At 2:35 I understand that the polo is switching from road mode to stage mode, but what internally causes the idle to change so significantly?

It sounds like an closed/opened exhaust valve to me. I think in road mode is it closed to keep the heat more/longer in the engine to warm it up and is opened at the launch to have a freeflow at high rpm

While activating launch control, the ecu instructs the car to set boost and the anti-lag to the most aggressive level. The anti-lag on this car is so immensily aggresive that it increases the overall db of the car.
