Just had to share. My 6 year old was cleaning some lego blocks earlier today. She pulls her shirt out to put blocks in to carry and says "mommy look, I'm doing like Becky!" 😂 She's seen you use your shirt and the Roo apron a lot lol.

Freeze dry your tomatoes! I have been cutting my San morazo tomatoes in half. Then freeze dry. Once it done I use my food processor to make a tomato powder. Just rehydrate the powder with water to make instant tomato paste or tomato sauce depending on how much water you use. It's been a game changer here!

In Greece we freeze bell peppers every year so we can have stuffed peppers in the winter . They freeze very well but you have to take the stems and seeds out beore you do it .

My grandmother had six huge blueberry bushes that were prolific. Her blueberry tip was to put them in the fridge unwashed and only wash what you were using. They last a lot longer that way.

I have frozen bell peppers which I cut in quarters. I make stuffed peppers from them by making them into a casserole instead of single peppers. Just lay the peppers in the bottom of the baking dish, and top with the normal stuffing ingredients. Once baked up, I cool them off, then a vacu pack them in portion sizes. Works well, and I don’t have to by peppers in the winter.

You can blanch the whole peppers (without seeds) to soften them. They don't need to much place in the freezer. Then you can unfreeze them a little and put the stuffing in.

I'm amazed by you! While I was able to work full time without many issues while pregnant, cooking was a completely different story! I couldn't cook meat to save my life without running to the bathroom to throw up. Congrats on all of your life milestones and for the joy of harvest/preservation season!

I have started adding some celery to my cucumbers and onions when making refrigerator pickles. It is surprisingly good in there. Also, pickled celery adds a little something special to tuna and chicken salad.

I freeze my peppers by just slicing them in half and removing the inside for stuffed peppers. It works really well.

Yes this is the best way to freeze them. So easy and you can still stuff them or slice them up for something else.

I got rid of that worthless double sink. I had large farm sink installed. LOVE IT!!!!!When I need some soapy water, I just pull out a little plastic tube. It is great to wash those late bowls. AND big enough to wash the refrigerator shelves with easily!!!

Since you do so much processing and preserving each year, when you finally get around to remodeling your kitchen you might consider adding a clean up station with it's own very deep sink, drainboard, pot and bowl storage right there. You can get commercial stainless units with a counter on one side and drainboard on the other that are all one integrate piece which makes clean up and sanitation a snap. They're not so pretty/fashionable, but they're extremely functional and durable. That way you can deposit all your dirty stuff there in the deep sink as you finish each individual project to deal with later and still have your main sink available for your next, next and next projects throughout a given day. If you decide to put in that second dishwasher, that would also be the area to put the one for all your pots and pans! By the way, you have so many different appliances that I assume you also have a food processor? I'm pretty sure I've seen you use it shredding cheese. You can also use it to slice up cucumbers and grate up zucchini in seconds. We just made up a batch of sour kraut with ours by quartering the cabbage and running it through using the slicing disc. In less than 10 minutes we had 1/2 gallon of sour Kraut prepped, jarred and fermenting AND everything cleaned up and put away. We also make a cucumber and onion pickle like the ones you make (sans the sugar, we like ours more savory) and I slice up both the onions and cucumbers with the food processor as well. Saves a ton of time vs slicing everything. Great video as always!

Tip: even easier than muffins! Line a half sheet pan with parchment paper, and spread a double batch of batter in there. Takes only 20-25mins to bake because it’s thinner, and they are easy to slice into portion-size squares, fit neatly into freezer bags and reheat nicely with 30sec in the microwave plus a trip through the toaster - the outside gets so nice and crispy from the toaster too! I have found this to be the fastest way to prep sweet breads for the freezer.

When making muffins, I use an ice cream scoop with the release lever to get that batter in the tins. Quicker and tidier when it is time to clean the tin. I am definitely putting blueberries in my zucchini bread next time, that looks divine. !!

Whole peppers freeze beautifully, my mom does it all the time so we can have stuffed peppers during winter - you just clean them (take out stem and seeds) and throw them in the freezer. :)

Every time I see a new video of yours I set aside some 'me' time. My personal motto has always been, 'Learn something new every day ', and in watching your videos, I always do. You amaze me with how young you are with more knowledge than many oldtimers. Whether you're self-taught or came from a family who instilled the importance of being self-sufficient, you learned quite well. My mother grew up during the Great Depression in a home with no running water or electricity in southern Alabama. I'm so grateful for the treasure of that same knowledge. She made certain her daughters learned everything you're showing others. Some of which are lost arts. I giggle at myself. When I saw my first couple of your videos, I assumed you had a massive extended family that you fed every day. Becky, you are truly a treasure.

When I bought my pots and pans 50 years ago, the salesman told us if you place 1/2 cup or so of baking soda and water in the pan it will help get the burned (popcorn etc,) marks off the bottom of my pans. It has saved me more times than I care to admit. Sometimes it was so bad, I had to do it two times, simmer on stove a few minutes and let it soak. It works. I am enjoying watching you this weekend, I am resting as I did lots of canning this past week

I left a stainless sauce pan with broccoli in it on the stove and burned burned burned it. I put some vinegar in the pan just to cover the bottom and turned the burner on until it boiled. The burn came out like magic! I was so surprised.

