Unlimited recipes for subjective tastes. ITT took me years to finally find the perfect taste I love. I discovered I don’t like any that has Lipton fry onion soup in the cast of characters. The closest to mine is Cracker Barrel’s and it has green peppers along with a few other necessary ingredients. YT has copycat recipes if doing a search.

In Vietnam, 68-69, I craved meatloaf and milk; after ~10 months, I went on R&R to Australia, and while there, I ate Meatloaf and drank milk daily. I went back to Nam for 3 more months before rotating back to the world. Meatloaf has a special place in my diet today.

Meatloaf is one of those foods I could all the time. It is so versatile. I love a sandwich with mayo and pickles. The best comfort food.

My mama always made parsleyed potatoes to go with her meatloaf, it’s just boiled potatoes like you’d cut them for mashing, then she’d add butter and a handful of chopped parsley. So simple yet so good and comforting. I miss my mama

Meatloaf is my husband's favorite dinner. He's very picky on it. He does not like ketchup mustard or mayonnaise. My family's from Appalachia part of Virginia. That little place where 45 minutes north is west virginia, 45 minutes south is Tennessee, and 45 minutes West is Kentucky. My favorite place in the whole world. I'm so glad I found your channel and I love hearing your accent and your voice it reminds me but my MaMaw. Both my parents grew up in Southwest Virginia about 45 minutes from each other. I grew up in the military my dad was in the Air Force for 29 years. I'm currently an Army wife and my husband is ready to retire this summer. We're coming home to Virginia. I can't wait to come back home. Country roads.. take me home.. to the place.. I belong.. Southwest Virginia. Thank you so much for this recipe I'm going to try it without the mustard

When I was a young bride I found a recipe for meat loaf that included in the ingredients 1 lb ground beef and 1 lb of ground pork. Well, the only ground pork I knew about was sausage so that’s what I used! My husband loved it! He liked to have a meat loaf sandwich with the left overs.

Tipper,enjoyed the story of how successful Pap's heart surgery was and had many years of good health.When I was 42 years of age,I had a pacemaker put in,the Lord has blessed me with good health since then too.Guess what I had for supper,yep meatloaf,and it was delicious,wife's a good cooker.🙂

My dad, too, had triple by pass surgery. Seven years later had to have 2nd triple surgery. No heart attacks. By pass successful but suffered major stroke right after or during end of that 2nd surgery. Rehabbed for long time. So proud of him. He.was with us many more years. No more deer hunting after stroke. Will try your meatloaf as my hubby's favorite. My mom also made parsley potatoes with meatloaf. The vinegar in the sauce sounds great. Thank you for all your sharing.

Cold meatloaf sandwiches for lunch, is a thing of beauty! My Appalachian family's recipe for meatloaf is two cups oats to one pound meat. Onions , green peppers, tomato juice, egg as a binder. I spice mine up a bit, Tabasco Worcestershire.🙀🐕

Mmmm! Meatloaf! My wife makes a awesome meatloaf. She fixes a potatoe casserole with her's. Use to be mash taters but she got that casserole recipe and I loved it. Talkin about your Pa havin heart diease. I got it too. Had 4 heart attacks and open heart surgery. The first two was on the same day and died both times from it. But thru the grace of God He brought me back to life. Had 2 more since then. He must ain't ready for me yet.

I use oatmeal in place of the slice of bread. But my favorite leftovers is making meatloaf sandwiches with ketchup! Thanks for sharing!

Me too, sort of, I like to use a little of bread crumbs from real slices of bread, a little quick oatmeal, not the instant flavored stuff, and i ALSO crush a few saltine crackers real good and throw them in! I don't have any measurements, but it's fairly straight forward for folks that make some kind of meatloaf fairly regular! And lots of onions!!!! Oh, and Lawry's seasoning and Garlic salt, sparingly though on the salts.

My 81 year old neighbor brought me over a meatloaf the other day when my FIL died and it was the best meatloaf I've ever had. She said she used oats so I'm fixing to try that next time I make one.

The same thing happened with my grandfather in the ‘70’s. Triple bypass and the doctor told him if he didn’t quit drinking liquor every night, and smoking Camel cigarettes 2+ packs a day, he would be dead in 2 years! He was 55. He quit both cold turkey! He lived healthy for 25 more years. It’s never too late for miracles!

That's exactly my recipe (except I never measure). My father loved meatloaf and I made it for every family gathering. After he passed, it took me a long time to start making them again.I usually mix half ground beef with half ground venison.

