I dont know how i came up with my info but... my custard i use 18 egg yolks whipped for a gallon. I use a quart of cream and quart of milk and 24 oz of sugar and one whole bean. Again i believe i got the info from maybe another vid of this series?.. also too the fun is experimenting. I get the cream for free at work so i have also used two quarts of cream which is rich. constix Yes you can use pure vanilla extract. Do not use imitation vanilla extract, for it loses it flavor during the heating process of the milk/whipping cream or half-and-half heating process.

I think you can generally make anything with this base, just replace the bean with strawberry extract. I used it for peppermint ice cream and it was fine.

Which is better for taste, texture, price, or as a stabilizer? Good question as I've never heard of cornstarch in ice cream before -- gravy and pudding, yes, ice cream, no -- but it makes sense. Almost everybody has cornstarch in their kitchens or pantries. But after researching it a bit I have noticed that you need to use from 2 to 5 times more cornstarch per 4 cups of liquid than locust bean gum. Cornstarch is by far cheaper and can be found everywhere, while Locus bean gum usually requires a special order and a much higher price tag and may also include a shipping and handling charge. Corn starch costs about .07 cents on average per ounce and locust bean gum costs about $7 dollars per ounce for small quantities but gets cheaper by the bulk. Since locust bean gum has a shelf life of about 12 months after opening, bulk buying is out of the question for me. Your needs may vary.

This is way too fiddly for beginners. It does not state how much of everything you need. I suggest anyone wanting to know how go look at some other vid's. Normally the vids where people are doing it at home are the best.
