So far we have seen lot many cake recipes. But the base in all those recipes was maida or all purpose flour. Today we will be making cake using wheat flour to make it a little healthier. We will make this cake without egg, without sugar, without biscuit in cooker. So you can say this is a perfect lock down recipe. You can try this yummy recipe at home and drop a comment for me. Ingredients:
• 1/2 cup Gudh / Jaggery
• 1/2 cup + 4 tsp Milk
• 1/4 cup Oil
• Nutmeg powder
• 1 cup Wheat flour
• 1 tsp Baking soda
• A pinch of Salt
• 1/4 cup Walnuts (Optional)
• Cashew nuts (Optional)
• White sesame seeds
Method:
• Remove the whistle and rubber ring of the cooker.
• Close the lid and preheat the cooker in medium heat for about 10 minutes.
• Take gudh, milk, oil in a blender jar and blend it into paste. No chunks of jaggery should be left.
• You can use sugar in place of jaggery.
• Do not use oil having strong flavour like ground nut oil or olive oil.
• Transfer the mixture into a bowl.
• Add just 2 tsp milk in blender jar, blend once and add. So that the blender jar will be clean.
• Add nutmeg powder.
• You can add cardamom powder or totally skip it.
• Put a sieve on the bowl and add wheat flour, baking soda, salt and mix well.
• You can use maida in place of wheat flour.
• Sieve the mixture into the bowl and fold it well. Mix it using fold and cut method.
• Add walnuts and mix well.
• You can skip walnuts or add almonds or cashew nuts or tutti frutti too.
• Grease a cake tin or any dabaa well with lot of oil.
• No need to use butter paper if you don’t have.
• Pour the batter into the tin and spread evenly.
• Tap the tin really good so that air bubbles if any will be released and cake will rise evenly.
• Garnish with cashew nuts. This is optional.
• You can skip it or decorate with roasted peanuts too.
• Sprinkle few white sesame seeds.
• Take the preheated cooker and place an empty pot at the base and a dish on it.
• Place the cake tin on the dish and close the lid.
• Bake the cake on medium heat for about 25-30 minutes.
• After baking for 25 minutes, turn off the gas.
• Let the cake be in the cooker for another 10 minutes.
• Check with a tooth pick. If it comes out clean it means cake is baked well.
• Let the cake cool down completely.
• Loosen the edges with a knife and flip the cake over into a dish.
• Wheat flour cake is all ready.
