It is sometime not even possible to pronounce words from foreign languages correctly if the phonemes don't exist in your native language. That said there are a lot of people on youtube who decide to present traditional recipes from other countries/cultures and don't give a flip about how they are spelled or pronounced and don't care about the history and meaning. I think that really sets Emmy apart from the rest.

Some history of Lussebullar/lussekatter, there are quite a few different traditional shapes, in the video Emmy made the most common one. The coolest thing is most of those shapes can be traced probably as far back as the *stone age* in Scandinavia. And that they made those shaped breads, that probably had some ceremonial importance, as an offering around the winter solstice, though they didn't have saffron or sugar then. So the concept of making bread buns in those shapes around yule is a super old tradition. The saffron was added later, and the yellow probably is there to symbolise light and the sun, to scare away lucifer and other demons (the "lusse" part of the name comes from Lucifer that morphed over time into the much cuter 'lusse'). So modern lussebullar is a mixture of all sorts of historical yule traditions. From the original stone-age tradition, to the middle ages when Sweden was still catholic and putting exotic expensive spices into everything were all the rage, to when most of the traditions around yule as they are celebrated now began to form around the early 1900s. And they are very delicious and cute. They are one of the most beloved yule treats in Sweden, especially around Lucia. Most exchange students seem to really enjoy lussekatter. So it's not one of those foods you have to grow up eating to be able to enjoy. The raisins are a bit divisive though, they are very traditional, most people in swedne think they are okay, but quite a few take them off. I like to soak my raisins for 10 min in glögg before adding them, they swell up and pick up a lot of flavour. It makes the raisins and lussekatterna taste ever more of yule, (and less like raisins.. )

I usually use more saffron than the recipe says, it's usually not enough cause saffron is so expensive, and add it into the dough mixed into melted butter (once it has cooled down to room temp) into the dough before proofing it, I get a lot of saffron flavor when I make Lussebullar. Worth trying! Super interesting to see this as a Swedish person

I don't necessarily double the saffron, but I always add it to the milk and butter. I let it steep in the milk to really get the most I can out of it :)

Happy Lucia from Sweden! Lucia is celebrated on the 13th of December, a festival of lights, with a Lucia procesion with people in white gowns holding burning candles led by "Lucia" who has a crown of candles, and they sing traditional songs. Very popular to watch, in everything from schools (the younger kids have electic candles. Usually the real ones is used by high schoolers and up) to a big nationwide one that's broadcasted on tv. And then you eat lussekatter, ginger snaps, and drink glögg. A great holiday that really gets you excited for Christmas. :D

What are the crowns usually made of? One of my friends honors her Swedish ancestors and uses a brass crown with brass candle holders. She covers the girl's hair with a thin white veil (so there is less wax in it).

@@catherinejustcatherine1778 children will wear plastic crowns 100% of the time. Adults will usually wear brass crowns decorated with lingonberry. If you Google luciakrona you will find photo exempels :) or luciatåg to see it in action. Putting a cloth veil is also correct, due to that reason and to keep the crown from digging in.

Though it's technically illegal to hold any religious ritual in Swedish schools as we have a similiar statute of separation between state and religion as the US. A certain group of people choose to misunderstand the purpose of that though and goes rabiate on social media about it as if it's a political war on tradition to kowtow to non-christian immigrants when it's actually a law to enforce childrens right to freedom from religion in education until they are mature enough and know enough to make their own choises.

I made saffron buns last weekend, and I took out a couple from the freezer a little while ago so they can thaw up overnight so I can watch Lucia on tv at 7am while having a cup of coffee and saffron buns and home made gingerbread cookies (you really need to try Tant Harriet’s recipe for gingerbread cookies, they’re awesome!) Lucia day in Sweden is so cozy, being Swedish, I’ve grown up with this tradition and I’ve participated in Lucia choir arrangements as well as a kid. I use fresh yeast when making my saffron buns, and I use 100 grams of butter, half a liter (500ml or cc) of milk and 1-1,5 deciliter of sugar, I grind the saffron (2 little pouches) with a tiny pinch of sugar with a mortar and pestle even though the saffron is already a powder, and then I use enough flour so the dough lets go of the sides of the bowl. My buns usually end up really nice, dough is very easy to work with and the buns have just enough saffron taste and the finished buns are nice and moist. I don’t have egg in my buns, and I melt the butter and then add the milk and saffron over the fresh yeast before adding the sugar and flour, so much easier

This was such a pleasant surprise to pop up in my feed as a swede! The saffron flavor should be strong enough to detect so I would recommend using more than the recipes usually do since it is quite expensive, but worth it in the end! Thanks for this video!

