I've found that cooking my gulab jamun at lower oil temps (230-250 deg F) gives you a gulab that's cooked through to the center and makes for a crust that's more porous and absorbs the sugar syrup better. Add cracked cardamom pods to the syrup before cooking to flavour the syrup. :)

This made me so nostalgic for the meals my friend would make for me. She had moved to the US for grad school from India and then stayed to teach. We became good friends and she and her husband would invite my husband and I over for dinner, and it was always amazing! And she would spoil me with galub jamun flavored with cardamom syrup on my birthday because she new how much I loved it. She and her family eventually moved away, but for a few years I was blessed to have her share a part of her culture with me. I think it's time I try to make my own galub jamun.

Well gentlemen I think your Dosa came out PERFECT you just forgot to use ghee. Which helps them to brown without burning. Thankyou for cooking I enjoyed learning how to make Indian cuisine with you guys .🧡💚💛 definitely do more of these.

'chana' means chick-peas and chana masala in case of this papad is simply chick-peas and spices. basically chana masala describes that these papad are made of chickpeas and spices.

Very cool! I have never made Gulab Jamun nor pani puri at home. So you guys did great!!! Generally in India we get ready puris. Hats off to Satoshi. Gits is not a great brand for their instant mixes of dosa. Next time maybe try MTR brand? Bravo!!! My dosas fail all the time so don’t worry. The temperature of the pan is very important and needs a bit of practice. What probably went wrong was too much water in the batter. The batter has to be like a thick crepe batter. Bira doesn’t mean brother afaik. Bira was the italian word for beer (birra).

I absolutely love seeing u guys enjoying the food. u guy made dosa better than me for the first time because when I started preparing dosa for the first time I nearly charred the dosa and it took me dozens of times to prepare dosa perfectly and for gulab jamun u can have it with vanilla flavoured ice cream also its quite good. And u guys made everything perfectly as I eat here in India. just a tip for gulab jamun: if u want to prepare it just like in that picture in that packet u have to roll those balls perfectly without crakes so when u cook the surface will be also smooth but it is just for visual presentation only the taste stays the same and when u preparing that sugar syrup just adds few cardamoms when boiling it and u don't have to take it out, it just enhances the flavour and aroma of it.

My best friends family are from India, I used to love watching her mother cook whenever I visited. It was always so satisfying watching her make puri and seeing them puff up in the oil. I feel inspired to give them ago.

Channa means chickpea steamed or roasted used in Indian dishes Shinichi and for dosa I think u should have closed a lid on the pan for making it softer happy to see u guys cooking Indian dishes!!!❤

Great job guys.. Small suggestion for a better dosa, try heating the pan a little bit before pouring the dosa batter. Good to see you enjoy Indian cuisines.

Chana = chickpeas, masala = spice. Chana masala = spiced chickpeas. The dosa was pretty good for your first time. What kind of chutney did Satoshi make? It looked really good.🤤 The water for the pani puri is usually made with mint, coriander, & tamarind. The gulab jamuns can be fried at a lower heat for longer, and you can add cardamom powder & saffron to the sugar soaking syrup for extra deliciousness. Now I’m hungry lol. Great vid! And yes please do more of these types of vids.😊

These products are the same price here in New Mexico. So I learned to make them from scratch. Very easy. Even ferment my own dosa batter from dry lentils and chickpeas. You should try it!

Chana Masala is Chicpea or Garbanzo bean Curry. So this papad is probably seasoned with spices that go in that kind of curry

To add more flavour to the pani puri water..you can add paste of mint and coriander paste to the water mixture

For Dosa you dont need to turn off the heat. And also warm pan is better to put the dosa batter on makes it cook better..

I love Indian food. No shortage of it here in Vancouver. Chana masala or chole is a staple dish of small chick pea in masala. You guys are so adventurous. I live that you try all kinds of cooking. I watch all your videos on all your channels. Hugs from Canada! Happy Thanksgiving 🦃🦃🦃

hmm...favorite Indian foods.. pakora (battered fried veggies) is my favorite appetizer.. main dishes.. butter chicken or curried goat with rice.. dessert.. that galab jamun is my FAVORITE period.

Papad are nice crumbled into dal and rice. So tasty. I love dosa and the package kind is much easier than soaking and pulverizing rice and urad dal and then frying it.

Yes the first one chana masala we go to one of the Indian restaurants we go to here in Australia they give us them as the starter snack yummy with bits of pepper in them too yum!!!👍

You have to fold the dosa as the dough is frying. You're "sculpting" the dosa into a cylindrical/pipe shape this way.

If you had deep fried the popadoms instead of microwave you would have seen them expand so much. Love popadoms

milk solids is powdered milk. it's a milk that has been dried out until no longer contain water

Make dosa from mung beans or urad dhal and rice, soak overnight . There are plenty of recipes on KZfaq.

It looks great! And don't best yourself up about the dosa Not turning out like it was in the restaurant.. It's because the traditional home-made is fermented almost for 24hours.. which is difficult for packaged flour to equal. Chana means grams..i.e. chickpea. so chana masala papad would be made mainly of chickpea flour..with masala added to it! I can't wait to visit Japan and try out Japanese food! And that's all because of you both and your amazing videos!

