I love how Becky includes us, her audience, when she says “our” whatever she is doing or the whatever that “we “ preserved together. I feel vicariously as though we are there “helping” out. Well, sort of. You know what I mean, I am sure!

I think it works BOTH ways, Josh is also a blessing to her. He is talented with the wood work and helps her clean the house. He is a perfectionist so you know that he does a GREAT job!!!

Agree! There are soo many options and so many are really expensive so it's hard to decide. And reviews help but when they all have the same star rating or all good reviews, how do you choose?!

I hate to plug a youtube channel in the comments, but seriously if you've never seen the youtube channel "Vacuum Wars", check it out. He has IN DEPTH comparisons/reviews and pretty much gets every vacuum that comes to market.

Before randomly getting a near silent one I didn't even know that was possible. So I would highly suggest finding one that isn't loud. I could use mine while talking on the phone for exmaple, no problems.

I can and am disabled. You just work out ways to be able to do it. I put empty canner on stove, then add required water, then jars, one at a time. Heat canner and follow instructions. When time is up and pressure falls, let sit 5 to 10 minutes; remove lid and carefully remove jars one at a time. Hot water bath, I put water in after it is on stove; when finished I dip the water out of the canner.

@@shayshaymann113 Maybe, but lifting the whole canner filled with water wouldn’t be a very practical way of handling it. Besides, I would never be able to lift or carry even one of those electric ones, even if it weighs much less than a big stovetop canner. It’s still very heavy! I would for sure have handled it like @Georgia Gunn describes in another comment, and I would use the same method for a larger one as for the electric one. It’s for sure easier to set and not have to babysit the canner, I see that, but that’s a whole other matter - not disability-related. 🤗

@@treasurespastnpresen my arms and hands are disabled, so the big pressure canners are too hard to lift. The electric canner at counter level seems like it will be more manageable for me. You are definitely right about finding ways to make things work, I may be slower, but I get stuff done! 😁

That’s exactly how I would do it, and it’s pretty much how I handle my instant pots, even if they’re smaller (3 and 6 quarts). 🤗 I just don’t understand the difference between an electric and a stovetop canner, the only advantage I can think of with the electric one, is that you can place it beside the sink, so you can fill a pitcher with water and not have to carry it, you could just lift it to the canner and fill it up - clearly easier. 🤗

Becky, when you blend eggs in this kind of blender usually eggs don't rise. It's something to do with blades cutting through egg protein particles. Did this couple of times for baking and stopped as everything came out deflated :( hand whisk or mixer does the job the best especially when using cottage cheese. Cottage cheese itself becomes chewy while baking sinking eggs as well. I would probably use ricotta cheese instead. Great video as always. Cheers from Toronto, 🇨🇦

Yeah this is also why cutting lettuce and herbs and things is a no no but ripping them or grinding them like mortar and pestle style is how youre suppose to do it. Changes the structure of the cells and they brown badly with the metal on them which also can alter texture/taste of the usually aromatic oils of herbs so will taste more bitter with cutting/metal than it would with ripping and grinding. Its crazy how much the "how" matters when cooking. And really most people think fresh food is best and sure if youve grown it it is but if not frozens healthier because it keeps the item as nutrional as possible. Kinda like freeze drying vs freezing. Freeze drying is better but its also way more expensive and inaccessible to most people. And the fact is unless youre preserving up garden produce or meals regularly that youll likely never actually need one and can just stick to freezing stuff. Its so fun to see all these sort of experiments and variations in cooking that even if you cook a recipe correctly just a drop of water can prevent a meringe or spoil chocolate tempering. Thats why its always good to know the basic food science behind cooking so you dont blow up your blender with hot liquid or crack jars with temperature shock etc.

I took the plunge! I bought about 12 pounds of ground beef and made some meals to freeze. I made 3 pans of lasagna, 2 loaf pans of meatloaf, a dozen meatballs (needed to see how they turned out first), and a huge pot of chili! I just finished doing dishes, except two pans and I'm tired! I hope you have/had fun at the conference!

My husband read somewhere that pregnant women should not vacuum so when I was pregnant with my first (22 years ago) he took over the vacuuming and never gave it up. I do not complain 😊

It’s also especially important not to vacuum post partum as it activates those muscles that are trying to heal!

Just a quick tip for next time.... When you have to dump the hot water during canning to get the next batch in, use that super hot water as a way to start soaking your dirty dishes. Makes clean up that much quicker later! Also, love that you always keep it real! You're doing great and I really enjoy your videos! Keep up the great job mommy to be!! 🤓🐺🐶 You're such an inspiration and keep me focused on why I am the way I am. So nice to see someone else that genuinely appreciates and enjoys the home grown process!