Hello, thanks for making this adorable vid. To honor my husband's mostly Swedish heritage, I made lussekatter as a yearly tradition. A few years ago I was diagnosed with Celiac disease and lactose intolerance. I haven't been able to make the tradition lussekatter since even breathing in wheat flour isn't advisable. Watching you make this for your first time was such a treat. Your enthusiasm and enjoyment is wonderful.

Also, you can add honey instead of sugar - depending on the wine. It give the glögg another layer of infused gooey taste.

Thank you for including the raisins in the lussebullar! When i visit my grocery store in Gothenburg Sweden the in store freshly made lussebullar they sell dont have the raisins and that is annoying!

Lussekatter glögg non alcoholic ( personally i never liked the alcohol version) that makes my heart go wild on Lucia times since tomorrow is Lucia tomorrow but due to covid our Swedish organisation here in us can't do it this year. we always have saffron directly in the other ingredients

I’m Danish and love lussekatter too! So thanks to Sweden for those 😃Here in Denmark, we also celebrate St Lucia with parades and candles. One of my favourite traditions. As well as glögg/gløgg 🇩🇰🇳🇴🇸🇪

Oh yay, lussekatter and glögg are the very definition of winter holiday coziness to me! I of course have my own favourite recipe, but honestly it's hard to mess up lussekatter - even when the buns are are a bit wonky or dry or whatever, the mood when you bake them with your family and spend that time together is more than enough to make them taste lovely 💖

I hadn't heard that version of the Lucia legend before. The stories we tell in Finland are a lot more gruesome. In one, she was a persecuted Christian who the Romans tried to force into prostitution, but God made it so they couldn't move her. But then someone just stabbed her with a sword and she died. In another version, she had promised God that she would never marry, and when a man fell in love with her because of her beautiful eyes, she cut them out. Falalalala lalalala

Our family ate saffron bread at Christmas in honor of our Cornish English ancestors. I carried on the tradition to my family although the recipe I use is a Swedish Saffron bread recipe. I like the recipe I use because it is a refrigerator rise dough, so we have freshly baked rolls in a muffin tin for Christmas dinner with out a lot of work. We joked Saffron represented gold on Christmas because it’s so pricey and due to it’s color. It’s great to see other learning about saffron bread, it’s yummy but not well known.

My grandparents were Norwegian, and every year we made special cookies and bread. My favorite cookie was Krúmkaker, a wafer thin, buttery rich cookie made with a special iron that has a design etched on both sides, then when the cookie is just golden along the edges, it's placed on paper and rolled with a wooden dowel or aluminum cone and slid off to cool. These cooked can be filled or eaten plain.. we ate then pain! And the lucky kid who helped in rolling those hot cookies got to eat the scraps from the iron🤗🥰. The cookies had just a hint of fresh cardamom and vanilla..mmm!!!

With glögg a little goes a long way, as its quite strongly flavoured. Traditionally you drink it out of "glöggmuggar" (translates to glögg mugs) which are super tiny mugs, just a little bit bigger than a shot glass, with a tiny ear on the side that fits one finger. Often they are made out very thin glass and beautifully decorated. But those super small porcelain mugs are quite common as well.

My family have made Glug for years. It had many of the same spice you used in yours. We made it every winter holiday. We used a gallon of Mogan David wine. Simmered about an hour. When this mixture had simmered we add a fifth of vodka. It’s served warm. It reminds me of family and love. Best wishes to you.

