Ingredients for the mousse
2 pcs. large size mango
2 tsp. gelatine powder (10 grams)
1/4 cup room temperature water
1/4 cup boiling water
250 ml. whip cream or all purpose cream
1/2 cup chilled condensed milk
ingredients for the cashew wafer
1/2 cup or 110 grams ground cashew nuts
(roasted)
4 egg whites
1/2 cup white sugar
bake in a pre heated oven at 150°C for 40-50 minutes or until crispy.
Chocolate mirror glaze
1 tbsp. gelatine powder
1/4 cup room temperature water
150 ml. whipping cream or all purpose cream
1/2 cup sugar
1/3 cup cocoa powder
Whip Topping
1/4 cup whipping cream
sliced mango
