a tip for Julien’s creme brulee: the simmering was to allow the arrowroot powder to thicken the liquid. if you let it simmer for a few minutes and put it in the fridge for longer, you’ll get a texture more consistent with regular creme brulee. proud of you!

Hey Chef, wanted to give ya hint when using cornstarch as a thickener like that in vegan creams. If you whisk the cornstarch into the cold coconut milk it will disperse better before you heat it on the stove. Also, for cornstarch to fully thicken a liquid and gel it has to reach a full boil for like a minute. boiling is what will thicken it, the fridge wont thicken the cornstarch liquid any further unless it has hit the boiling point before its chilled. love these vids!

the trick to getting an even brulee is to tap the sides of the dish to even out the sugar dispersement before hitting it with the torch. also, slow movements with the torch work better, as long as you move around as soon as it gets golden. used to make these at work and it was always so satisfying

Small tip: the reason you simmer the liquid is so the starch component (arrowroot powder in this case) gets activated and the „custard“ thickens up when it cools. So i think it would have been a thicker consistency that way. The recipe looks awesome!