This video was so sweet! I remember back in school, it was always so exiting to pick who was going to be St. Lucia that year. There was always one class who walked into other classrooms with the saffron buns while singing christmas carols ☺️☺️

I've had the spiced wine before and I'm not the biggest wine fan even though my mother is a manager at a beautiful winery, that spiced wine is absolutely delicious. I had mine with a heafty slice of orange in mine and the colors are just gorgious and when you make it, it just fills the whole house with this lovely warm spiced scent. It is just so delightful.

As some Swedes have already pointed out, this is the first time I've seen lussebullar done this way. The buns look amazing so I might give this recipe a try this year. Also, I highly recommend making saffron bun rolls! They're like cinnamon rolls but with a saffron dough (of course) and a filling made out of almond paste and butter.

I did a year of study abroad in Norway and the two foods/drinks that I miss the most are the saffron buns and glögg! I am so happy to see that you made this and I am absolutely making the recipes for my family the next time that I see them!!

My mom loves using that same dough to make a saffron bun cake. You just roll it out, mix some melted butter and sugar and spread that on top, and then we add either raisins or white chocolate. Roll it up, cut it up in 2-3 inches thick pieces and place them into a cake pan - make sure to pack them tight! It’s absolutely delicious 🥰 And also, for those who want a more fresh and not as heavy Glögg, I love a white wine base for it instead.

I was so happy to see you try this. Allthough i had never seen this way to make lussekatter. But since it looks like the saffron was dissolved evenly it doesn't matter that it was another way of making them.

Wow that is a huge glass of glögg XD I love saffon buns, but you usually need to ramp up the saffron, especially if you use powdered rather than threads, and it can be marianted for a few days in some alcolhol (I use rum) for more taste. I also like to put almond paste in some of mine, kind of like a cinnamon roll but with saffron dough and almond filling :)

Loved the video!! As a swede, heres a tip for you: sometimes the buns get dry pretty fast, but you can put them in the microwave next to a glass of water for a minute or so, and they go back to normal!:)

Just be aware that they go stale quickly! Freeze any buns you dont plan to eat soon. A good way to use stale buns is to half them and make french toast turned in mixed caster sugar and cinnamon. Not traditional but super good. French toast in cinnamon sugar is a swedish classic thoug.

Back when we used the Julian calendar, Dec 13, saint Lucia's name-day, used to be the winter solstice: the shortest, darkest day of the year. And in Sweden, as North as it is, the days were short and dark indeed. This is why this day has a celebration of light. In the current (Gregorian) calendar, the solstice is around Dec 20, but the tradition remains.

Looks great! My fathers family came from Finland, so Saffron Buns were quite common growing up. Since we had a large percentage of people from the Nordic countries where I am from you could find Saffron Rolls and Bread in some of the local markets as well. But no one made it as good as one of my FInnish Aunts.

There is a hearth raised saffron walnut bread in the Odiyan Country Tibetan cookbook that this brings up happy memories of, this and my swedish grandma. It's a good thing having a larder that has all these ingredients already.

This was interesting to watch as a Finn because we too make saffron buns and glögg for Christmas but the bun recipe is like the opposite of this recipe, we mix everything into warm milk. Also if you want to make alcohol-free glögg, mix those spices into water and simmer it for some time until the water has all those lovely flavours, then mix it with your favourite wintery juice like black currant, apple... and heat it up until it is hot but not boiling. Anyway, wonderful video, happy St. Lucia's day!

If the dough is a bit sticky you can wet your hands under a tap and that will stop the dough from sticking to your hands and you don't have to use flour.

Lussekatter is my favourite, but I like mine with double the amount of saffron and lots of cardamom that goes into the dough at the beginning. Yours look perfect. 👍

Have you read moomin valley books/ watched the TV shows? They're... Finnish i think. Or maybe from Sweden, but they are adorable and sweet and made for children but are so lovely and kind and smart that even grown ups love them. Highly recommend and there's lots of foods in them too!

As a Swedish person I’ve never seen lussebullar been made this way 😅 most of us just add the (doubled) saffron to the dough mix, together with milk! Alcohol free glögg is also really great tasting! But I guess I just learned more about my own culture 🥰

I also made Lussekatter yesterday! We didn't have safran so I substituted it with turmeric. That also works well for making the buns yellow :)
