Here is our small maple syrup evaporator set up and boiling process. This year we scaled up our maple syrup production with a small evaporator. Part of the evaporator was homemade and the pan we bought from a guy in Quebec. Here is his facebook page: / maplesyrupevaporator

You mention finishing the syrup in a separate stage. Why do you draw off at the 210-212 mark verses just finishing it in the evaporator to 219? Love the video and explanation...great job to the both of you.

Nice set up! Thanks for sharing. What are the dimensions of your pan? And do you know what gauge of stainless it is?

Thanks! The pan is 2 feet by 3 feet and is 14 gauge stainless.

Can you give more detail about how the sap flows from one section of the pan to another? Like where are the holes, how big are the holes, how is the flow regulated or does it just flow freely as you draw it off?

Hi Kelly, so the sap flows between each chamber through a small hole at the bottom of the divider between the sections. The hole is a bit bigger than a toonie. The sap flows in a "s" pattern through the entire pan. There is only one hole between each section and the sap flows "downstream" as the water evaporates from it and becomes denser. When drawing it off at the very end we watch the temperature to see when the thickest sap has left, to know when to turn it off, since the denser the sap the higher the temperature can go. How much maple syrup were you able to make form your 30 trees!? I am getting into the maple syrup making this year and am planning on 25-30 taps!

Hi Jim, we made 17 L of syrup from 30 trees last year. But the year before we only got 12 L so every year is a bit different.

How many gallons per hour are you able evaporate with that rig? Looks like a nice step up from a barrel set up.

We are not 100% sure but we did the math out from our boil yesterday and we think roughly 5 gallons per hour. We could improve that if we put fire bricks in the stove, it would make this set up more efficient. Hope this helps, have a good syrup season!

Firebrick will make a huge difference. I lined my barrel with 1 inch fire blanket then bricked over it and I'll do 5 gal an hour and thats with a smaller pan than yours. You can definitely get more efficiency with your rig!

Just a little suggestion, as a firefighter I would suggest you drop your smoke stack down a little. You are WAY TOO close to your rafters. You have a fire waiting to happen there fella.

criss cross your wood. you're stopping the flame from hitting the pan stuffing it like that.

Hi! Approximately, how much did you pay for the pan to be made? We are building a very similar model, but would like to know before investing! Thanks!

We paid $715 in 2019. That was for the pan, warming tray and ball valves, but not the fire barrel underneath which was salvaged. I hope this helps and I hope you are able to make lots of syrup this year!
