it's actually one of the most delicious cheeses i've ever eaten. tried it in our restaurant for the first time :D it's so soft.. it falls apart easily if you are not gentle with it :'D the taste is really milky, it's delicious haha

Pulling it while warmed in the hot water is what forms the texture.

the stretching (with the paddle) is done until the cheese is shiny and smooth. most people stop when it's just "elastic." not sure about "secret" but it's how it's done

@@EAMHD0000 i've tried it with very hot water and it gives good result. Around 90-100°C. Because this process is basically "cooking" the curd so it become stretchy

We did everything here. We made the curd, separated it from the whey. Then, we added salt and hot water. However, it did not form a nice uniform structure similar to the one in the video. We stirred it for 40 minutes with hot water, yet it remained as little pieces.
