Rice Water EMA Recipe (adapted from Fraser Valley Rose Farm)
1:2 Rice: Water
"Massage" rice in water until water is in opaque white. This step is to collect the rice starch.
Pour rice water into a container and let ferment for a few days, until you smell a cheese/sour smell and has a film formed on top.
1:10 Fermented Rice Water:Milk
Mix fermented rice water into milk and let ferment for a few days, until you see separation of curd and whey (yellowish water).
The whey, full of Lactobacillus, is now ready to use as a substitute of EM-1 to make EMA.

It's been a while since my last update.
Last time, I've made a bokashi EMA without bran, it was a huge success, and I've been using the recipe for a few months.
When I finally use up the last drop of my EM-1 and molasses, I suddenly thought of "why not try to make EM from scratch?" . Hence this video is made to record my experiment.
The experiment has been working well thanks to the recipe from
Fraser Valley Rose Farm.
At first, I've failed on fermenting rice water because I leave it a little too long, it went bad. Next, I have adapt the recipe's waiting time to my country's temperature and weather, so the waiting time is shorten.
To the key is to observe by smell and the appearance of the rice water and milk. Once it has start to have a cheesy/sour smell, it is fermented :)
I was having a lot of fun during this experiment.
On the next video, I will share an update on how the bokashi bin goes with this rice/milk em along with tips of troubleshooting bokashi.
Bokashi is a composting method that had been long practiced in Japan's agriculture to improve their soil.
By practicing bokashi, I've greatly reduce my daily kitchen waste going to the landfill, and creates nutritious bokashi tea and soil for my house plants.

Hiya Sydney. Your video says any milk can be used... This isn't quite true. What you're doing is growing Lactic Acid Bacteria AKA Lactobacillus. They eat the lactose in milk so lactose free milk won't work. Great video though, I really like your channel :)

@karimlb6601 thats right, its not em-1.... em1 consists of 3 main types of microbes: lacto bacillus (many strains), Yeast and pnsb (purple non sulfur bacteria). What she is making is lactobacillus only and not with a lot of strains *variety is key. So only 1/3 with lacking strains. An easier method at home is to make water kefir. As it contains a lot of lactobacillus strains...as well as lots of yeast strains...but its still missing the pnsb. It would still be quite useful. But you could source the pnsb... But honestly i just find it easier to buy em1 in bulk. After activation 20x it is quite affordable really.

Using this as just liquid and not inoculated bran is the way to go, been doing it successfully for years myself. Bran is so expensive , it's crazy!

It really is appealing to use just the liquid! Do you know how long it stores? Do the bran normally used cause a shorter shelf life to the final product? Because that would be a game changer for me.

Do you know if you can freeze the fermented milk liquid? So when you defrost and add the molasses you can wait just for the last fermentation?

Thank you so much for sharing! I work at a restaurant with loads of food waste and want to start bringing it home so I can make more compost. Rats are a concern so I'm hoping to do bokashi, but the bran price was putting me off. This is so helpful!

This is a very small but absolutely VITAL skill to know if you want to grow food especially indoors or underground utilizing artificial lightning and Aeroponic or living soil to make your own fermented fertilizer or hydroponic solutions. Very nice video 👏 . I would also inoculate the rice husks, by spraying them until they are just damp, giving them a good mix and letting them dry before storing. That way the rice husks will also help with the breakdown of the material in the bin.

you need to heat the water to 120 before adding to the EM then let it sit for 5-7 days till it has a ph2.8-3.4

I've tried to make this once and it failed. After mixing with molasses and letting it set it didn't ferment. But I'm thinking it's because it was in a screw top container with the lid closed. Does it need oxygen to ferment? I just made another in a latch top jar without the seal like yours

not good with honey cause real honey is a bit antibacterial. Brown sugar has not much minerals or vitamins. But i guess it will work also cause the sugar is the main food for EM at that time i guess. And like in the video said, if it smells like strong soy sauce you are on the right track. If it has a bit red color even better you can be sure there a photosynthesis bacteria in the solution.

No...sourdough starter is a yeast culture. This is a lacto bacilli culture. It's a different microbe. Hole that helps!

Hello Andre, thanks for the comment. Good question! I've gathered that any sugar will work well with it. However, you might need to experiment to find out the best amount to substitute molasses. Hope this helps! x from Malaysia

Yeah mate but it's best to use brown sugar. The thing that makes it brown is molasses. Store it by putting in a jar with brown sugar until the sugar stops dissolving. If you see the sugar has gone, you just add more. It'll last in the fridge like this for about 2 years.

