Tip: instead of using milk Chocolate, you can use baking chocolate or any chocolate that doesn't already have milk in it so that the final result has a thicker consistency (I love baking and this tip has helped me in making chocolate fudge and ganache)

The secret third ingredient was air. Because she used a whisk, it incorporates a lot into the mousse and gives a nice fluffy texture. The stick blender does not add as much air, so yours likely would have been smaller and denser than hers (which, depicted volume implies)

@@hassanahabbane3491 I think it's also because he used reduced fat coconut milk. the coconut fat that was supposed to be in the recipe was there so that it will emulsify as the mixture is whipped, this should have given it a more creamy/solid consistency when cooled

Well, the milk in chocolate is powdered anyway, the issue I have with his execution of the recipe is the type of coconut milk he used. It's all about fat! And he used low fat coconut milk, making the end result quite liquid. Coconut fat thickens below 25°C, water does not.

(2 sticks) unsalted butter, at room temp, plus more for pan 3 c. all-purpose flour 1 tbsp. baking powder 1 tsp. kosher salt 1 3/4 c. granulated sugar 4 large eggs 2 tsp. pure vanilla extract 1 1/4 c. whole milk, at room temp BUTTERCREAM FROSTING 2 c. confectioners’ sugar 1 c. (2 sticks) unsalted butter, at room temp 1/2 tsp kosher salt 1/4 c. heavy cream 1 1/2 tsp. pure vanilla extract Step 1 Heat oven to 325°F. Butter 9- by 13-in. cake pan and line bottom with parchment, leaving overhang on 2 sides; butter parchment. Step 2 In bowl, whisk together flour, baking powder and salt. Step 3 In large bowl of electric mixer, beat butter and granulated sugar on low speed to combine. Increase speed to medium-high; beat until light and fluffy, about 3 min. Reduce speed to medium; add eggs 1 at a time, beating each until incorporated before adding next. Beat in vanilla. Step 4 Reduce speed to low and add flour mixture in three parts, alternating with milk and beating just until incorporated. Step 5 Spread batter into prepared pan and bake until wooden pick inserted in center comes out clean, about 40 min. Let cool in pan 10 min., then use overhangs to remove from pan and let cool completely. MAKE BUTTERCREAM FROSTING Step 1 Using electric mixer, beat confectioners’ sugar, butter and salt on low speed until combined, then increase speed to medium and beat until fluffy, about 3 min. With machine running, slowly add cream. Beat until fluffy, about 3 min. Beat in vanilla. Step 2 Spread frosting over cooled cake and decorate as desired. Nutritional information (per serving): About 640 calories, 35 g fat (21.5 g saturated), 7 g protein, 420 mg sodium, 76 g carbohydrates, 1 g fiber. (i liked my own comment)
