Apricot sponge cake with almonds: in this video I show you my wonderfully juicy apricot cake with a crispy almond topping. A combination that will make every cake fan's heart beat faster.
Aromatic, fresh apricots are dipped in a delicate yogurt dough and rounded off with a crispy topping made of flaked almonds and sugar. A real treat with fruity and nutty flavors paired with delicate juiciness.
You now have a cake that pampers the senses! The fruity freshness of the apricots paired with the tender dough and the aromatic almond crust is a real poem. Whether with coffee, as a dessert or just in between meals - this cake is pure enjoyment!
Ingredients for apricot cooking
450 g yogurt
150 ml oil
175 g sugar
1 packet of vanilla sugar
10 g baking powder
400 g flour
1 pinch of salt
350-400 g fresh apricots (alternatively 1 can)
75 g flaked almonds
50 g sugar
approx. 50 g milk
The preparation is delightfully simple:
1. Mix the dough from yogurt, oil, sugar, vanilla sugar, baking powder, flour and salt, pour into the mold and smooth it out.
2. Spread the apricot halves in it.
3. Bake in a preheated oven at 180°C for about 30-40 minutes.
4. Sprinkle with a mixture of flaked almonds and sugar and drizzle with milk.
5. Bake for another 10-15 minutes until the almond topping is golden brown.
Uncomplicated to prepare and still a real treat. Whether with fresh or pickled apricots, the cake will delight everyone.