@@Sydneytay Thankyou for the great tips on this great composting method. I notice you added the molasses and water and then let it activate or ferment. Then your stored it ready for use. Does it keep fermenting. One helpful comnent below mentioned that you can refrigerated. Do you use your mixture quickly before it eats the suger and can you keep expanding the Lacto Bacillus by adding small parts to a new sugar solution or just keep feeding it everyday. Sorry for all the question but this is brilliant for small compact composting and gardening. Cheers

@@anthonywilson7304 Hello there! Thanks for the great question. For me, I didn’t refrigerate my EMA, I just use it everyday. Normally, that 2L jar of EMA can last me until 4 weeks. However I do notice the EMA went inactive on 3rd week. So what I do is I mix a new batch of EMA and pour it into the jar again so I don’t waste the rest of the inactive one. I think you’ve gave me an idea why the EMA went inactive! Probably can experiment on that!

@@Sydneytay Thanks for that and I'm very happy to have given you an idea. I know that when I brew my ginger beer from wild yeasts, I need to consider that the little things don't eat all the sugar during fermentation. I have to start to taste it before it gets sour. You still need a sweet flavour to taste good and at the same time have enough microbes in there to produce the nice pro biotics for our tummies. It has a little alcohol too which makes it a beautiful refreshing healthy Christmas drink. All the best and for the festive season.

Not an expert but id imagine not since you would have already rinsed the rice and the cooking of the rice has essentially killed any bacteria that you want to cultivate. Just rinse your rice and use the water used to wash your rice to start the culture and cook your rice as you normally would

No expiry date for the EMA :) I've left a batch of EMA for a few months in a cool dry place and still work fine. You can add molasses to find out if there's any microbes left in your aged EMA. If it still produce a filmsy product, the microbes is still there

Hello, the rice water/milk shouldn't have "colourful" molds (red/black/green/blue), white is ok :) It should smell like fermented food like cheese, but not spoiled food

How can one avoid the maggot growth? I'm interested in worm-free composting like bokashi because I have a phobia, but I still want healthy soil.

I'm afraid complete worm-free would be impossible because earthworm is quite the essential in decomposing stage 👀 However there're a few ways to prevent maggots Keep your bin dry and airtight! Maggots are usually from open lid that attract flies to lay eggs. You can try controlling the moisture and temperature of the bin by: 1. Storing in a cool dry place, to avoid excess humid forming in the bin. 2. Make sure it is always airtight, and avoid flies while adding your food waste into the bin. 3. Add paper & carton shreds/brown leaves/dried plant cuttings (carbons) in to your bin to balance out the wet food waste, this way you can keep it drier, which is not suitable for the maggots to grow 4. Cover your decomposing bin with waterproof mat, to prevent it from rain. I hope this helps you in building confidence to try out this bokashi method :)

The tea actually worked for me after a few months of storing. I guess the nutrient is okay to be stored, like enzyme :)

Compost takes a lot longer to make. Which means for the same length of time you also need more space to do it because you wont process the food scraps fast enough. Its a double whammy, most renters cant have 3 full size compost bins running to rotate through or we get complaints from the landlord. And Im just talking about myself as a 2 person household because we eat so many bananas and potatoes 😂 I cant get process my scraps fast enough, I used to have 3 compost bins before I got told off so now I have a worm farm, and then the rest of my scraps goes in the bin 😢 I want to do bokashi to increase how much scraps I can process in that worm farm

Sure, it will not be a problem! Just make sure to allow some air circulation to prevent high gas pressure develop in the bottle, it could cause bursting if left untended and tightly screwed

@@Sydneytay Hi Sydney, so i made the EM. It came out fine. But now I see a layer white film on them. Is it fine? They smell like banana. Temperature here is too hot, I mean its 43 degree centigrade here and I kept them under my kitchen cabnet. So are they still good? Or do I need to do some thing about it? Or any thing i should be careful of?

So i am looking for other ways and found your video!! Just one small question: If not using to make cheese, which ways you used that curd, left from fermented milk? Can we put in Bokashi bin? Also, have you experiment to replace Molasses by brown sugar? Coz Molasses also very expensive at my place too T_T. I have googled and it said 1 cup molasses -> 3/4 cup packed brown sugar. Do you think it's good ratio? Thank you^^

Hi! It's just a way I do it because I feel like it will dissolve much faster if i stir it before mixing with more water. I use a clean container because I want to make sure no bad bacteria is affecting the result

Its weird to make bacteria, so your bokashi grows mold. A handful of soil, old or new, has the benificial fungus.
