As a Korean, I will say your first attempt was wonderful! Sesame oil DOES actually matter, because it's used as a flavor component, and not necessarily as a cooking oil (it burns very easily and turns acrid and bitter if burnt). It's used sparingly as a lubricant and flavor. If you want to play around with your recipe, you could try bacon kimchi fried rice, cooking it all in the bacon grease, with a fried egg on top. And if it turns out especially spicy (or you just like cheese), you can sprinkle over the top with cheese and let that melt in. What they did in In The Soop was fry up what you just made, spread it all out on top of the frying surface, and let it sizzle and brown on the bottom for a bit. Add cheese to the top, then munch away, scraping from the bottom of the pan, making sure you have some burnt/crispy bits from the bottom, as well as some rice from the middle, kimchi, and cheese from the top - perfect spoonful. I'm so happy you enjoyed your first foray into kimchi - it could have gone either way. But cooked kimchi is usually the best introduction, as it's easier to handle the strong flavors for foreign taste buds (cooking kimchi mellows it out a bit). I, personally, love plain raw kimchi with a bowl of rice and some soup, but that's just because I grew up eating it.

Do you like scallions? I always cook scallions in some oil to infuse the oil, I then add the kimchi (i cut it up very small) and a little bit of sugar and gochugaru (not needed) and cook for about 10 minutes and add rice. I usually top it off with a fried egg or two and sesame seed oil. Kimchi fried rice is the BEST!

Lol 'somebody better wife me up' . I'm glad you like it, agreed about the fried eggs suggestion, you can also add mushrooms and diced bacon/pork to the mix, tastes really yummy. You can also add your cooked kimchi with fried noodles/pasta. In my city, korean stores and restaurants are on the rise at the moment thanks to BTS, so in the absence of the McD's BTS meal, I can at least enjoy some really great korean food here, and I've been experimenting in the kitchen a lot during lockdown.

sesame oil, soy sauce and oyster sauce are the key ingredients in a lot of asian dishes. Sesame oil mainly used for flavor, unlike other cooking oil. Sesame oil gives a nutty flavor. Try kimchi fried rice with beef bulgogi. It's heaven cause kimchi has a slight tangy flavor from kimchi whereas bulgogi has a sweetness to it that gives a really nice contrast of flavor

How did i not know about ur 2nd channel till now 😭 Dont worry at the start cooking is all about failing and pretending something didnt get burnt lmao but after that comes the fun part, u start experimenting, trying out new recepies and as u get confident in doing that ur skills will get better and better. There is an easy snack Tae will make in the next In the Soop ep, so try that out as well u will def like it.😄💜

I don't like kimchi on its own, but it's actually a very versatile ingredient to cook with, and it tastes good cooked with other stuff. I've made budae jiggae with it, and it is good. Traditionally (and you'll also see BTS doing this a lot) you'd make the budae jiggae first, then use the leftover stew and soup to fry kimchi fried rice. Also, sesame oil can make a huge difference in the taste. Makes it taste 10 times better. Jin has said "sesame oil is the secret to life". Its essential in most Asian cooking. Just FYI...Sesame oil is a wonderful flavor and adds so much to a dish. You use only small amounts for flavoring, unlike vegetable oils. Five decades in the kitchen and I still like experimenting with new recipes, ingredients, and flavors.

Miss next time add some mozzarella cheese on top and let it steam till cheese melts, you will also love it its taste even better when it's a bit spicy. You did do an amazing job cooking one j hope fav dish you just forgot the sprite😀😄💜💜💜💜

I have to try it! I also bought kimchi on the market once, but it seemed extremely sour, I probably didn't get it right. But when I saw that RM was able to make a kimbap without instructions on the mobile :) I also tried it (with instructions on YT). It was a huge success, but there must be pickled yellow radish and sesame oil. Everyone in the family has asked for this several times.
