Feeding A Million | Dan Giusti, Founder of Brigaid

Former Head Chef of noma, Dan Giusti founded Brigaid in 2016 to improve the quality of school food. He’s gathered professional chefs and school staff together to challenge the system, promote food education and serve kids delicious meals made from scratch at a dozen public schools in New York City and New London, Connecticut.
The realities laid bare by Giusti are a wake up call, not just about school food but about the health and wellbeing of future generations. In conversation with Chris Ying at MAD6, he presents the cause and his appetite for change, prompting the industry to think about not the big picture, but the real one.

It's amazing the difference in vibe this talk has compared to the other videos and showcases Dan's been a part of. It's not particularly fun or 'hopecore', but rather a brutally honest retelling showing just how much this man cares about the mission. I hope this gets more views!

Success is not about how much money you make, it’s about what brings you fulfillment, and I can’t think of anything more fulfilling than helping children and changing how our country specifically our youth views food. In my opinion he’s more successful now than he was when he was cooking $1000 meals. Way to go man!

I cook, I teach, I eat in restaurants around the world but when I volunteered to cook for the homeless I had to rethink as Dan's journey has led him to do, change my ideas about what 'feeding' people means.

Awesome work you are doing, please, keep it up. American kids need you, even though many of them don't know it yet. They will thank you later! Many American kids have probably never had from scratch-made food, so it is like a foreign object to them. I was born and raised in Germany and attended school in the 70's and 80's, during which time, moms stayed at home and cooked real food. We all need to eat real food, especially children, who are still developing. It is a sad commentary on this country to allow toxic junk food to be served to kids day after day. You are so right when you say that Americans overall do not care about the quality of their food. That is also why it is difficult to find good and affordable restaurants. Many US restaurants would never make it in Europe bc the food either tastes artificial or is not properly cooked. Anyway, I am cheering for you!!!

The most shocking thing he said was something like "Everybody who comes up and says how they appreciate us Wouldn't want to do what we are doing." Meaning that everybody who cherishes Noma from the chef's perspective would never see him/herself opening a kitchen for the kids, the poor, the homeless. Although IMHO it is the shortest way to completion as a chef. A real chef, not a name on a YT channel or TV show...or restaurant.

I love how Dan takes the ego out of cooking and reminds us of what it really is, a way to share the love of food with as many people as possible.

They don’t give a sh*t about food and the farmers working so hard to grow it. People take the food in grocery stores and restaurants for granted. Feeding children properly is so important for physical, cognitive and mental health and learning.
