Today I am a cold macaroni ham salad. This is great as a meal or side dish. The fresh ingredients in this recipe are versatile and the seasonings are to preference.

INGREDIENTS
1 lb (454 g) elbow macaroni
8 oz (227 g) cooked smoked ham
1/2 cup pickled carrots
1/2 red bell pepper
4 scallions
8 oz (227 g) Colby Jack cheese
1 to 2 celery sticks
7.5 oz (212 g) mayonnaise
salt to taste
1/4 tsp black pepper
1/4 tsp paprika
2 Tbsp (30 ml) pickling juice from carrots

The version I ate growing up sometimes had cubed Spam, or tiny cooked shrimp. All very good. Great video.

That looks delicious,my dad makes his own macaroni salad with elbow macaroni,diced ham and canned corn and shredded cheese.he mixed it with mayonnaise and added salt and pepper so delicious 😍😋

I love making stuff like this for the warmer months when I don't feel like cooking or grilling, looking forward to trying this one! I'll often use up some tuna or leftover roasted chicken in mine, a bit of chopped spinach or cooked kale, and toss some fresh broccoli in with the pasta water for a few minutes, just long enough to cook until they're crisp-tender. Can't do the peppers in this house but those pickled carrots look good. Gracias Mamá!

Great salad. My family loves it. But at the time i made it, i was almost out of mayonnaise so i could only use half a cup. Then my grocery store doesn’t sell creama. So i used about a 1/4 cup of honey-mustard dressing. It turned out good.

Looks Delicious I'll try this recipe. I grew up on Hellmans mayonnaise but a friend introduced me to Dukes mayonnaise. Love Dukes mayonnaise. I did some research and Dukes is the only mayonnaise that does not contain sugar.

I love and only had the same salad as Tuna Macaroni salad. I need to try the ham. I always thought ham salad was like ground ham and pickle spread, like those small cans of Deviled Ham.

That looks really good. I would probably just eat it with a spoon or fork. Purchasing diced ham would also be an easy way to go.

Ensalada de coditos is so versatile. Some people add mostaza, others boil the carrots, so put cheddar Jack others put manchego. I’m gonna have to try out yours…I’ll let you know how it goes!
