Many people visit the famous Katsudon restaurant in the basement every day
We asked to photograph Koto Koto, one of the most popular katsudon restaurants in Sannomiya's Center Plaza, which is home to many restaurants that serve katsu, including Kibei and Stamina Curry, which we introduced previously, as well as many Western-style restaurants.
The restaurant specializes in donburi rice dishes such as oyako donburi, egg and meat donburi, and katsu donburi, all made with safe and secure ingredients.
The dashi broth, which is the key to the flavor, is made using an unbelievably large amount of kombu (kelp), and the aroma of the broth spreads with every bite.
The dashi broth is prepared every morning, and if the taste is not to the restaurant's satisfaction, the restaurant is closed.
He says that the reason he became so particular about the ingredients is because of his child's physical weakness, and he puts this thought into every dish he makes at the restaurant.
The katsudon, which the owner puts his heart and soul into, was truly delicious.
