Beautiful work. How long can I keep it in the fridge before moulding it? And if dry on getting out of the fridge, what is the secret ? Thanks

You can store Marzipan in fridge for atleast a month. But it will start sweating and get a bit sticky once you get it out from the fridge. Then it will start drying out again. But then kneading it into a dough might be troublesome. If it dries out use rose water and knead it again.

the marzipan does not dry fast, you can work with it and let the individual fruits dry. if You are talking about the Neutral gel it gets dry after some time and does not stick.

Neutral Gel you can purchase online or in any bakery accessories stores. stems I have made them myself. You get them in bakery accessories stores during christmas too.

These stems I have made them myself. leaves are made of foam with tooth pick wrapped in green floral tape. You get ready made ones in bakery accessories stores during christmas too.
