Cake 4 1/2 c. Flour
4 1/2 t. Baking powder
1/2 t. Salt
1 cup soft butter
2 cups sugar
8 eggs separated
1 1/2 to 2 cups milk
2 t. Vanilla or 1 t. Vanilla 1 t. Coconut extract
350. 30 minutes
Filling
1 3/4 c. Sugar
16 oz. Sour cream
12 oz. Coconut
Frosting
16 oz. Cool whip
1 cup reserved filling

I remember when I was young that we didn't have a lot of sweets. My aunt and I would get a piece of bread and butter it then sprinkle it with sugar to do a sweet.

I recently stopped making cakes, my husband won’t help me eat them, I end up eating the whole thing! Not that my cakes are bad, he’s an ice cream eater...which him & puppy like to share. I would say great “more for me,” but that also means more pant sizes!

Connie Miller yes cake and me go up in size and it gets expensive. But maybe freeze the cake in a container cut in pieces .

I'm sure you could find some neighbors or friends who'd love a piece or two. A lot of older women quit baking and would just love some homemade cake!

Jane Martin that’s a great idea too, I have 2 sets of elderly couples on my block. People are afraid of other people’s cooking if clean etc., I know I am. I might try it and see, at least if they take it, it won’t be on my waist lol 😆

Shunshine Divine he helped me with the lemon cake two weeks ago, but last week I ate the whole carrot cake no kidding, I ate a huge piece every day. My weakness is cake, thinking maybe buy little Debbie individual cakes I guess, then I’ll probably eat 2 lol 😂

Watching you bake and cook for your loved ones takes me back to a time when my grandmother was still living and how much I loved watching her make delicious meals. My mom is the same way. She can take simple ingredients and build a meal fit for a king. In my family, homemade food is equated with love and comfort and home. Thank you for giving us a glimpse into your life. I so enjoy it.

I remember being a little girl at my Grandma’s side and she began allowing me to do little things to help and explaining why. You are one of the few people I’ve ever seen dropping the cake pans to get the bubbles out. Thank you for all of the hard work that goes into making these videos.

Growing up, we did the same with warm cake and we had margarine. Butter was fancy. But we sliced our serving of warm cake horizontal, slathered both sides with margarine. SO good!!

Makes me think of my Mama, coconut is her favorite. Wish I could make her one for tomorrow. She's 94 now and as you said we will do what we need to keep ourself and our loved ones safe. When I was little I remember my aunt and my mom making cakes like that with all the layers, my uncle used to make this amazing raisin bread and he used to tell me he was up all night with a toothpick puttin the raisins in.

I've made this cake for years and it's always a hit! You can also add a small drained can of crushed pineapple to the sour cream filling after taking out the 1 cup for the topping that you mix with cool whip. I use the 2 packages of frozen Tropical Isle Coconut and I don't put it in the filling, but I cover the outside heavy with it. It is also a great make ahead of time cake to freeze.

Oh, I also don't put the coconut in the topping either, I mix the sour cream and cool whip up and put it all over the cake and then put the thawed frozen coconut all over the cake.

Momma use to make her cakes from scratch mom always made homemade banana wafer pudding and my aunt made lots of layered cakes than the family would get together kids hunt eggs men would hunt mushrooms and ladies do the cooking what fond memories of the Easter years Happy Easter and God Bless you all

My mother and my aunts made this cake and they frosted it with seven minute frosting and sprinkled shredded coconut on the top and sides.

Yum! Buttercream-frosted coconut cake with homemade vanilla ice cream. Most scratch-made cakes are easy to do. We learned to make very successful ones as children. That miniature pickup truck in the thumbnail is adorable. It looks like the dark blue Chevy truck our neighbor had. He was a landscape gardener for Hollywood superstars and, like his beautiful house, it was kept in meticulous condition. I found a wonderful cotton quilt panel with a red Christmas tree pickup truck scene. The artist print will be made into a large, warm lap quilt when the right binding and fleece backing patterns are found.

Coconut Cake is my favorite cake. Reminds me of my sweetest great aunt. I would ride a bus all by myself around a 90 minute ride at age 5 to visit her. Always had coconut cake ready for me. Wish I could go back in time. Looks so yummy. Thank you for taking the time to show us

I remember my mamma making this cake when I was about 20 years old. My daddy found the recipe in a South Carolina newspaper. I'm 62 now. She would keep it in the fridge for 3 days before we could cut a piece and that was so hard to wait. LOL Thank you thank you thank you for sharing this. I don't know what happened to her recipe but I'm so happy to have it again. Love you. God's love, blessings and protection on you and your family 💜👍😎

That looks so larapin good. I missed making a coconut cake to take to mama’s this Easter. It was one of my granddaddy’s favorite and he wasn’t able to eat it after he got older and had trouble with diverticulosis. One year I made the one with Eagle brand milk and cream of coconut with the cool whip icing. He was one happy man. Wish I could make him one now. Thanks for bringing back happy memories.