As a kid, I wasn't a fan of my mother's meatloaf recipe. But, one fine day, I changed my tune real quick! As mentioned in other's comments, meatloaf, mashed taters and gravy is amazing. And, the leftovers are often better! Thank you once again for bringing us all together to Celebrate Appalachia!

I’ve always said meatloaf would be my death row meal request! 😂 I just remembered a look the other day when I told someone I’d been busy cleaning Chester Drohers and they said who’s that? They thought I was crazy when I said CHEST OF DRAWERS. I appreciate your channel & family for sharing all you do🥰

I was in my teens before I figured out that it was chest of drawers. I just thought old Chester was famous for designing the cabinet for holding my duds and general kid junk. I got two drawers and my brother got two. When I finally got 4 drawers of my own, I was serving in the US Navy and living high on the hog compared to my childhood.

We pronounce chest of drawers the same way. When I was little I didn't know Chester drawers was really a chest of drawers. LOL

Nowadays when you buy ground meat at the supermarkets, it has so many chemicals in it, that are mandated from the USDA. It just doesn't seem like the flavors you put in, the spices & all, really sinks into the meat. I re-grind my ground meat. Works pretty good. It gets so hot here in Texas, most of summer at daybreak it's already around 80 to 85° F. Sometimes hotter. It's still around 100°F at midnight. So if it's hot summertime & we want meatloaf, I make it in muffin pans. It takes way less time in the oven.

Tipper, you are the best storyteller. You could make butter churning entertaining. I’m convinced you could make paint drying exciting. I could listen to you for hours. That recipe sounds amazing. I'm going to try it. I especially love a meatloaf sandwich the next day. My Momine (grandmother) made a great meatloaf. She used ground pork 2/3 and beef 1/3. Onions a piece of bread for the crumbs, an egg and a little bit of milk or cream. Her secrete was APPLE SAUCE LOL!! She would mix that all in and top it with bacon then cook. I knew what she put in but company never knew what it was. I make my meatloaf like this and it brings back so many memories. Thank goodness husband likes it too. I have started to feel like a penpal to you. Love your memories. So much like my own memories.

Two loaf pans, one for supper and one for meatloaf sandwiches the rest of the week. Supper meatloaf gets katchup (or catsup, depending on where you are from), and meatloaf sandwiches get mayonnaise... YUM! Generations in my family went from "May God's Will Be Done" to "May God Guide the Surgeon's Hands". So glad the surgery went well and your lives were shared so much longer.

I make a mirepoix (chopped carrots, onions and celery) and cook it until it begins to caramelize. Then I mix it with a mixture of a pound of ground pork and a pound of ground beef; salt, pepper, garlic and oatmeal as my binder. I smoke mine at 200 degrees for a couple of hours and then finish it up (to 160 degrees) at 325. I use my frying pan I caramelized my vegetables in to make a mushroom gravy.

Miss Tipper, that looks really good! My Mamma would use Ground beef, chopped onions, salt, pepper, bread crumbs and ketchup, then she'd top off her meatloaf with ketchup and peppered the top! We loved the left over's for Meatloaf Sandwiches on light bread with mayo! Mercy me... sure do miss my mamma's cooking! However, when I do make my Meatloaf, Mamma's with me indeed! That's what wonderful about family recipes! Our parents may be gone, but their memories and cooking traditions live through us always!

My dad was the main cook in our family when I was growing up. We always mixed our meatloaf with our hands. Dad used to joke with us and tell us that he only made meatloaf when his fingernails needed cleaned. In order to have any leftovers for sandwiches around here now, I usually use a couple of 3 pound packs of ground beef, 1 or 2 onions, a couple packs of crushed saltines, maybe 5 or 6 eggs, ketchup, worstershire sauce, salt and pepper, garlic powder. I just sort of wing it on the recipe. Cook it for awhile and then top with Bar B Que Sauce and finish cooking till done. Oh yeah and dont forget the mashed taters and maybe some fried cabbage.

Love the sound of your meatloaf. Over the years I have made some shortcuts to my meatloaf. I add an egg, oatmeal as a binder then add ketchup and a packet of lipton onion soup mix. For the topping I use ketchup, mustard and a little brown sugar. I don't like bell pepper in mine either. Love your stories as it adds to whatever recipe your showing us.

Thank you for sharing this recipe. I love meatloafs. I love experimenting with different ones. Of course, there is only one Moma's meatloaf, but I think I have improved on hers as well! I've found that I like a meatloaf that is not pressed into a pan. I hand shape my loaf gently on a parchment papered cookie sheet. It comes out perfect everytime!