I've overcooked hardboiled eggs years ago in my stainless steel Dutch oven. Did the same procedure to rescue the pot. Still use that pot on a regular basis.

Out of high school I tried culinary arts classes and fell in love with the restaurant dish washer! Girl! If I remember correctly it took 15-30 seconds to wash everything that fit in the trays. When I renovate I'm planning a normal home dish washer in the main kitchen and hiding the restaurant dish washer in the butlers pantry for the big dishes. I know I definitely want the restaurant dishwasher but still deciding if I want the regular dish washer too. But I am going to put my freeze drier in butlers pantry too. Love your channel! Becky, you need a dishwasher like they have in a restaurant. You load the tray, put the items in, and a couple minutes later the entire cycle went through and washed them. It takes all sizes of dishes!

Handy tip - when grating carrots or zucchini, I don't cut the stem end off and that leaves me a little nub to hold onto when grating so I don't grate my fingers. It just makes that last little bit a lot easier.

If we are dreaming, I would have 2 driers in my laundry room. It takes 2x as long to dry clothes as washing takes. I would have 2 dryers so one could be going while a second load was washing and then I could throw that load in the second dryer. It is so nice especially when the babies start coming. They come with a lot of laundry. Lol

Hi Becky...fyi...I make my stuffed peppers and freeze them before baking them. My husband prefers the peppers softer so freezing them first works perfectly. I also make up "soup" bags. Just prepare carrots,celery,and onions from the garden all chopped and ready for soup...all winter long. Enjoy your day

You could use half cup scoop to fill muffin cups. Makes it a tad bit easier and all muffins are uniform. Love watching your videos.

Becky…I just had to share. I harvested our celery today. We live in a condo so all of my gardening is done in containers and one of those 4’ long raised containers from Sam’s. Anyway I ended up with 2 very full quart bags of cut up celery for stews/soups and 2 quart bags of leaves/scraps for when I make broth to put in the freezer. Not bad for a whim of an experiment! You’ve also got me thinking about getting a green stalk for next year to make use of vertical space since I have such limited space. I am starting to plan next year’s garden already!

I had two dishwashers in my last home...it was wonderful! It was cheaper to buy a dishwasher than a cabinet so that's what we did!

You can always freeze pie filling in a pie plate covered in parchment paper, remove from the pie plate and then seal in air tight bags. That way you pull out a pie shell, plop in the filling and bake! I make small pies in the flavors only a couple people like and I don’t have a huge amount of pie going to waste.

Thank you for always being real and sharing your knowledge! I recently started watching because I am trying to figure out how to eat more at home and also have a garden. Ours is small but we have a 14 month old ACTIVE son, 2 dogs and a retired horse while working full times jobs. I love that you wear your hair up in a “bun” per say bc that is my signature doo down here in SouthEast TX. Speaking of dishwashers - my parents entertain A LOT and she wishes she would have put in 2 dishwashers as well! Thankfully the area where her hideaway trash cans are on the other side of the sink is perfect for another dishwasher. So you are not alone in that sense!!!

In my last kitchen redecoration, I had a large farm sink, the best, (gone are those worthless couple sink). It's great for the large pans and to wash those impossible refrigerator shelves. I LOVE IT!!!!

You can use your oven to freeze dry. I use mine at 100° c with fan.

11:34 - Instead of putting the towel in the bowl, put it inside a large plastic bag, fill it up with all the wet peppers (or other veggies, lettuce or whatever), go out on the floor and start swinging the bag around quite quickly for a little while. Then your arm and the bag works as a huge salad spinner/centrifuge and all the water goes into the towel and your peppers will be nice and dry! I dried wet veggies like this for many years, a couple of decades, now I own an Oxy salad spinner, but still also use this method (often it’s easier than pulling out the spinner!)… I had just seen how those spinners work and I used to «self spin» ketchup bottles and such to get out the last ketchup, so one day I just decided to try drying lettuce like that and a minute later I knew that using centrifugal force like that really works and I’ve done it ever since! Now you and others who may read this, can enjoy this method too! 🤗

Did you know pepper plants are perennials??? I just watched you tube video from Next Level Gardening called, "Over Wintering Your Pepper Plants" . I'm so excited to try and get a longer production time for my peppers next year by having the plants already established. Maybe you can get even more peppers that way too! Love your channel. I am 59 years old and I have never had a dishwasher. Been hand washing dishes for 52 years. Even worked in a restaurant washing dishes for a $1 a hour when I was a teenager

Hi Becky I'm sure you may have been told this loads of tiimes before but try using a large ice cream scoop for putting cake/muffin batter into the cases. It's so much easier than using spoons and less messy too xx

Becky, thank you for reminding me of the years I spent preserving & cooking for my family. You have encouraged me to get back to freezing & canning in bulk. BTW-- try making corncakes (think cornbread pancakes) with fruit or bacon lardons & freeze them. Great quick grab & go meal. [I always take 1 to 1/2 Cups of flour out of the cornbread recipe & substitute more cornmeal for this.]