This question is not specific to this video, but I (and possibly many of your fans) are interested in noting exactly how you keep track of meals and quantity of other items you have in your freezers. @@georginaleavell5140 I don’t think she keeps track of it per se. I think when she sees that there’s no meals available, she’ll do a batch cooking session and refill her freezer with family meals for 6-8 weeks. It also seems like she gathers basic ingredients needed for most of their meals. With bulk gathering, she’ll scale up/down based on what was used in the past year. It seems like a smart system that works for them.

Some onions seem to make me cry more than others. I heard that keeping a bowl of water nearby helps prevent crying too. I'm going to try both methods next time I cut onions.

Just a FYI for you. Hope you've heard of Rose Red Homestead. She's a lovely older professor that's an expert in canning. She tested the canner you have ( I also have and use this model), and it did NOT reach the safety temperature for canning spaghetti sc. She uses an auger to test her canned goods. Please, be safe.

Anne, please don't misunderstand me. The Presto electric is very safe. I know that because of watching Rose Red test so many things in it with her testing equipment. The only caviat is no thick sauces and cube rather than puree pumpkin, etc. I've been very successful at canning all types of meat, soup bases dry beans, etc. The thick er spaghetti sauce was her only fail in it That's why I warned Becky. God bless all who pressure can.

I’m 57 and I just started canning. No one in my family ever canned BUT I AM LOVING IT!! I’m raising my Grandson && I get him to help harvest and such also!! I’ve WB canned a few things (we LOVE the spicy pickled Okra) - I did “assist” PC apple butter. I’m SO nervous to do it by myself. Seeing you use your Presto Electric PC MAKES ME WANT ONE!!! I wish I had an Amazon Wish List!!! Lol

I just started a couple of years ago. I got the IP Max based on recommendation fromRoseRed Homestead who tested all the electric canners. Only Presto and IP Max passed test and IP was less expensive (and I can make my own yogurt, lol) so IP it was. Only drawback is it will only do pints. I may treat myself to the Presto for the holidays so I could have a quart option. I’m only one person though, 🤷🏼‍♀️. Happy canning! I love it, nothing goes to waste anymore.

I've been buying precooked bacon. Costly, but every time you know how many slices you get. I've been obsessed with bacon and tomato sandwiches on seeded bread- toasted(not a big fan of lettuce on them!)!!!! It's the same thing every summer, than nothing for the rest of the year!

You can also batch cook breakfast sausage the same way in the oven. Sliced just like you would for patties and bake on parchment paper. Lunchroom ladies are a wealth of knowledge for big batch cooking! I learned a lot from them over the years. Dough scrapers are not just for dough they are awesome for cleaning out bowls!

A tip for avoiding the burn while cutting onions: place a wet dishcloth next to the chopping board! The acid in them is attracted to the nearest water source - usually our eyes. ❤️❤️❤️

Terri, thank you so much 😩! I'm trying to figure out "work/life" balance with this new "job". It took me 16 years to figure that out workling in Vet ER/Rescue. :P I garden /read to escape. Social isolation absolutely effect's every aspect of your health. My inner-explorer is suffocating but hey, gma's 94. It won't be forever. Caretaking is insane. Dementia is insane. The world is insane. But these tomatos I grew are delightful and I think i'll dehydrate them to thicken up my sauces 😂 (just keep swimming!)

Cole - try some dehydrated tomatoes on a sandwich too. My family loves them just for snacking too. I put Italian type seasonings on them before hydrating if for snacks but no salt until after dehydrated as it pull out too much water. Prayers you find peace soon.

The next time you make the egg bites? Up your oven temp to 350. And add some milk, or water to your mix. That should give you the puff you want. Maybe a fourth of a cup of milk with the amount of eggs your using. About an eighth of a cup if your using water. It doesn't take much. It'll work though. Lol. Puffed or not, they looked fantastic. 🥰🥰🥰

I think cottage cheese is 1/4 per 6 eggs. I make in instant pot with silicone molds. I use a Swiss Gruyère mix I put bacon on bottom off egg bite mold

How great wouldn’t it have been if Instant Pot and other brands could figure out a way to make their pressure cookers with a canning setting! I bet many would have loved being able to have a huge Instant Pot to use for canning and pressure cooking larger portions for special occasions and for the freezer! It’s too bad having to buy an electric canner and an Instant Pot!