My husband is 72 and when he was 60 he had a quadruple by pass and he's going strong and fit as a fiddle right now. My meat loaf calls for the burger, bread crumbs, egg, salt and pepper, and a quarter cup of parmesan cheese. I drizzle catsup over the top before baking. Don't ya just love burger cause it's so versatile.

I love adding chunks of cheese in my meatloaf. Mostly little cubes of cheddar but I have found Feta is awesome too. Gotta have horseradish sauce on my meatloaf sandwich.

There were some Gladsons back in an adjacent holler where our homeplace (Dillard) holler was. My uncle Homer married a Gladson girl. The Dillard holler is accessed by Golden rd. and the Gladsons lived off Simonds Chapel rd - the next rd away. I never heard that area referred to as the Ranger area, but my mom in her later years lived about five miles away from the home holler and that place was called the Ranger area. My mom made a similar meatloaf to yours, but I don't put in green peppers when I make it - gives me heartburn. That topping you mixed up is very similar to mom's barbecue sauce for chicken too.

Thanks for the recipe, I'll have to try it. Sounds delicious! I love that you mixed it up with your hands. One of my fondest memories is watching my Maternal Grandmother make meatloaf. I loved watching her little hands mixing up the loaf for our Sunday gathering suppers. And she always had a smile on her face and was usually telling a story when she did it. And if it was a funny story that made her laugh, she was one of those people who "laughed all over"! Thank you for the fond memory.

Now, we take the topping sauce and will also make enough to put in the meatloaf as well. We never put vinegar in it however, a little honey. We put celery or green pepper 🫑 in our meatloaf along with the 🧅. I also from time to time if, I make meatballs and don’t use pasta, I will take and make the same sauce to put over top of meatballs.

What I like to do is take that piece of bread, remove the crust, and tear it up into the mixing bowl, before anything else. Then I add about 2 tablespoons of milk and let the bread soak it up, then take a fork and mix it up until it becomes a paste. Then I add the meat and other ingredients and mix really well. I use 1 slice of bread per 1 pound of meat, so if I'm making 3 pounds of meat, it's 3 slices of bread and about 6 tablespoons milk. With this much, I might put it in the stand mixer with the dough hook and really mix well. The bread and milk paste will make the meatloaf hold together really well. I do the same for meatballs and they never break apart and hold their shape nicely.

I was so happy when my grandmother made meatloaf because I knew the next day my brown paper bag was going to have a meatloaf sandwich in it for my school lunch 🥰

It’s just my husband and I but when I make meatloaf I make 2 and freeze one :). They freeze very well and heat up beautifully as well as being very handy when you know you’re going to have a busy day.

My darling bride is an outstanding cook! She makes her meatloaf with all sorts of additional things. I dehydrate a bunch of different greens every year and powder them all mixed together. She puts breadcrumbs, the powdered greens, chile, other peppers, herbs and spices and the like in hers. It’s easily eaten as a meal unto itself. I love it. She has mountains of cookbooks but she very rarely uses them. She prays over everything she makes and cooks by feel and smell. I’m the taste tester. She and I, in the kitchen cooking together, have made some outstanding meals for up to ten people. I’m the prep chef and she’s the head chef. The kitchen is probably our favorite room in the home. I’m glad things turned out well for your Pap. God is truly good to us!

I'm turning 60 very soon, and thought I was far too young for heart disease, until about May of this month when I started having pain in my jaw and neck, I thought it was anxiety, but in July I found out very differently. I had a day of real pain, I just couldn't stop it and ended up in the emergency room, they did an MRI and admitted me to the hospital. The next morning I had an Angiogram in the Cath lab, I had 2 large blockages in my heart, they placed 3 stents through a small catheter that they ran up through a vein in my wrist, I was even awake for the whole thing, and I've been much better since. I also found out from the MRI that I have an aneurism on my brain, it's small so they are going to wait a year to see if the size changes, if not they will leave it for now. Glad to hear your pap lived a good long life after his heart blockages. I laughed when you said you didn't care for your mom's meatloaf, I never liked my mom's either, and in fact grew up thinking I just didn't like meatloaf, until today when I tried a new to me, very basic and blank turkey meatloaf, my husband proclaimed it was the best he has ever had, and I went back for seconds. The lesson for me is you just have to keep trying things in different ways before you declare it to be a lost cause. Meat loaf is probably the number one meal for me. I grew up with my grandma always having it when I'd come over. Looks good. Good job.

Tip; I use Ketchup for the toppin, its basically what your making. I don't line the loaf pan I use Pam Spray. I also sweat the veggies and I included garlic. Then I use Italian herbs 🌿 like my Granny did back in the late 1800's.

