Mark Wiens shared this viral video of a crazy street food dish...a literal mountain of pork bones in a spicy broth. In this video, I show you how you can VERY EASILY make this dish at home. It's called Leng Saeb (เล้งแซ่บ) and was a popular dish at Thai night markets (Talat rot fai). If you love tender ribs, you're gonna love this too!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZfaq channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZfaq videos, her cookbook, and cooking classes. I was thrilled years ago to watch your collab with Mark in Thailand, so I was super thrilled to find this video. I often watch Mark's videos in Thailand and wonder if I will ever try those dishes. Thank you for making this dish so accessible. I would love to see more of this type of video teaching us how to make uniquely Thai dishes that are not available in North America. Btw I often make Korean pork bone soup and was thrilled to find another Asian cuisine recipe using them. Thank you and Merry Christmas!

Just had some on the streets of Thailand. One of my favorite dishes now. But the secret ingredient is the culantro, which I dont think is easy to find outside of Asia. And since this recipe used cilantro instead of culantro, i can’t imagine it tastes nearly as good.

My wife just made Tom Saeb Leng, so delicious with steamed rice. When it's my turn to cook Thai food I follow Palin's recipe's and they come out perfect. Plus her vids are fun to watch, that onion/garlic drop @ 02:05 was cute.

Oh my! This is my favorite soup! It is insane to have such spicy soup in the steaming hot weather as in Thailand but it’s just satisfying to do so. Enjoy the delicious broth and wipe the sweat at the same time. Thank you so much for the recipe

I’ve been to Bangkok ten times but have never eaten this. A bit intimidated by the chillies, even though I can handle spice quite well but Thai people’s concept of spiciness is on a other level.

When i was in Thailand a few years ago (before all this covid mess) I had to track down this dish and try it. It was very spicy but so delicious. Recommended to try if you can tolerate some heat.

I'm African-American, so I grew up eating neck bones from cows, turkeys, and pigs! Luckily, in Chicago, these are easy to find at regular grocery stores. Thanks for sharing this awesome recipe. Very excited to try them in a new way!

Oh my, I can't wait to do this! While it may take long to tenderize, the ease with which to make it all come together is well worth the wait. I'm sure the meat is, by itself, already flavorful, but with that smokin' salty sweetish dressing poured on it, or in which to dip it, the flavor must be something to die for.

On my last trip back to Thailand, this dish seemed to be offered everywhere, especially at noodle stalls where they would have the broth and the pork bones already simmering away anyway. Then it's just a matter of 'saeb-bing' it up -- voila, no waste (except for the bones of course :D)

In Thai restaurant, they use only green spur chili because it's quite mild not too spicy. the character of this dish is smell of green spur chili that why they use green chili a lot. sometime they add red chili for more spicy. when you see this disk at first time with a ton of green chili, you must imagine tis flavor too spicy like me, but it not too spicy like you thought (but still spicy)

I'm wondering if I can make this with pig trotters. I often make braised pig feet because they're cheap and full of collagen. The texture will be very different, much thicker from the skin and joints, but I think it'll be delicious

This dish is very much like the Filipino soup dish called “Sinigang na Baboy” (pork sinigang dish).. made with similar neck bones boiled fork tender in a spicy sour broth.. the sour tastes usually comes from tamarind and/or lime or lemon… also has onions, garlic.. but includes some tomato (provides some sweetness), and other vegetables like mustard greens and bokchoy and taro or sometimes white radish. Served with rice..and like the Thai dish version.. great comfort food.! Cheers!

If you don't like garlic. Just don't put it in. Actually, what important is fish sauce, lots of Thai bird eye chillis(greens have more fragrant) lime juice and sugar(to mellow thing out).
