not get any pressure with burrs set to 1:1. Bought freshly roasted beans - setting 8:6 and it is dripping out slowly and pressure between 12:00 and 01:00 position. Just buy freshly roasted beans (less than a week since roasting) and try again.

Fist time I using my new Barista Express and the grinder just isn't able to smash the beans and goes making the sound of being "loosen" inside as the external pieces don't move... Is there anyway this can be fixed, or it's really broken?

Got a bag of Lavazza beans from Amazon, looks like they're about 6 month old. Inner burr is set to 4, and outer adjustment is at 3. I grind 18g of beans, and get 38-42g out in ~25s. Espresso tastes ok, but I'd like to slow down the flow a tad more. I know I can set grind to a finer level, but mu pressure gauge is close to the top of espresso range. Should I try a smaller dose or is there a better way?

try all the same settings but tamp little harder. You should able to slow down the shot.

Can you share your vaccum brand ? I found it is a bit hassel to change the burr setting due to leftover coffee beans in the burr, better to use vaccum to clean it up before changing it.

Agree... the freshness of the beans counts... bought from a local shop here and once got home use it. Can't find the right setting to get that right pressure. Have to use the pressurized basket 😥😥😥

If you have a blind Filter Basket and you backflush the maching Bar Pressure should move up to the Factory Preset Pressure. If it does not do that then you have another problem.

Have you have separated your top burr? I un screwed it and put it on the dish washer for cleaning. Afterwards I tried to readable and when I drew it back together the holes for the setting alignment are ‘to high’ and don’t like up with the notches for a secure fit. There are blockers on the top piece that limit me from screwing it together further, thoughts on a fix?

Can this new burr be used with the older machine 870? My machine cant seem to grind fine enough. So im thinking of changing my outer burr to the newer version because mine is not adjustable.

I've found with freshly roasted beans (on second hand barista express), even on the day, it just flies to get unless I really reduce the inner burr to 3 or 4 and have the external setting on lowest. Is this not bad for the longevity of the burr?

Grind size, douse amount and tampering pressure all affect your output pressures.

I normally get the pressure right (around 12 o'clock), but my extraction time for 1:2 ratio is never above 14 seconds. I have tried with different beans and grinding settings but I've never gotten anything near the recommended 25 seconds.

Love your passion for coffee, i have bought a sage barista pro. My problem is that i get to little liquid in my glas.. Pouring doubble shot etc, and if i go up it pours too fast :/ im struggling but some day i will get that perfect espresso! Do you have any tips? Or do i just set more water manually? (there is water on the coffee puck when i remove handle from the sage...

I purchased LAvazza super crema beans. However I CANNOT for the life of me get pressure out of the single wall basket. I've tried EVERY grind setting. I even went ahead and placed it on the FINEST setting, with the thinking it would choke out or at least get SOME pressure. However with 18 gram for the single wall, double basket, set to its FINEST grind setting, even tamping ~30 pounds, I get NO pressure?! Double wall pressured baskets produce the pressure as expected. I feel like the grinder isn't working? Thoughts anyone?

So I have used that exact bean on my Breville Barista Express and had to use grind setting 4, I believe in order to get a god shot. I found 17.5 grams worked better than the 18g and to make sure to get the right pressure when tamping. I actually had used a new bathroom scale that I had on hand to get the feel of the 30lbs pressure. I ended up buying a pressure tamper and makes tamping easier. However, I do have the same trouble as you with fresh recently roasted beans. Both local and from good brothers. I literrally had to take my inner bur out and change the setting to 3 and then the grind setting to around 2/3 to get close to the pressure and pull time I wanted. On my recent local bean purchase I had to put the inner bur to 1 (the finest) and the grinder setting to 3 and even then it took just about 25 seconds to get to 36grams. There isn't much finer I can get. As far as I can tell everything else is correct. Not sure if there is something else that can be done or if I'm doing something else wrong or not.

Had problem to get pressure up. Have tried all the way now to setting 1 upper and 1 in side. Then it’s getting ok. I went to the coffee roaster and they grinder some for me and when I used that my pressure got to high so the coffee did not come true. Do you think my grinder is not working correct?

Similar to mine, I was down to grinder setting 2 and still not enough pressure. Not sure if it's worth going to setting 1. The machine is straight out of the box and from the videos that I have watched they said don't adjust the inner burr if it's brand new. So I suspect the issue is the beans.

I was using a store bought beans. I actually did some experimenting and set it to grind 5 and used a pressurised filter and it was actually not bad.

I had the same problem. I wasted almost half a 1.5 Kg bag of coffee beans, starting from 8 then gradually down to 1, the pressure still not building up high enough. Eventually, I set it all the way down to the finest, and I got my perfect shot. Recently I got fresh coffee beans from a coffee shop, I can't set it more than 2. It's not just the pressure problem. if I set it to 3, there is no way I can temper 17 grams of coffee beans into the basket, lots of it will be wasted. If I set it to 1 or lower, I can temper 18 grams of beans into the basket without any issue.

