Think of Tsukemen or “dipping noodles” as ramen’s cooler, richer, thicker old cousin. Imagine the richest broth imaginable and the chewiest, thickest noodles in the game, all in one dish. Well, imagine no more because that’s exactly what we’re making today.

Ramen Lord is really a hero in the ramen community, especially here in the west. I started off with Ivan Orkin and David Chang's books to help give me some idea and groundwork. And then when the Pandemic hit, Ramen Lord's book doc and Way of Ramen YT just filled my time in the kitchen. The podcast with Keizo (previously WoR) is also fun and insightful to all things ramen!

On your website the amount of tare says 2 ounces, which is wrong. Should be 1 ounce or 2 tablespoons which is about 30-35 ml/g. I did 2 ounces which is 60 ml/g and it was too salty.

slightly confused, at 19:40 he sets it to slow cook for 30 minutes. in the next scene, he says "this has been cooking for just under an hour". should it be 30 min or an hour then? (for context i have no experience cooking anything like this yet, this will be my first time using a pressure cooker, so I might be overthinking it.)

So, he added the aromatics and boiled for 30 then added the dried fish, seaweed and fish powder and then set it for another 30 but it looks like they stopped it at 6 minutes to add the katsobushi and stir. After the 6 minutes they pulled the katsobushi.
