You can make a very fast water elevator using soul sand. Using signs makes it slower, so you should use soul sand for the escape.

i'm pretty sure they don't. i believe they just use the developer texture pack which is built into minecraft java. i'm pretty sure it's built into minecraft bedrock/microsoft edition aswell.