Enjoyed listening .....about your Pap , the cookbook .... I have many like cookbooks too over the years and am thankful for them . I’ve always liked meatloaf and a big one for leftovers ... Meatloaf sandwiches are so good . The way I learned to make it is some different , but I know I’d like yours as well cause I like everything you put in it. In mine for bread I use oatmeal . It’s real helpful to line the pans with foil . Yummy just seeing this prompts me to make one . So good and we love leftovers ❣️

I took a short course on food prep & the instructor said that "all" ground meats have already been processed so much that you don't want to work them too much more. So, I use bread crumbs from a can and a can of diced tomatoes with a little salt & pepper. Make a loaf & off you go. It does not make neat & tidy slices, but it sure is tender & good. None of it EVER goes to waste!!

Just finished watching your meatloaf recipe video. Always enjoy watching new recipes. But I must tell you a story regarding our family and meatloaf. Back in the early 90s our daughter was still in high school I worked full-time and my wife was a full-time school teacher. One night a week she went to Furman University for her masters degree class. That night I stayed home and cook dinner for myself and our daughter. One night I decided to make meatloaf and the contents of the meatloaf we’re going to be all the leftovers in The refrigerator. When I brought it out of the oven and got ready to serve it my daughter was sitting at the counter and had a funny look on her face. I asked her what the problem was and she said dinner did not look very good. I told her it was meatloaf. She said it may be meatloaf daddy but it looks like it has been drug through the gutter. From that night on my meatloaf was referred to as street loaf since it look like it had been drug through the gutter. All these years later I still make street loaf and everyone says it’s wonderful but we put brown gravy over it so nobody has to see it.

I still follow my grandma’s and mama’s meatloaf recipe. My kids loved it served with mashed potatoes and sweet corn.

We're from Gainesville ga and I'm so so thankful that when my husband had to have open heart surgery seventeen yrs ago that we were able to actually have it at Gainesville at the Ronnie Green heart center on the third floor of NEGMC it's considered one of the top ten heart centers in the nation my husband was only fifty one when he had it I was absolutely worried to death about it when I saw all those wires in him I had to leave him so he wouldn't see how upset I was but he came through it with flying colors excellent hospital

I make meatloaf with 1/3 pork and 2/3 hamburger. I add sauteed chopped onions and mushrooms. I use seasoned bread crumbs instead on the slice of bread. Love your cooking and stories of Appalachia.

So glad your paps surgery went so well & added many years to his life! I never really used a topping. The ones I tried that other people made were mostly tomato sauce or ketchup which I don't care for, plus we like how the meat gets a little crunchy on top without it. But the topping you made looks really good! I never had a loaf pan, so I'd put foil on a baking sheet, spray it, & make sort of a dome. One time I was in a hurry so I patted it out into a 9x13 pan. It cooked in about 30 mins, gave us a lot of the slightly crunchy top. I've made it that way ever since! Pound cake, banana bread etc I do in more of a cake pan, & at age 58 i still don't need a loaf pan lol. My aunt made the best meatloaf & she did part ground beef & part sausage, & put small pearl tapioca in as the binder. I don't cook mine long enough for the tapioca. I like to experiment with meatloaf, & the best one I ever made was one with Asian flavors. Soy sauce, ginger, garlic etc. I keep meaning to do that one again & wish I'd wrote down what I did. I usually use crushed up saltines or oats for the binder. I don't like ketchup on top, but I do like a little in the meatloaf.

When I would go back home after I was married my mother would ask me what I wanted for supper. It was always meat loaf, potatoes and bread pudding.

I have to put finely diced celery and bell peppers as well as onion in my meatloaf. I use a pound of very lean ground beef and a pound of ground pork. I use two eggs instead of just one but mine has twice the meat. Mine don't get mustard or tomato sauce, maybe a glop of catsup. I put in powdered milk and oatmeal instead of breadcrumbs and use it to get the consistency the way I want it. I don't put a topping on mine. I like sort of a crust on my meatloaf. Sometimes, when it is done, I turn it out of the loaf pan onto a sheet pan and bake it some more. My meatloaf holds together good so I can slice it into ¾ inch slices and freeze it. I got me a vacuum sealer so I didn't have to waste so much food. The meatloaf lasts a long time like that without freezer burning. When I want meatloaf I take it out, thaw it out and then fry it a little in a bit of bacon grease like you would livermush. Oh yeah, you do like livermush don't you?

I love watching your site. I grew up in East Tennessee and moved back to care for my late parents. I’m going to make this for Father’s Day as dad loved it. It’s just me now so the loaf pan size is perfect for me. We grew up much the same way, not rich but we loved the Lord. Still do...blessings!

