Using the normal craft stick is possible but they are a bit shorter (1.5" or 3.8cm shorter) so you may need more pieces to get the same lengths or just reduce the scale by that much. For the glue, the Gorilla brand general glue is pretty good for this purpose. For other general purpose glues, I would just do a quick test by gluing two sticks together (1/3rd of lengths overlapping) and try to separate them by pulling it from both ends in the same direction as the sticks. If it gets separated easily, it is not a suitable glue.

Using high strength wood glue will be stronger than using glue sticks!

Hi A J. Yes. It is possible. If you want to reduce the span of the bridge by a large number, I suggest to reduce the depth and width with about the same ratio as well so it all look kind of proportional.

Well 1.5' is way smaller than the original design so you will need to use smaller stick types. If you want to achieve somewhat similar proportions, I would say make it 3" deep in middle, 1.5" at ends and 2.5" wide. However, depth has a direct relation to the strength so maybe a 4" middle, 2" end and 3" wide is better.

Sure can but it may reduce the load capacity unless you are referring to the sticks I used for the deck which are non structural.
