Thanks for showing the contrasting recipes. I always thought whole grain baked goods were really dense and didn't rise much but the spelt muffins looked great.

Thanks! It depends on what flour you use - there are all kinds of whole wheat (which is more than a lot of people get into). But yeah, spelt is great.
