We have made it twice now and both times it comes out or the freezer rock hard. What are we doing wrong?

Are you using double cream or whipping cream? Maybe also your freezer is cooler than most, in which case leave out for 20 minutes before scooping. You could also add some alcohol to the mix to help with a soft set.

@@karldelavigne8134 Thank you for that. I have found our cream is only about 37% fat and double cream is about 48% fat, so I shall try increasing the fat content and see how that goes. I think it will do the trick 🙂

As long as you have enough fat and sugar (so use the full 100g sugar, and use double cream not single or whipping cream), it should be all right. The pre-whipping of everything should also prevent the crystals.