Well I bought newly roasted beans, that is it is showing a date of when it was roasted and everything is fine. I set it up about 6 and I get the perfect pressure and shot.

the upper burr in my machine is not adjustable. I saw a few videos on youtube and theirs upper burrs are fixed as well.

Interesting how you've dialed the grinder down to 4 and still don't get decent pressure. I'm on my 3rd brand of beans (still trying to find one I like) and I have my machine's grind on the max coarseness. If I set it any finer, I get too much pressure to the point that the coffee drips out and I end up with hardly any coffee.

How you get do much crema out of the machine? I have used 3 day roasted fresh beans, adjust the grinding, the tapping, etc and I get little crema but not much like you. Why is that?

@@HoonsCoffee from the peet's coffee store and I have always asked for the latest roasted date. A few times I got 2 days roasted fresh but my barista expresso machine doesn't produce as much crema as yours. Thanks.

You'll get a decent shot with both. The Niche Zero grinds so much better that, yes, you get a much clearer flavour profile :). Definitely worth investing in.

Hey Hoon, I just tried to decrease the inner grind setting of my Smart Grinder Pro from 6 to 4 while using the finest outer setting and could almost double up the extraction time which always used to be way too fast having ~13 seconds to 27 for a single shot. The pressure of my LaSpecialista increased a lot now being in a good zone. The espresso turned out way less watery and better looking but was way too sour now. Any ideas on how to improve it?

Oh, I think this is my problem here. I am having a dual boiler and I already wasted almost one kg of beans. My pressure was never building up until I reached the grind setting 1 (finest) on the sage smart grinder pro. But I might have to go even lower by adjusting the inner burr?. And I have to use around 20g of beans to get enough pressure to get 40g of coffee in 25'ish seconds. Up to now I'm still not getting a good shot (18g/20g to 1:2 ratio) I already wasted about 1 kg of beans. This coffee espresso game is the hardest I ever started playing. And with timing? Do you count the 25 seconds including pre infusion or without?

Hi Hoon, great video again, thank you so much. I recently bought a different set-up (dual boiler and separate Smart grinder) and no matter what I do, the shots keep coming out too fast (and taste too sour). I changed one variable at the time and focussed mainly on grind size. However, no matter how fine I put the grinder, I keep getting my shots too fast... I changed the inner burrs to setting one now (works the same as your barista express) and then you really hear the grinder burrs working (for 20g it also takes like more than 30 sec). However, still a lot of clumping in my grind and shots coming out too fast. My assumption is that my grinder is not working as it should and should be repaired (the inner burr still feels sharp, but I don't know how sharp it was originally). Any other thoughts from your side? Thanks a lot!!

Sometimes, I adjust all the variables at once, out of desperation. If you're using cheap beans, try that to get a slower shot.

Thanks for your advice! I tried tamping really hard, but still too fast of a flow... Also tried different beans (fresh medium and darker beans and also supermarket beans, since these experiments would otherwise become too costly...)

@@hmehv715 Honestly, if you've tried even going down to the inner burr as setting 1 and you're at the finest setting for the grinder, it should be coming out nearly like dust. You should also likely be grinding metal on metal. Please contact Breville customer support. I called twice (don't email, they won't get back to you. I'm still waiting, two months later, lol). First time, I got someone who doesn't know anything about espresso and read off a script. Second time, I got an enthusiast and him and I discussed many aspects of improving my shots. Breville is usually good at replacing defective equipment within the warranty period. If hard tamp, finest grind, and tightest burr setting... something sounds wrong... Breville/Sage customer support :).

For what reason are you not weighing your shots? If you want the 1:2 ratio you're mentioning, by brewing 17.5 g, you would need 35 g. So your shots should be weighing 35 g. Also, you aren't timing your shots, even though it's only mostly important when dialing in.

Mine is at 2... and inner at 4.. got the right pressure but i still cant get the 1:2 ratio perfectly... 1-2 o'clock at 25 secs..

How long are you shots in seconds? They seem pretty quick. I've read that the pressure gauge is all that not important and should be aiming for shots between 20-30 seconds once the first drip hits the cup.

Don't you get more pressure from a finer grind? finer makes it harder to pass through resulting in higher pressure.. A more course grind makes it easier for water to flow through resulting in less pressure

As long as pressure stays even through the puck. The higher the pressure the more likely the puck is to channel also resulting in less pressure.

I still don't know how people are able to remove the burr. I used all my strength and it still doesn't move... Not sure whether it's because I bought it almost 2 years ago.

I just replaced my first Barista Express, which finally died. I couldn't ever budge the burr. Tried doing it with the new machine just for experience and can't move it either. Maybe our hands aren't strong enough.

use grinder at 7, tamp it as tight as you can, and forget the gauge bar, just make it on the edge of the espresso, no acid anymore for me.

Ive watched so many of your videos and you always start with a high grinder setting like 8 ..but always say its no good and reduce it.. Why dont you start with 5 or lower given your experience that lower generally tastes better?? .. It makes no sense?? I know its personal tadte but you appear to show the same error each video... I.