My Dad was born in the hills of TN in 1934 and also had a pacemaker and heart surgery in Gainesville, GA. I don’t recall because I was very young at the time, but I have to think it was Crawford and Long. We resided nearby there at the time.

I use my mother-in-law’s recipe. She was from Tappahanoc, VA near Harrisonburg. It is almost identical to yours for the meat mix, but she soaked the bread and squeezed out the water before mixing it by hand with the meat. She added parsley and ketchup (instead of tomato sauce). No topping. I’ve never known anyone who ate it and didn’t love it.

This is the recipe my mother used for years. Only difference is she used catsup in the sauce on top instead of tomato sauce. Everything else is the same. When I make it I use a little water on the bread. It makes it nice and moist. Love your channel!!

I love my mom’s meatloaf. 2 pound ground beef 1 pound sausage 1 onion 1 green pepper( I process in food processor, so kids don’t see them😉) 2 eggs beaten 1/2 tsp pepper 1 cup oats( I also process in food processor until its fine) 1 -8 oz can tomato sauce. Topping is ketchup mixed with brown sugar (not sure on amounts? ) . Makes 2 loafs 300. For 2 hours then 325 for 30 minutes. I make them in Iron skillets , so good!

I basically make my meatloaf kust like that.. but, I am 71 and just found that recipe this year. Before then my meatloaf wasnt very good. But, now we love it.

The best thing about a meatloaf is the sandwiches made from the leftovers -- my fave. The bread crumbs are a filler, I guess, some form of which I seen used all my life, even oatmeal sometimes. I remember the dear lady that kept me before I was old enough to go to school (4 years old), while my parents worked, would use cracker crumbs. Never forget how she did it: would lay one layer of saltines on a sheet of wax paper, cover with another sheet, then work them over with a rolling pin till thoroughly pulverized. I now do this for my hamburgers -- increases the volume without affecting the taste.

I make my meatloaf with the same ingredients except I use some chopped green bell pepper. Also I have used saltiness crackers instead of bread or I may use bread crumbs you buy in the store. Your recipe sounds great. Meatloaf is something you can play around with to get the taste you like. Also my Dad had open heart surgery in the early 80's Also at Crawford Long. It gave him 15 more years of life. I really enjoy your videos. Love your garden and your stories!

Just now watching this one but this is exactly how my mom made our meatloaf (and now me). The only difference is sometimes I take a shortcut and use catchup instead of the tomatoe sauce. I’m with you… no green peppers or other mixes of meat in my meatloaf😊 plain and simple.

Didn't realize anyone else remembered/ate meatloaf sandwiches. Dad loved 'em, Mom, not so much. In her mind meatloaf was for a meal, and never cold. Then again, Dad was the purveyor of fried egg sandwiches too. and the 1/2 inch slices of bologna. At 80+, he's all heart healthy now and would never actually make this anymore, but it's all in the memories.

I process stale bread In the food processor and bag it in the freezer for use in meatloaf. You can use hamburger buns, sandwich bread, wheat bread, French bread etc.

Have one for you to test out. Ground beef, packet of Lipton onion soup mix, Worcestershire sauce, cracker crumbs, finely chopped celery, grated carrots, grated apple, or apple sauce instead of egg. Use to put bell pepper but hubby’s allergic to them. Next finely diced tomatoes, finely diced onion sauté in skillet then 1/2 teaspoon red pepper seeds.Worcestershire sauce, sprinkle in salt pepper and flour make it a gravy consistency. When meat loaf is almost done pour over gravy mixture finish and serve

My family always put the meatloaf on a cookie sheet and floured the outside; no sauce. It made a nice crust. I think my dad would even add mustard to the mix.

My dad loved meatloaf with lots of peppers in it, so that’s how my mom made it. But I prefer it more how you made it. My grandpa would make one with some Lipton onion soup mix in it that I always loved too.

Thanks for sharing the story and the meatloaf recipe. I like the meatloaf recipe, because it's the type that you can add to if you wish. Our mother had triple bypass done, but it did not go well for her remaining years of life. We were happy that we had her for as long as we did. Bless you, looking forward to the next video.

It's so interesting to hear about other people's favorite way to make a dish. Love to get new ideas! My favorite variation includes ham and mozzarella in the middle of the meatloaf with a topping of marinara. Glad the surgery was a success. Thanks for sharing your stories and recipes.

We love meatloaf and Butterbeans. Mother always put bell pepper in hers, so thats the way I’ve made it for over 52 years, but I will eat meat loaf any old way. Yours sounds good too. Thank you Tipper.❤
