Sautéing is one of the quickest and most versatile cooking methods. It works well for almost any small cut of meat or fish. Martha demonstrates how to dredge meat or fish in flour and the importance of cooking over high heat to achieve a perfect, golden-brown finish. She’ll use these techniques to cook wiener schnitzel, chicken piccata, and sole à la meunière - and also show how to make flavorful pan sauces to serve as accompaniments.

When I lick butter off my fingers I do a happy dance. I'm convinced Martha did one inside her heart. I adore these classes. Lately, I've been making more detailed, time consuming meals. This lesson brings me back down to how simple is fabulous!

I love to make chicken piccata and I believe having a thick, high quality stainless steel pan is very key so that you get even cooking when sautéing

My late father used to cook calve's liver the same way schnitzel is made. He would serve it with mashed potatoes and sauerkraut. So basically he made liver schnitzel and it was pure heaven to me.

We always had liver with mash potatoes and fry'd onion and apples. Dad was frying the thin sliced apples together with the onions till golden. Yummy

Interesting liver cooking! I'll try it. In the Philippines, we soak it in soy sauce with lemon juice & pepper before frying, and no flour. We love it a bit rare. And, we top it with the sautéed onion rings, that was cooked on the oil after the liver was removed. We call it Pilipino Liver Steak. Some even add sweet green & red peppers to the sautéing onions. It smells so delicious when cooking!

LOL. I know. All the chef's do that. I use salted butter and skip a bit of the salt in the recipe. It works just fine.

I can't stand the taste of liver.my mother would fix herself liver and onions for her lunch while us kids were in school and dad at work. She would use the same grease and pan to fry cubed steak for supper. I always had to taste a small piece of the meat to make sure it was not liver because it sure smelled like it.
