Thank you. Why is the raw chicken meat cooked in the congee and not in a seperate pot of water (just concerned on bacteria) and why use oyster sauce and not soy sauce for the marinade please?

My dad was Cuban,caucasian but your dad reminds me of my dad.All good daddy's are alike.I miss my dad.He was wonderful.I miss my late parents everyday.🤔

Wow, Randy! These dishes were and are comfort food in our home in Philadelphia. We make Chicken jook all the time. Sometimes we make ground pork and 1000 year old duck egg (皮蛋) jook or fish piece jook. We also make bok choy soup and Hong Kong wanton noodle soup frequently. You bring many memories of my parents making these dishes when I was young.

My mom would make turkey juk after Thanksgiving by boiling the carcass for the stock and adding pi tan too. My grandmother came from a family of 10. Great grandparents spoke Hakka and emigrated to Honolulu in 1903. My grandmother was born on Honolulu and mom in Hilo. The entire family were great cooks. I wish I spent more time with mom before she passed to learn more. The good news is that there are plenty of cousins who paid more attention to their mothers.

for those wanting to try congee, use 2/3 jasmine rice and 1/3 of some short chubby rice grain. It will make the texture better overall

Hello from Hong Kong! On first day of Chinese New Year, my family has abalone and chicken congee with turnip cakes, taro cakes and nin go for lunch. It’s our family tradition. After I grow up, I heard other says congee is for poor people and not supposed to have in CNY. I don’t know. I just love that tradition, congee is definitely my no.1 comfort food. And thanks for sharing the recipe. I love watching uncle Lau. He just sounds like one of my grandpas. ❤️

I learn from a friend that after rinsing the rice, add a little oil to the rice b4 putting them in the hot boiling water so the rice will break down faster & the congee will come out a lot more smoother in a shorter period of time. 把米洗乾淨後,在放進熱水前,加上油在生米上,那會加速米的溶解,煮出来的粥會更加绵的.

I’m cooking jook tomorrow and wonton noodle soup later in the week. They are my niece’s favourite comfort foods and she is moving back to. Brisbane from Sydney in 10 days time for 12 months to finish her masters degree. Queensland finally opened the borders last month to allow people to return home or to go there for holidays / visit family. Unlike the USA, we couldn’t travel between states due to the pandemic for months on end.

As someone who was born in Canada, I had no idea that Mandarin was Chinese until I was into double digits. My congee method as an adult 1:12 rice to water into a slow cooker the night before. Set it and forget it.

It is great to hear the reasons why and when to do things. Great teaching from years of trail and error to learn. Like add oil near end to coat and prevent the moisture to be released during cooking. It is like math and the reasons behind the math.

You know I’m from Shunde順德, you dad would know, I remembered when I was a kids we had those riverfoods congee, it tasted very different from the North American version, I think is because everything is frozen here.

I was taught to add a little oil in the rice after rinsing them off before putting them in the boiling water so the rice will break down faster. 在把生米放入熱水前,加點油在生米上好讓米快些 break down, 令粥快一點變绵些 !!

I usually use leftover rice for juk and whatever soup I have leftover in the fridge takes about 10 minutes.

The young pak choy i.need to do in the right way. The vegetables come out good . So the pak choy come out ever green not remain yellow. It is delicious to boil chicken pak choy soup.👍

yeah ours were pei don sow yuk juk and chicken shitake chow mein we ate that every weeks in the 70's growing up

Happy New Year! I love Congee with pork and century egg (pitan). Why are the noodles so orange? Which fish sauc e do you use? Thai or Korean?

I think it was the 3 Crabs fish sauce and it is Vietnamese. Koreans in the USA use that same one in kimchi making because hard to get Korean fish sauce here for a good price
