Well that was an excellent tutorial. I like that you mentioned things like "you can't take all the water out". My first try at this I lost a bit of my "grits" trying to get ALL the water out and without a sieve... well you get my point! Anyhow, thank you for making the process look much more simple than some other people have 😁.

I thought they were both great. But yeah, natural beauty is the only beauty. If we only fed our children with what we cooked at home and not what we could get out of a box or from a restaurant. Michael , did you do a typo , i thought acorns came from the oak tree , you should have alot of in the S.C mountains , if they haven't been destroyed by fire . Here in eastern ky they are very plentiful , ive never had acorn but i think im going to give it a go

I can see this as a viable option for making money. Considerable amounts of money since Acorn flour is already a bit of a novelty and its Gluten Free so the higher price per bag needed due to how labor intensive processing is, is able to be forgiven by most consumers. Very good video.

Stratton by finding all the oak trees in your area and get a good sample of them all. If possible identify the trees. Process them all and record which ones process faster and which ones taste better. Some acorns require little leeching while others just take forever. Some are much larger and some crack easier. I like it the idea of putting the nut meats in water. In out area we have a couple types that have a nice nutty flavor. I cook with no gluten. Usually results in hard but tasty flat bread that lasts. You can also blend in dried fruit and other nuts and grain to taste and for excellent trail food while out foraging for those great acorns.

I wonder if it would be good to save the water that was strained and discarded to water plants? I've been getting into the habit lately of saving water not only from the shower while it is warming, but also pasta water, bean and pulse soaking water, even water from rinsing dishes that had veggies on them to watery plants. I figure it is water with extra nutrients!

No, but you can use it to tan hides, make beer and wine or use it as an ink. Look up the uses of tannin.

You need to mix it with pecan, black walnut and hemp seed mill for great taste. Make a pasty muck like corn bread and pour it on a hot plate. Makes wounderful flat bread or Jesus bread.

Do you have to remove all the skins from the acorns. The skins on my acorns are not coming off easily. Can I just grind them into grits with the skins as well? Maybe the skins will come off after grinding?

What are your thoughts on quick leeching? A gal here on KZfaq put her raw flour into a nut milk bag and kept squeezing it under running water until the water ran clear.

I've been trying this method and am feeling a bit discouraged- would love some feedback! I tried the cold leaching method and it's been going for a week. The bitter taste is much better, but still far from palatable. I also tried hot-leaching some acorns and have been boiling them for probably 5 or 6 hours and have changed the water probably 15 times. They are still quite bitter, and I am concerned with how much energy I am using to process them. Is this normal, or am I doing something wrong? I am fairly sure the acorns I am using are from the northern red oak. Thanks for your wonderful video and I hope you can offer some insight!

+Betsy Hinze I've since found that (with the cold method) changing the water 4 to 5 times a day get far quicker results. Also, be sure to grind the grits as fine as possible.

+Suburban Foragers thanks for the tip, I'll try doing that and see if it speeds it up. I ground the grits more finely this morning in the hopes that it would help as well. Any idea why the hot water method is also taking so long? I've changed the water 20-25 times so far and they are still very tannic. :(

Maybe by cooking it on a thin sheet pan and evaporating the water off. Then, you could scrape the pan of the residue that's left behind.

He said he puts it in a cold place so the starch can sit for one day. You pour out the water and use the starch on the bottom. Put a linen cloth in a sieve and dry the mud-like starch either on a flat tray or on a baking tray. Takes very low temperature in the oven and some hours of drying

Oh, wow.. Ain´t the internet great? I answered my own question in minutes. Turns out, if you want to store any type of acorn-based food. The best way is to store a dried acorn. Because of the tannin in the acorn, which is what we are leaching out, it is very handy to store and it can last up to DECADES.. So. Wow nice video, I would like to add a suggestion to people viewing your video on leaching out the tannin out of the Acorns ,, boiling the Acorns in water and then changing the water and reboiling 3 or 4 times will leach out the tannin, in less than an hour better than of a whole week, .... so just boil the tannin out and reboil, 4 times, better than taking a an entire week to take tannin out .

+Jason Shoraka Unfortunatly, I've found the hot leaching method to use a lot of energy (it is more like 20 times)and the end result produces a darker flour that makes a less flexible pastry.

Heating and reheating this way destroys the acorns' nutrients. You'll render all the other work you've done pointless. Don't do this..

Hot water leeching is good only if you do not intend to use it as a flour. The boiling will result in a crumbly four that will not hold together.

Natives all over did it with nothing but a couple of rocks to both get the nuts out and grind them. There are many videos out there that show various methods. It's not hard. You can lay out the nuts and flour on plates, screens, or even a chair to dry them. You can cook them in various leaves over wood coals. It just takes creativity. No equipment needed.

Probably his grandkid who wanted to spend time with him, half-way through she looked like she wanted to go out with her friends/etc because it was getting late, then she started glaring at the camera person and the old dude like she wanted his heart to give up already. Video would've been better off without her though, she just stood there? I mean it's nice to chill with your grandpa, but atleast pay attention and dont nod at everything.

That´s interesting, that you got that out of this video. I was just thinking it was impressive how well she was able to be silent and observe and be comfortable. Takes some inner peace that people don´t have in my experience. Which in my mind means she is generally treated well or has overcome any bad treatment. And as for respect.. We need to teach young people real skills, so they can teach their children. I think teaching someone and making them a bearer of our treasured knowledge is not disrespectful at all, but one of the great things you can do for them. Maybe she just didn´t want to join in on video. Who knows? Just goes to show, we all make our own version of reality and react to it. None of us know what´s going on, it´s a miracle that we get stuff right sometimes. All we can do is love each other for the different perspectives it gives on the same thing. So thanks for sharing.

Next time you want to have a pretty girl in your video, I would at least incorporate her in the process because it was clear you were bringing her along for views and that's just not right. Had you brought her along for views and made that fact unclear through incorporating her in the process then people might be more innocent in the comments and not have noticed but you'd still be guilty of the thing.
