Things change quickly around here, and everyone is very busy with school, work, and commuting. We all want to eat healthy, delicious home cooked meals but many of us no longer have as much time each week to plan, shop and cook. Also, we're all on different, crazy schedules so there is no longer a daily set mealtime where we can all sit down together around the dinner table.
We've adopted a way to keep enjoying healthy home cooked meals each day whenever we want to eat them. This new mealtime solution is fast, convenient and easy for us and may be just the ticket for your family as well.

You should save all that yummy bacon fat for frying potatoes, grease your potatoes for baking, add to baked beans or grease a skillet for cooking cornbread, and many other things, I put in a container and refrigerate.

Great approach and focus on the details. I wanted to mention, my wife and I have so many things to cook with. Oils like, avocado, extra virgin cold pressed olive and Virgin cold pressed coconut oil. Also we tried grass-fed ghee. And finally we have our grass-fed Irish butter. It is a bad society shift away from fatty oils and such in our diets. Essential for maintaining health bones and joints. Eyes, hair and skin. Thank for sharing and I enjoyed the content as always. ✌

Bacon grease is far healthier for us than vegetable (seed) oils are. Seed oils are inflammatory and lead to many metabolic health problems over time. If you can replace your use of seed oils (like canola, peanut, corn, etc.) with pork fat, beef fat, coconut, avocado or olive oil, you'll improve your overall health immensely. Plus, food tastes better cooked in the healthier fats and oils. Take care and God Bless.

TIP: as one who packed home cooked meals for dinners at work ( night shift hospital ICU RN) These are Rubbermaid "Brilliance" line of prep containers. I love them because of the silicone seal gasket makes them liquid tight with no leaks in your lunch bag or backpack. The ONE glitch is the two compartments inside are NOT sealed off from each other. The top edge of the divider is about 1/8 in. below the lid so food will slide over the top of the divider from one compartment to the other when jostled around in a backpack or placed, on edge in an cold pack lunch box. So if you have small textured foods like rice or something with a dressing or with sauces, the sauce or rice will leak over the divider to the other compartment and mingle with whatever food unless you can keep the whole container flat during transport and storage. Overall, the whole container was liquid tight which matter the most for me. If it didn't leak all over the inside of my insulated lunch bag it was a win. I just accepted that my dinners would sometimes have to co-mingle. Meals sometimes comprised of a hot dish on one side that normally was reheated and a cold dish on the other that did not but both were kept in a insulated lunch bag that had frozen ice packs to keep both cold until served. What to do... ate both cold or found a paper plate to dump the cold food in, heated up the hot dish and dumped the cold back in the container to serve. Its better if you can have both sides as a cold or hot and the cold in a different container all together. 32yrs of packing dinners to work. Better yet, really small snack size Snap Lock containers with the silicone gaskets are a must for carrying salad dressing leak proof to work.

Suggestion: the pyrex ones which also have the lock lids, but can go from freezer to oven, lid can't go in the oven, but still just putting it out there as an alternative you might try. I really like freezer meals, they are surely better for us than the processed stuff for sure!

I want to do more meal prepping, but can't figure out how to actually do it on a regular basis. I seem to do better just doubling recipes and putting the extra in the freezer for later. We homeschool, so I really enjoy having either leftovers or prepped meals for lunch that aren't just pb&j everyday. Definitely going to get some of the containers you recommended for days when we are out for lunch.

We got our first toaster oven 4 years ago and it is indeed super convenient and fast as an oven but it is a dreadful substitute for a toaster, at least our very large Cuisinart is. It's very slow at toasting bread and dries out the interior of the bread before ever making a browned exterior. You end up with hard, dry, not brown, "toast".

I've started doing something that I've wanted to try for a while. Our local Chinese restaurant has take out food in the containers that you have that are black bottomed and an opaque top. I bought some beef with broccoli and beef with mixed veggies. I froze them as is. I also froze the rice. To reheat, add a little water to the rice and microwave. For the meals just defrost in your fridge and microwave. I also have frozen egg rolls. I've also frozen cabbage rolls and stuffed peppers, and made Salisbury steak, mashed potatoes and veggies.

Bake your bacon in the oven! Line a baking sheet with foil then bake at 400°. I use thick bacon and it usually takes 22-25 min. Once you remove your bacon from the pan, you can make a trough with the foil at one corner and pour your grease into you container to save. Throw the foil away and no mess to clean up!!

I will always watch your videos. I do miss Jamie (sure I spelled it wrong) though. No offense. How is she doing in school? Here's a little tip you can take or leave. If you get a package and it has all that brown paper in there...save it. I have a place in my cabinet where I flatten it out and save it. It never touches my food. But, I use that for draining bacon and sausage or anything really that needs the grease drained off. The brown paper goes on the bottom or between layers of paper towels. It saves LOADS of paper towels. Yeah, you still use them. But, it cuts down the use of them more than half. I oven fry bacon. I have never tried it in the microwave.

I do like this type of video! Years ago I did something similar. My husband cooks breakfast each day. But there was a week when he would be gone, and I would have to cook my own breakfast (I would get dressed for work while he cooked, he said that was one way he could help me 😉) So the day he left, I baked the biscuits, fried the bacon, and scrambled eggs. The next morning, I made a quick breakfast sandwich, popped it in the microwave for a few seconds, and enjoyed breakfast while I did my makeup!

Big push here in the U.K. at the moment on removing the use of Plastics particularly in the food industry, I.E. Takeaways and Prepared Meals. So good to see you chose packaging with a longer life. During my recent visit to the U.S. I noted while Restaurants serve up so big portions, the food either gets wasted or is usually packed up to taken home, its the amount of wasteful packaging that got me .

the problem with microwaved bacon is that there's something like a ten second divide between undercooked and overcooked. Bacon thickness matters, and so does the number of slices you nuke at a time. I also am not a fan of leftover scrambled eggs. The optimal eating time for scrambled eggs is within a 15-minute span of them having been cooked. But it was an interesting video and would be happy to see more food prep for on the go.
