I made mead one year when I lived in Nome Alaska and didn’t have acess to the fancy Sri lock tops so I used a balloon The balloon filled with gasses and expanded and I purged it every few days then when it stopped fading it was ready super easy and tasted amazing in the end

I always use 3lb of honey to a gallon of water. Then add fruit if feeling it. It is better the longer it ages.

Love making mead. I just started a batch of cider mead (cyser). I'm not a fan of sweet meads so I make mine fairly dry. I usually do 1 gallon batches but trying a 5 gallon batch for the first time cuz we got a lot of cider this year.

For those that don’t know ,if you haven’t got an airlock for your bottles you can use birthday balloons over your bottles and just poke a couple of pin holes in them , when the carbon dioxide builds up it can escape and no harmful bacteria or bugs can get in , they are very effective if you don’t have air locks and bungs .

The tea is probably added to provide some tannins. Tannins help provide texture, balance, and structure to wine.

Also tea and coffee beverages are acidic so with the tea your adding some acids to your wine as well , other types of acid can be used as well , ie citric acids .

1. It's possible you might get stalled fermentation because of inadequate initial oxygenation - the yeast need it to grow a large colony before the process becomes anaerobic. 2. Wine yeast is generally a better choice - champagne yeast is formulated more for CO2 than alcohol production. 3. Also if you want to be ready by Christmas you'll have to either pasteurise or use additives to completely halt fermentation prior to bottling. Otherwise you'll potentially be giving people festive bombs...

As long as it’s honey and doesn’t have plant parts or wax in it, you’re golden because you’re getting your honey straight from the beekeeper. Depending on the honey, the end result will be a little bit different because each variety of honey has a different flavour, which carries through into the mead. I’ve been making mead for over 30 years. If you want to try making mead, do so. It takes time but definitely is worth it IMHO. And if you want to keep things as simple as possible but still have the best possible result, I’d advise giving your yeast a little more to feast in except just honey… because to yeast, honey is a junk food diet. That might cause the yeast to produce off-flavours and those can take along time to age out. Either get some yeast nutrient, or make your own. How do you make a simple yeast nutrient? Easy: take a teaspoon of baker’s yeast (brand doesn’t matter), add it to 1/4 or 1/2 cup of water. Bring to a boil and allow to cool. The boiling killed that baker’s yeast. Live yeast tends to consume dead yeast and gets nutrients from it that aren’t contained in the honey. Add this boiled yeast water to your carboy with all your other ingredients: water, honey, live yeast… (and if your recipe states it, fruit, spices, tea… etc). Pop on an airlock, and let fermentation do its thing. A little note on recipes with fruit: those involve a few more steps. A good beginner’s hack is to use fruit juice instead of whole fruit if you want a fruity mead ass your first try. As juice contains sugar, you will need less honey. Go for a recipe that’s tried and tested for your first mead, preferably one with precise measurements. Too much honey is not good for fermentation. Give your mead time to age. Like wine, aged mead tastes a lot better than young mead. Please, please PKEASE don’t try to filter your mead through coffee filters or cloth. It won’t work and you’ll only risk oxidising your mead which will ruin its flavour. Get some tubing and siphon it over into another carboy, bottles, mason jars… And if you like the process, get a hydrometer, binge on videos about how to make mead. There are some really good channels out there. With time, expand your equipment (hydrometer, auto-siphon, sanitiser, airlocks carboys, an assortment of different kinds of yeast, yeast nutrient are the basic things I recommend to anyone bitten by the “mead bug”). Happy brewing!

Seeing paper teabags with TABS in it make me so, so uneasy. Bleh. Why do this when you can just brew it and add it to the honey water? There's no way you can guarantee not adding some wild yeast or other microbes with the tea bag, it's just an absolutely unnecessary risk, avoidable by one simple step.
