Cabbage was used as a "filler" when cooking meat, to help stretch the meal. However the combination of meat and cabbage is also delicious so the tradition of adding cabbage to lamb/mutton continues.
Ingredients
1.5kg lamb marinated overnight
Marinade
1 tsp crushed ginger and garlic
1 tbs Worcestershire sauce
1 tbs steak and chops spice
1/2 med head of cabbage, roughly sliced
1/2 cup oil
1 med onion, sliced
A few sprigs each of curry leaves and fresh thyme
2 tbs mixed masala
1 tsp hurdee (turmeric)
1 tsp crushed ginger and garlic
2 cloves
1 tsp rough salt (adjust to taste)
*2 medium tomato chopped
Dhania (coriander) to garnish
We served with basmathi rice and a carrot salad.
