Today I want to introduce a stir-frying noodle with a deep cultural heritage of the Indian Muslim origin in Malaysia - Mee Goreng Mamak.
Mee refers to noodles, and goreng means stir-frying in both Malay and Indonesian language.
This variant of fried noodles is entirely different from the Chinese noodles like Chow Mien.
Potatoes, tofu, and cabbage are among some of the ingredients.
This recipe is based on how the Indian Muslims cooked in Malaysia.
It is a spicy recipe. Adjust the levels of spiciness. The locals like to add chopped chilies and chili paste!

Ingredients
Sauce (A):
23g (1.5 tbsp) kicap manis (sweet soy sauce)
20g (4 tsp) dark soy sauce
10g (2 tsp) oyster sauce
60g (4 tbsp) ketchup
75g (5 tbsp) chili sauce
1/2 tsp ground white pepper
8g (1tbsp) Malaysian curry powder
30ml (2 tbsp) water
Others (B):
450g yellow noodles
3 tbsp cooking oil
3 cloves garlic, coarsely chopped
1 small onion (70g), thinly sliced
75g chicken breast meat, cut into thin slices
150g choy sum
100g cabbage, thinly sliced
150g firm tofu
1/2 tomato (50g), diced
1 small potato (70g), diced and boiled until soft
Sambal and bird's eye chili (to adjust spiciness)
3 eggs
One lime for juice and decoration
Instructions:
- Blanch the mee in boiling water for fifteen seconds. Drain and set aside.
- Combine all the ingredients in (A).
- Heat some cooking oil in the wok. Saute the onion and garlic until aromatic.
- Add the chicken bread meat and season with salt. Fry until it is cooked and slightly brown.
- Stir-fry the choy sum and cabbage with some oil and season with salt. Add some water if it is too dry.
- When the vegetables turn soft, return the chicken meat to the wok. Then add the tofu, tomatoes, potatoes, and the sauce (A).
- Add the yellow noodles, combine with all the ingredients in the wok. Add some water if it is too thick.
- Turn up the heat to medium/high, stir-fry for a minute.
- Reduce the heat to low. Then push the noodles to one side of the wok. Add some more oil to the wok and crack the egg on it.
- Spread out the egg with the spatula and slowly fold into the noodles. It will be sticky, so continuous stirring and flipping are necessary. Remove and served with a wedge of lime.

I recommended this recipe. This is so far the best mee goreng mamak recipe I tried. You can adjust the amount of ingredients depending on your taste. I have reduced my chilli sauce and ketchup to two tbsp and it is still flavourful. Way much better than mamak that I have tried. ❤

Yes. I have tested this recipe. It's excellent.. U can add on a bit of Indian rojak sauce to fry. And those pasembur. It makes the noodle even more tastier.. Give it a try.. 😉

Love your detailed instructions, I appreciate you showing us which brands to use. I'm vegetarian so can I skip the oyster sauce? Any substitutes for it?

You can use the vegetarian 'oyster sauce' as the substitute. It's made with mushroom extract but tastes like oyster sauce. Please ask your local Asian grocery shop. The brand Lee Kum Kee produces it, or you can get it from Amazon online. Alternatively, omit the oyster sauce, use light soy sauce plus a small amount of sugar as the substitute.

I do not suggest using tumeric powder. It hope it is not difficult to get curry powder at where you live.

This is not the original mee goreng mama. Chicken meat oyster sauce and curry masala is not used by the mama in this recipe

Hi ! This looks so good! I got to find that sweet soy sauce ....then I am going to try this. My Singaporean friend was IMPRESSED I can cook Hainanese chicken rice !! Try a Dutch Store! I live in a small town in Canada where there are a lot of Dutch, I buy Conimex brand Ketjap Manis at my regular grocery store! In a big city like LA you should find it easily. I only pay 4- 5 dollars for a bottle, cheaper than Amazon

The sawi (choy sum) should cut like the leaves..no need potatoes..ur vegetables is overcooked,the fire must high, first you fried the chopped garlic & onions, then add mee together with the vegetables & the ingredients , then add in the mixed sauce.. To Serve 👍

Why do you even need curry powder n oyster sauce? Is it necessary to mix the various sauces together before frying? I also think the choysam stem need not be cut into such small pieces. Looks yakky. Sorry for my negative comments.

Fully accept your comment because cooking is an individual preference. This is the recipe that we serve in our restaurant, and that is what our customers preferred. Remove the curry powder and oyster sauce is definitely doable. Cheers.

Okla..simple..actually there's another couple of secret ingredients he should put that it become more an original recipe.. He missed the main ingredient->the cucur udang..nut sauce-which is couples of thing we are putting in that sauce..you're making a malay or java mee goreng version right now bro!..not mamak. #if you missed the main ingredient of MGMMK.then it will not we can call it as MGMMK!

@@rodansombilla6673 Sorry, to me, it has no specific recipe. Just put whatever u like but don't include more than 3 items into d yellow mee ( of which is a must ) beside salt, oil & water. So far , d best I had tasted so far r those include just bean curb n vege only. In my opinion, d tastiness of mee goreng depend on d skill d noodles being fried n not what one added into it. So , try ur preference . Happy trying ........

Nowhere close to the mee goreng mamak one finds in Malaysia. You missed out key ingredients, and that is not the way to make the sauce. ,
