My Mom and Dad ran a restaurant in Tennessee in the 50’s and 60’s and I just love the nostalgia these recipes bring to me. I have made the chicken fried steak (pork) multiple times now and we love it. My personal favorite is the squash and okra. Mama did not add squash to our okra but I really think it adds to the flavor. Thanks for the memories of Henry’s Restaurant on Highway 41 in Haletown, Tennessee.

I used cornmeal in your chili recipe to thicken at the end instead of your flour/water mix. Was happy to see it make an appearance here.

That's how we ate it when I was growing up except mom would chop up onion to cook with it because Dad loved onion. Mom would also put a bunch up in the freezer to eat year round. She'd fry it half way done then freeze it and it kept really well. We always had a huge garden and we had to pick it every day and there is nothing in this world quite like a fresh picked tomato.

This is the only way I had okra growing up. Cut it up fresh and shake it up with cornmeal in a ziplock back. Still make it that way. Also fry up sliced yellow squash the same way. Never tried them together though!

My momma was from Wellington TX and just coated the okra in corn meal and fried it in grease. Your daddy's version looks tasty too. But most what I expected to see you do was hoist that pan up when it came time to plate it. The one-arm, cast-iron skillet hoist is one of my strength goals.

Okra is difficult to find in Spain, but we have a similar dish, but with zucchini and potatoes, which are pan fried until they form a golden crust and then eaten with fried eggs!

@@halbritt It's usually referred to as Zarangollo, but most recipes you'll find will call for scrambling the eggs with the potatoes and the zucchini.

Never had okra before, have rarely seen it "fresh" in the grocery store up here in Canada. I'll have to look for it in the frozen section and give this a try.

I cook a similar dish early in the garden season, add some chipped up potatoes and a little flour with the cornmeal.

in northern yankee land we can get fresh okra at indian markets. i think they either ship it in from way down south or grow it in greenhouses. frozen okra is always available though and might even taste better in a recipe like this

Northern Yankee here, been eating okra for decades. It's in every Indian restaurant, since Indians have been eating okra for, idk, several thousand years.

Burnt okra like that is great. I hold the squash to the side and flash it really fast. Whole baby okra flashed in olive oil or just just steamed, also great, salt it people. I am not so big on it in liquids except Gumbo. Gumbo is all about the roux.

Why did you put the butter in? It would have been vegan otherwise and I would have loved to taste that. There was more than enough fat in it already. Looks delicious nonetheless. peace.

Because food fried in butter is delicious, and because not all fat tastes the same. Pan frying with butter gives a different flavor and texture from pan frying with olive oil.
