I put 28 sticks of salted butter in my crockpot, put it on high, fell asleep and woke up to all the brown solids on the bottom. I left the top off. At first, I thought I ruined it by letting it get brown. There was no foam on top. It smelled awesome though. I strained it through a 10 micron cooking oil filter thatvi usually use in water purification. The ghee was a gorgeous gold color. If I can successfully make an awesome ghee in spite of doing everything that Alaska prepper told us not to, anyone can. I can't wait to make butter cookies with this! Score!!!!

I know that the clarifying process removes the proteins and substances that spoil the fastest... however, all fats and oils do go rancid eventually. I am not trying to come across as a know it all... just please be careful.

@@CrackerFlower I agree. For long term storage the ghee should be pressure canned. I can butter, but I'm not trying to make ghee necessarily. I put my mason jars with the butter in a 225° oven to melt, remover the top white, and top off from another jar of melted butter, then I pressure can pints for 75 minutes. I made a video on it. Pressure canning butter kills the botulism. To prep my jars I do that over night. Wash and rinse by hand, then dishwasher, then dry in oven 225° for 25 minutes face up on a cookie sheet, and then crack oven door to cool.

It’s so much better and easier when it’s made in the oven! 225 degrees in a glass pan for an hour to one and a half hours. Skim off any floating things on top and then use a large spoon and lift off the liquid ghee. The solids are on the bottom. You never need to stir. So much easier.

I think you should have let all of the water evaporate. You can hear when the bubbles are not bursting. At that point lower the heat and watch carefully as the solids brown slowly. Once they are brown, drain the ghee immediately. I use a fine metal sieve, then pour hot water backward over the sieve to melt out the butter before washing it. I save the solids and eat them with cooked greens.

The terms Clarified butter & ghee are technically two different things, but they are typically, but incorrectly, used as synonyms. What is shown in this video (and most other videos as well) is actually clarified butter, not ghee. Even the "ghee" sold in stores is actually clarified butter.

Theres also something called copy canning. Basically the idea is that all the things you buy that come in cans, when you buy them, buy two cans or buy double whatever you usually buy. So if you buy canned spaghetti sauce every month and you buy 4 cans in a month, buy 8. Then you will start having a deeper pantry, you simply rotate so that you are using the older stuff first, and keep doing that. Now, when you have limited budget, you will have to modify that a little. Maybe not buy duplicates of all the stuff you buy at once. A little slower and over time.

Prepping can a daunting task and seem almost impossible, but there are things like this people can start doing and as you said, you can build your confidence that you are learning to do things you did not know how to do before. And this is good because dairy is hard to store, but now we have a form of butter in our pantry. My mother told me that whenever my great grandmother would heat up some milk, she would skim the thickened milk off the top and put that into a jar which she would stir every now and then and make butter.

You will do just fine, it really is as easy as it looks; and if your ghee doesn't come out as clear as mine did don't worry as it only means that you cooked it a bit too much. The darker the end product is, the more of a nutty flavor that it will have. Please let us know how yours comes out during one of our Live Streams.

Your video link came up in my stream while watching another, kinda boring, ghee video. Something told me to click off that one and watch yours. I’m glad I did, I truly enjoyed your presentation. Straight to the point and I didn’t have to listen to a whole bunch of unrelated dialog about the homestead. You gave me all the info I needed to successfully make ghee I have to rank your video at the top of my favorites in culinary. I’m also subbing your channel to see what other hidden fruits of knowledge you have.😊

You must have seen the steam coming out of my ears when I was watching your other ghee vid where you made a larger batch. I was thinking no way I can make that much then I saw this vid and I said "I'm going to make some ghee"....Thank you AP for teaching us newbies. Now, if you could only teach me how to swim via the internet 🏊‍♀️

Unsalted butter is the traditional for use as ghee. I usually scoop the foam off and throw on cereal. Then I use a strainer with paper towels to strain the remaining solids. Kudos for knowing the browning for nut buttery flavor. I have had ghee go bad after 6 months of non refrigeration. Do you make your own paneer (farmers cheese) ?

No, the only cheese I've ever made is cream cheese but I do want to try to make some mozzarella..

@@AlaskaPrepper Fresh cheese is amazing to make. You finally find out what curds and whey are. I can tell you how to make romano cheese doing this process but I have not made mozzarella yet. Let me instruct you how, these fresh cheeses are the place to start. Buy some Indian cheese cloth, looks like t-shirt fabric with no fuzz. Let me know when you have that item.

Great video AP ! A work of art. My Grandmother use to call it brown down butter, and took it until it turned darker, but you have to continually stir it at medium heat, and stir and cook until it foams up, then down twice. By the second time it should be that nice buttered popcorn aroma and tastes Amazing on veggies and steak. Ghee is very expensive in stores, so this is great !

I put the butter in the oven at 220F and let if be for about 2 1/2 hours and then I simply strain with either cheese cloth or coffee filters.

The perfect way to get repeatable results is use a thermometer. While the water is boiling off the temp. will hover around 212 degrees. Once it starts climbing above that temp., it's done. Pour through a cheese cloth and its perfectly clear. Thanks for the video. I'm doing 12 pounds this weekend and pressure canning in 1/2 pint jars.

Caribe Castaway and that cheesecloth will be perfect to use to wrap cheese in....without washing in between as it will give a nutty flavor to the cheese made in it.
