Thom your description is right on the money , but let's not forget that some magnetic stainless steel is worth a bit more than regular stainless steel. 17-4 is a good example of magnetic stainless and yet worth more than regular steel , etc. keep up the good work. God bless y'all.

My buddy built a food truck and the County inspector failed it because he put a magnet on the stainless steel and it stuck. My buddy was all bummed so I had to give him a lesson (and ultimately the Inspector) on the different stainless steels.

In the food industry, the steel must withstand aggressive cleaning agents with oxidizers and acids. This is not possible with cheap steel or inferior stainless steel.

Bend, hammer, or coldwork 18-8 (304) in any way, and it goes from nearly nonmagnetic to magnetic. This occurs only in the areas it's worked, for example a 304 stainless object that was formed or bent, will be magnetic where it was bent.

The recycling center told me if the magnet sticks then it is in their words chrome plated steel. If I find any non magnetic my current scrap yard just lets me throw it together with aluminum. All mixed white metals same price.

Well non-magnetic SS is definitely not chrome plated, but I guess they don't do large volumes of steel and accept the downgrade in price