Watching you standing for long time periods while you teach and entertain us all, I think you might want to look into getting a cushioned floor mat. I think they are even referred to as fatique mats. We have one in a craft room where we stand to do some of the phases of our crafting and it has been a blessing. and we don't even stand as long as you do. Love watching your videos

I have numerous bags frozen with jalapeño poppers! They are such a good snack. I half and de seed , then fill with a cream cheese, cheddar cheese and bacon mix. Freeze on a tray then transfer to a bag!

I got into the habit of adding tomato powder to my sauce a few years ago and it makes such a difference in the texture. I love Jessica too, she is so sweet and innovative with her preservations. Jamerill has been doing a ton of preservation too. This is the most wonderful time of the year! Have a great time at HOA.

I recently saw a video showing how to overwinter pepper plants, because they are perennial. It gives you a head start next year. Maybe you can saves some plants from your old garden this way. Love your videos, they really inspire me to do my own little projects.

Yes, i do thia almost every year with my hot pepper plants. It os just very important to thoroughly rinse yhe plants before bringing them in to get rid of pests. Khang starr has an excellent youtubechannel all about hot peppers. He explains in great detail how to grow, propagate and also overwinter them and make hot sauces.

Becky, you have another BIG POT to cook hot sauce (or whatever else) in! (The one under the freeze dryer 😊. We usually drain ours into a 5 gallon 🪣, maybe this will let you bring that pot back into the kitchen on big cooking days. Thanks so much for your videos! I look forward to them every week. Harvest Right says to defrost the freeze dryer EVERY load. Please follow manufacturers manual even though some like Becky say different. Its a very expensive machine, and you want to make sure you follow Harvest Right manual.

On the electric pressure canner, you can hold the arrow button and skip the heat jars and go straight to pressure canning. It saves about 10-15 minutes depending on the heat of your water.

Sometimes when I'm feeling overwhelmed with all I have to do I use reverse psychology on myself! So instead of writin "TO DO" list I keep a list of what I've done. This eliminates and guilt for what I've not been able to complete. I title it "TODAY I'VE DONE:" and have no expectation of a certain number of tasks thar are listed because I HAVE accomplished something!! This gives me a sense of accomplishment to see all that I've accomplished in a given day..

Use an empty vinegar jug for the defrost line to your freeze dryer so you can use that stainless pot!

Becky I sure hope you saved some of those seeds from the peach peppers to have for next year! 😊 Also, we write on the Mylar bags, with a waterproof sharpie, exactly what’s inside. We do store some things in jars as well but the majority of our FD foods go into Mylar bags. That includes single items as well as whole meals.

I feel you! So far this week I’ve put up 52 pints of applesauce, 23 pints of salsa, and a batch of dehydrated apple slices. I’ve done them all with my electric canner and for jars lids. It’s been so much easier than my traditional water bath canner, and all jars have sealed! Thanks for the recommendations! I still have more apples to dehydrate, more to sauce, and some to make into pie filling. The guys are up on an elk hunt, so I’m trying to get all the produce put up before we have an elk to process. There’s still tomatoes and green beans in the freezer to handle later, but they’re at least stable.

Added another 24 pints of applesauce today, for a grand total of 76 pints of golden delicious applesauce. This needs to last the whole family 2 years. Hopefully it’s enough. My kids and grandson love my applesauce 🙂

Yes, same! I used to put off using my appliances bc cleaning them took longer than grating a few carrots by hand, but Becky taught me to prep in bulk and freeze to save myself some time (and clean-up time) when I actually start cooking!

Those tomatoes look Sooo good . My heart breaks seeing you put those gigantic tomatoes into that pot all I could think of was all the tomato sandwiches I could eat and fried green tomatoes . 😋😋😋😋 I can’t afford a freeze dryer so I am buying a hanging vegetable dryer for herbs mostly. I always make 48 egg bites, put most in foodsaver bags and keep 12 in my fridge and freeze the rest. They thaw perfectly. I don't use miffin liners. Spraying that oil on the liners creates exactly as much cleanup as speaying the inside of the tin because you got it all over the tin anyway. The egg cups slide right out without the liners.

My 10 tray SS Excalibur dehydrator is a dust collector now that I have the Large 5 tray Freeze Dryer! The only things I can think to use it for is fruit leathers/roll ups & jerkey! That’s it, the FDer is so much better. I know the older ones had problems but these ones today are fabulous! My hubby wanted to stop me from buying pre-packaged Freeze Dried food and the only way was to order one! Canning is ‘Old School’ for most produce. It destroys so many nutrients! I FD individual items and vacuum seal in jars or Mylar bags depending on how long I want to keep them. Great for Preparedness if you have a large harvest or purchase. Good Job Ms. Becky! ❤️