This is one of the funniest and fun videos ever! I loved the beer tasting. I love Indian food. My fave is Palak Paneer. I would like to try the crunchy ball shape. Have never seen that! As long as the first try at a dish is edible, you have done OK. I have literally had to throw entire family size dishes out after the first try. I am a good cook, but the way to become skilled is to try. And sometimes fail! I love that you did that in video! lol! All of your cooking fans appreciate it I am sure. I want to try a couple of those. Love ya!

channa is Bengal gram lentil a type of lentil which has a strong flavour compared to your normal archer dal which you normally taste as dal fry in Indian restaurant

Shinichi, Satoshi! Indian here - you guys did a wonderful job! Especially Satoshi-san, I must say, those masala potatoes looked oh so wonderful :) and the Pani Puri potato mix looked great, too! I bet the raw onions and addition of coriander were good in it (that's how I personally like it, haha) Sorry for the super long comment ahead, but here's a few insights on dosa that you might find helpful - Firstly, I would like to tell you to not feel discouraged about how your dosas turned out with the patchy golden brown spots - that's usually how they turn out when someone makes them the first time, whether they use a normal fry pan or a dosa pan, especially at home where one uses packet mixes (by the way, if you guys happen to have a cast iron pan, that'll actually be really great for it, but keep it at low and be patient!) Secondly, there's no need to feel hesitant about flipping it over once you see it's a light brown colour, that's exactly when you need to do it! It's sort of the same thing as when you're making an omelette and you majorly cook only one side before folding it in half, if that makes sense? A fellow Indian might disagree with me or feel confused with my analogy, but I'm only trying to contexualize it for you guys ^ Thirdly, Shinichi got it right! We LOVE having gulab jamuns with vanilla ice cream, nothing beats it! As a lot of people have mentioned, start out cooking them at a lower temperature and use cardamom pods to flavour the sugar syrup next time!!

A very good job you guys... 👏 👍.. I my self took atleast 3 to 4 times to get the dosa batter to a perfect consistency. The dosa batter consistency should be more thicker than a tempura batter like the batter used to make fish and chips..... also since the batter was thiner it became too crumbly...

For frying Gulab jamun the heat should be lower..and then put it in hot sugar syrup..but wonderful effort...you did extremely well for first time!!!

I think chana are the black chickpea. The yellow chickpeas are called chole. Masala is the spice ( seasoning). Chana masala to me is the spice mix used to season chickpeas.

4:34 milk solid is just powdered milk P much is the process of removing all of the water out of the milk to make it into a powder substance if you are trying to have a dairy-free diet you will have to exclude milk solid from your diet

channa - chickpeas..I dnt knw why but the dosa batter seems like thick a bit...it should be porous after spreading on the pan and instead of water maybe try spreading oil on the pan before pour dosa batter thats how we always do...its actually very good for first time dosa maker also most of our dosa look like that though😂 ......I love both of yours reaction and excitment..

インドシリーズの続編をまたやっていただけてとってもうれしいです! 今わたしもインドやスリランカにハマッていて、インド食材店によく行くようになったのですがまだ未知のものがたくさんあるので、こうして動画でわかりやすく紹介してくださるのありがたいです。ドーサは日本国内ではあまり食べられるお店がないので、家でも作れないかと動画のものとまったく同じ素を今日見てきたのですが、やっぱり作り方の上にラベルがあり水の量がわからないなと買うのをあきらめてしまったところでしたので教えてくださり そして作り方の難しさもよーくわかりました(笑)ありがとうございました! もっとインドの続編やってほしいところですが、別の国の特集になっても気になって後を追ってしまうんだろうなぁ(笑) 知らない味や文化を体験するってとても楽しいですよね!

Hey guys! You should definitely try making dosa again. This time try to check out some indian KZfaq channels for insight. Also, use a Small bowl ( also known as 'Katori' ) which is just a bit smaller than the palm. Use the bowl to pour the batter in the pan and then using the bottom part of the bowl to make the dosa batter spread. Also, just for a heads-up use a flat pan without edges if you have or just do not spread to the edges if your pan is having round edges. Majority or cooks make their first dosa to check for proper heat, it gets better with the second dosa as you proceed.

Chana means chickpeas in Hindi. So chana masala means chickpeas masala. It could also be used to mean grams, chana = grams.

My favorite Indian dish is probably palak paneer. We have 3 restaurants near us and each is a little different. A long time ago I had a dish I'd love to find a recipe for. It was cabbage with meatballs (I think they were beef, which was unusual).

I think it's the frying pan that probably messed up the dosa. Seems it's not heating up the entire surface of the dosa evenly. You can try with an actual dosa tawa if you can get one.

Dosa batter should be poured on hot pan, I saw you switching on the stove after pouring the batter. Next time keep the stove on , pan should be slightly warm and then pour the batter. Second the batter was very watery , slightly thicker batter would have been better.

It looks good! Maybe the ladle pushed too far down when spreading the batter so some parts is thinner and some parts thicker; it just takes practice :)

You need to cook the dosa batter very thin. You need mint or coconut chutney and sambas to dip. Love the episode.

"milk solids" are basically just the non-fat dried milk powder that can be bought in most grocery stores.

Good try my friends. As a suggestion, the oil has to be HOT HOT before you fry the pooris and papads. They should immediately come up to the top and you only flip them once. Try buying plain papad or jeera papad because they are mild. ☺

Heat was just a bit too high for the dosa it cooked too fast so crisped up before the color could form