Regarding fresh blueberries…..I freeze blueberries on cookie sheet then transfer into bag. Then you can easily take out what you need without them being a big frozen clump. Great for cooking with, not snacking.

Don't let the baking intimidate you Becky. Making some mistakes is how we learn. It's meant to be fun.I was a better cook, but now I actually like to bake more. I have a serious sweet tooth, so for me it was a necessity 😁 similar to when you did your Christmas cookies, just follow the recipes the best you can and they should come out fine. Use your measuring spoons and cups😘💓it never hurts to add a couple of drops more of vanilla now and then...

We keep the lids from our 16 oz peanut butter and use them on regular mouth jars. Both Kroger and Food Club brand pb lids work great.

This video was great. I learned how to make refrigerator cucumbers and a pink sauce. Both were something I will try to do. FYI try freezing whole peppers. They do great. Just wash and freeze. Then take them out and let them thaw a few minutes and you can core them and use them in anything your cooking. Easy peasy.

My granddaughters watched your video with me and asked to make the muffins. My very picky 3 and 6 year old granddaughters loved them and so did everyone else! I used some zucchini I had in the freezer and didn’t drain it so I ended up adding another cup of flour.

Another amazing video, Becky!! If anyone is considering getting a freeze dryer and you are able to, take the plunge! I love it! Just finished mushrooms, basil, spinach, chicken broth, and vegetable broth. I figured after a few cycles I’d let it rest a bit lol. It’ll be going again this evening with more basil, bell peppers, zucchini, and yellow squash. I love the fact that if I have something that won’t be used quickly enough, I can freeze dry it for later. My freezers are usually pretty full at any one time. I dehydrate also but Becky’s video of the comparison of both ways is what pushed me to get the Harvest Right! I am just amazed how much better the food tastes after being reconstituted vs dehydrated. And no, I don’t work for the company 😁

@@toniburnham4213 I have the regular premiere pump that comes with it. I didn’t have another $1500 to shell out. Sure would have loved to have that though! It’s not difficult checking and changing the oil. Would I prefer to have the no oil? Yes! 😃

Stuffed peppers are so easy to do they keep there shape and taste. Stuffed cabbage leaves freeze well also.

I freeze my green peppers... I cut the top off, take out the seeds then freeze them whole. Texture is softer but very good. Do you make cheese? If so, I would love to see a video. Have a great week!🦋

I hope that when you plan your new gardens, that you will consider laying down this black vinyl grown covering. We were ready to give up gardening because of so many weeds, however after laying down that covering, we did not have to pull one weed this year. It was a lifesaver, and things grew so much better because they did not have to compete with weeds. This fabric is good for crops above ground. Probably would not work for crops below ground

For Blueberry preservation: Blueberry Vanilla Ice. Chop your Blueberries a little smaller or blend them, make a Vanilla Ice base and throw them together. Freeze - delish. Goes with anything sweet. Or just waffles vanilla blueberry ice and whipped cream. Christmas!

@@pennynickels5216 Penny, a pretty simple 5-Ingredients Vanillaice. I use for a serving of 4 people: 1 Vanillabean (a real one - not that liquid) 250 ml Milk 250 ml Heavycream 4 Egg yolks 150 grams of sugar Halve the vanilla pod and scrape out the pulp. Put milk, vanillapod and cream in a saucepan and bring to a boil. Batter the egg yolks with sugar and vanilla pulp until creamy consistency. Stir in 5 tablespoons of the hot milk. Then stir in the egg yolk-sugar mixture into the milk and heat up to 75 °C for about 5 minutes while stirring constantly. Remove the pan from the heat, remove the vanilla pod and leave to cool to refrigerator temperature. Put the ice cream mass in the ice cream maker and let it freeze for about 60 minutes. If you do not have an ice cream maker, no problem as well. Put the ice cream mass into an freezer container and put that into a freezer. Every 30 Minutes stir the ice cream mass. Do so for about 2 to 3 hours.

Absolutely love when you cook!!! I'm retiring July 2024 and moving to Alabama. My sister who lived with me for 6 months before she moved to Alabama has already found us a beautiful 4 bedroom house on 5 acres. When she moved with me along with her son, it was an adjustment but we learned to cook together, clean and craft together. I miss that. Looking forward to gardening and cooking again from scratch. It's not as fun when you live by yourself.

I’m doing the same this year, as far as preserving food into a recipe right off the bat. I just did a TON of eggrolls with my garden cabbage and carrots, this morning! Popped them in the freezer for future use.

@diana roberts, I make my egg rolls cook only what I need for the moment, freeze the rest uncooked. When I'm ready for more just cook from frozen. You can dust them with corn starch to help keep them crispy.

when putting the muffin mix into the pan, try using the ice cream scoop with the little handle that pushes it out! works a treat

Yes 🙌🏽 Chiles Rellenos in a tomato gravy over some Mexican rice is life!! Poblanos are typically stuffed with cheese and in some parts of Mexico they also stuff jalapeños with seasoned ground pork 😋