I always had a choice for my birthday cake growing up and this was it. I remember licking the beaters and scraping the bowl with my fingers, good memories (I still lick the batter off the beaters and bowl and I'm 57, lol). Have a blessed Easter Lori and Danny

This brought back good memories! When our children were still at home, I always made a coconut cake for Easter. What a beautiful cake. I'm inspired. My granddaughter's birthday is coming up and she wants a coconut mango cake. I'll use this recipe and alternate layers with mango filling and the sour cream filling. I'll put mango slices & a dusting of coconut on top. I'll make whipping cream for the frosting. I'll put edible flowers here and there. I'm so excited to try this. Thank you for sharing.

LOVE this cake! My aunt Margaret would make it for me on my birthday which is Valentines Day, she’d always decorate it by making a heart on top out of the little round red hots candy. Lori reminds me of the perfect mix between my mom and my Grandma’s personality - and even looks!! They were both very beautiful and amazing women who are no longer here with me. So, that’s one of the several reasons watching Lori cook brings me comfort.

This video brought up memories of my mom's Easter Bunny coconut cakes that she decorated for the grandkids. It was a recipe from her coworker who got it from a Better Homes & Gardens magazine in the late 1980s. She baked 2 white cake rounds, leaving one cake round whole for the bunny's face, and placed on a jelly roll pan to serve from. She cut 2 of the outer edges off of the other cake round for ears, cut 2 triangles for a bowtie, and the last cake piece remaining was cut with a biscuit cutter into two rounds for the bunny's puffy cheeks. Whipped icing glues the pieces together, then the entire assembly is all covered in the whipped icing. A generous amount of coconut flakes are tossed over all. Two milk chocolate Hershey kisses are the eyes, 3 inch strips of red licorice are the whiskers set into the puffy cheeks, and colored sprinkles are pressed onto the bowtie--or toss a half cup of coconut in a bowl with a few drops of blue food coloring and a few drops of cold water--to make a solid blue bowtie. Place lots of jelly beans, M&Ms, Skittles, or Reese's Pieces in the spaces on the pan surrounding the Bunny. Thanks, Lori and Danny for sharing your lives with us. Oh my gosh - I hurt myself twice in recent days on this cake! So good! I didn’t have coconut extract so I used two tsp of vanilla extract. This cake would be very good with fresh fruit, or even by itself with no frosting.

I've mentioned that my Mom baked for our school system. This morning my niece told me that people were talking about her desserts on the local Facebook page. Now realize that she would have just celebrated her 100th birthday, so it's been awhile since she worked there. They wanted the recipe for her Blueberry Torte which was to die for. I don't do Facebook, so I gave the recipe to my niece and she posted it. They were happy campers! Mom always made coconut cake with jelly beans on top for Easter.

We missed holidays and family gatherings during this time. Here we are in 2022, and both my husband and I came down with the B5A Covid virus. Bless you and your husband, may you remain healthy and strong. I love coconut cake. I have so enjoyed your videos during this time of isolation. They have brought me back to a simpler time. One we are going back to. Just hung my clothes on the clothesline.

I am the only one in my family that likes coconut at all! And I love it, but I will have to enjoy your video cake or have a lot of my own coconut cake packed away in the freezer. It looks wonderful!

thank-you Miss Lori You made me think of my Aunt every year at our family Reunion she would bring this huge coconut cake always great taste Have a very blessed Easter this will be the first time in my life I have not celebrated with family we will make it threw stay safe and healthy we have a big snow storm coming tomorrow In Wisconsin suppose to get 10 inches of snow

I learned this from another YT channel, but you can use "cake strips" which you put around the cake pans when they bake. They will make the cake tops level, so that it's easier to stack.

One of my all time favorite cakes. I once tried to make one from scratch but it came out very dense but I will try your version. Happy Easter🐰🐇🍰⛪

I love coconut cake! My Mom use to make one that had 7 minute frosting!! So delicious!! She also made one with pineapple in it. The Best!! Love you guys and have a blessed Easter as well! Stay safe🙏🏻🤗❤️🎂🐇

Brings back good memories! My mama made this cake every Christmas. 3 days or so ahead and let it sit in the refrigerator. It was soooo good! Thank you Mrs. Lori.

I grew up tasting cake batter. My kids ate cookie dough and my hubby always wanted to scrape the cookie bowl and I always left extra dough for him. We are just fine! Love your channel. Thanks for your recipes!

My mom had that cook book. I remember the cakes. Banana split cake isn't really cake, but she made it for me at Easter, and sometimes when I came home from Sunday school, it was a special treat.

Lori (I am older than you) you just named my 3 favorite cakes. If I am short of time, I make the from scratch Hummingbird Cake and ice it with a store bought cream cheese icing. It is still delicious. I hope You and Mr. Danny had a Blessed Easter! TFS
