What do you think about custom rotisserie smokers like Heartland or Semo vs a gravity fed if selling to the public as a means of supplemental income?

With a question like this I don't think you're properly prepared for serving the public. Chain restaurants serve the public with microwaves, stoves, fryers etc. The equipment is almost the least of concerns lol
