Not sure what to do with all those summer tomatoes? Try this healthy roasted tomato chip recipe that even kids like! This recipe was handed down from my Italian Grandma and we've made it as long as I can remember.
Marina's Roasted Garlic Tomato Chips Recipe:
- Tomatoes, sliced thin
- Olive Oil
- Breadcrumbs (can use gluten free or see below for paleo)
- Italian Spices (garlic powder, oregano, basil)
- Fresh Basil, julienned (opt)
- Salt and Pepper
- Parmesan Cheese
Preheat oven to 275 degrees*. Place sliced tomatoes on parchment paper lined baking sheet. Drizzle with olive oil. Sprinkle on breadcrumbs, spices, salt, pepper, and cheese. Bake in oven for about 3 hours until edges get crispy (keep checking every 20 min so they don't burn!). Enjoy as is, on sandwiches (hello BLT!), or in salads.
*These can also be made in the dehydrator. Times will vary depending on heat setting.
Paleo and Vegan Version: substitute breadcrumbs and cheese for ground brazil nuts.

love tomatoe chips, we made our drying rakes years ago and let the sun dry them and stored them in vacuum sealed bags and you'd them for everything and so powerfully strong in flavor!!! great job! 👍👍👍👍👍

Well done..love this DIY snack tutorial Very nice...I will give this a try....the acid in the tomato, upsets my stomach, when raw..but this might be the alternative I've been looking for..cheers. 💗 💖

It definitely makes it more mild...almost like a paste. There are also low acid tomatoes that may work :0)

Oh yumm! I found a recipe for tomato chips the other day that used the dehydrator to dry them to a crisp. Yours look better, but I might combine the two. Your ingredients and the dehydrator overnight.

those tomato knives are super sharp. we have steak knives also from them. there is a pineapple mint also.

Just an update from previous comment. Went & got 4 Jersey tomatoes from the Farmers Market & made these today! They are awesome!!!! Will definitely be making this recipe again!! Can definitely understand how your daughter can eat them all up - very yummy snack!!! Thanx for sharing!!!!

If you cook them on top of a cooling rack above the parchment paper they should be crispier when you pull them out. The air circulation would help and they wouldn't sit in any juice that would come out.

Rebekah Rhodes blends all the ingredients, then dehydrates the mixture. Makes 'chips' from the finished product. Probably similar in taste. :) Yours look awesome ! ! ! ! !

Would love to try this but with tomatoes selling at $7 a kilo at the moment will wait a few months until l can grow my own. BTW Marina looks so much like you Jaime.

In the description I mention how you can use ground nuts. Those are good too...but one or the other is necessary to soak up juices and make crispy. They are good both ways!

Due to weight loss surgery I have to avoid the bread crumbs. Do you think these would still crisp well with out them and maybe just the parmesean instead?

I have used ground nuts and those are excellent (if you can tolerate them). If not, you can just try the parm and see!
